Hash browns and eggs breakfast skillet is ready in twenty minutes or less and is made in a single pan. Crispy fried hash browns with onions and bell pepper are topped with freshly cooked eggs.

2 tablespoons unsalted butter
2 1/2 cups frozen hash browns
1/2 medium onion (diced)
1 red bell pepper (diced)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
4 large eggs

Steps:

  • In a large, nonstick skillet over medium heat, melt butter. Add frozen hash browns, onions, and bell pepper. Season with salt, pepper, and paprika, tossing to coat. Cook for 6-8 minutes undisturbed, or until browned on the bottom.
  • Flip hash browns over in pan. Make four holes in the hash browns, then crack an egg into each hole. Reduce heat to low, cover, and cook for 2-3 minutes for a sunny side up egg (cooked egg whites and runny yolk), or 4-5 minutes for a fully cooked egg.

4 large red sweet peppers
3/4 cup bacon, diced
1 cup carrot, chopped
1 cup spinach, chopped
1/2 cup green onion, finely sliced
2 garlic cloves, minced
3 cups Simply Potatoes® Shredded Hash Browns
2 tomatoes, diced
1/2 cup goat cheese
1/4 teaspoon crushed red pepper flakes

Steps:

  • Preheat oven to 375 degrees F.
  • Cut peppers in half and seed.
  • Sauté bacon until crisp and discard oil. Continue by adding carrots, spinach, green onions, garlic and hash browns. Saute until potatoes are tender and add salt and pepper. Add diced tomatoes, goat cheese and red pepper flakes last and cook for 5-10 minutes until everything blends together.
  • Fill each pepper to the top and bake for 35 minutes until peppers are tender.

Air Fryer Hash Brown Egg Bites image

The air fryer is a fantastic way to cook bite-sized egg casseroles, which are made even better topped with crispy hash browns.

Nonstick cooking spray, for the mold
4 large eggs
1/4 cup heavy cream
Kosher salt
2/3 cup shredded Cheddar
1/4 cup diced red bell peppers
1 scallion, white and green parts sliced
1/2 cup shredded frozen hash browns, thawed

Steps:

  • Spray the cavities of a 7-cavity silicone egg bites mold with nonstick spray. Whisk together the eggs, heavy cream and 1/2 teaspoon salt in a large glass measuring cup until no white streaks remain.
  • Divide the egg mixture, 1/3 cup of the Cheddar, the bell peppers and scallions among the cavities of the mold. Gently stir the mixture in each cavity with a spoon. Transfer the mold to the basket of a 6-quart air fryer, set it to 300°F and cook for 3 minutes.
  • Meanwhile, combine the hash browns and remaining 1/3 cup Cheddar in a small bowl. Gently top each egg bite with the hash brown-cheese mixture.
  • Set the air fryer to 300°F and cook for 12 minutes more. The top of each bite should be golden brown and the eggs should be set. Remove the mold and let stand for 10 minutes before popping out the egg bites. Serve warm.

I got this from a book of favourite egg recipes. Chopped cooked bacon or diced ham can be added along with the peppers and onion. You can also substitute Monterey jack cheese for the cheddar.

2 cups frozen hash brown potatoes
1/2 cup chopped green peppers or 1/2 cup red pepper
1/4 cup chopped onion
6 eggs
1/4 cup milk
salt and pepper
1 cup shredded cheddar cheese

Steps:

  • In a medium skillet heat oil over medium heat.
  • Add hash browns and cook for a few minutes until heated through, stirring occasionally.
  • Stir in green or red pepper and onions.
  • Cover and cook over medium heat for 6 to 7 minutes, stirring occasionally.
  • In a medium bowl, whisk together eggs, milk, salt and pepper.
  • Pour mixture evenly over hash browns; using turner, poke hash browns in several places to help mixture seep through to skillet.
  • Cover and cook over medium-low heat for 6 to 7 minutes or until eggs are just about set.
  • Sprinkle cheese over top.
  • Cover and cook for 2 to 3 minutes or until cheese is melted.
  • Loosen edges and cut into wedges.

1 lb Italian sausage (I used hot and spicy)
1 medium white onion, peeled and diced
3 garlic cloves, minced
1 red bell pepper, cored and diced
6 eggs
1/3 cup milk
20 ounces frozen hash browns, thawed
2 cups shredded cheddar cheese or 2 cups mozzarella cheese
1/4 teaspoon fresh ground black pepper
thinly sliced green onion, to taste

Steps:

  • Heat oven to 375.
  • Add the sausage to a medium saute pan. Cook over medium-heat until browned, crumbling the sausage with a spoon as it cooks.
  • Remove sausage with a slotted spoon and transfer to a large mixing bowl.
  • Reserve about 1 tablespoon of sausage grease in the saute pan, discarding the rest.
  • Add the onion and red pepper to the saute pan and saute for 5 minutes until cooked.
  • Add the garlic and saute for an additional 2 minutes or until fragrant.
  • Pour the vegetable mixture into the mixing bowl with the sausage. Add the hash browns and 1 1/2 cups cheese to the mixing bowl with the sausage and vegetables. Stir to combine.
  • In a separate bowl, whisk together the eggs, milk, and black pepper until combined.
  • Then add them to the hash brown mixture and stir to combine. Pour the mixture into a baking dish, and top with the remaining 1/2 cup of shredded cheese. Cover with aluminum foil and bake for 20 minutes.
  • Then remove the aluminum foil and bake for an additional 10 to 15 minutes and the top of the potatoes begin to slightly brown. Remove and let the casserole rest for 5 minutes. Sprinkle with green onions and serve.

1 -2 teaspoon dried parsley or 2 tablespoons chopped fresh parsley

Steps:

  • Set oven to 375 degrees.
  • Butter a small casserole dish.
