Time 50m

Yield 4 servings

Number Of Ingredients 5

1/2 cup duck fat
1 onion, finely diced
Kosher salt
1 1/2 pounds russet potatoes, peeled and cut into 1/2-inch dice
1/2 bunch chopped chives

Steps:

  • Add the duck fat to a large, straight-sided pan over medium heat. Add the onions, season with salt, to taste, and saute until the onions are soft, translucent and are very aromatic, about 8 to 10 minutes.
  • Add the potatoes and toss to coat with the duck fat and combine with the onions. Season with salt, to taste. Shake to spread the potatoes into an even layer and press down gently with a spatula to the bottom of the pan. Let the potatoes brown on the bottom, shaking frequently to prevent sticking. Toss the potatoes several more times, press them down again to allow for maximum browning. Don t worry if the potatoes lose their perfect square shape, that s how they roll. When the potatoes are cooked through, about 12 to 15 minutes, taste for seasoning and adjust, if needed (they will). Remove them from the pan to a serving bowl and sprinkle with chopped chives.
  • That s a yummy potato!

1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 9

1 1/2 pounds russet potatoes
1 cup bacon lardoons
1 medium shallot, sliced
1 egg white
4 green onions, roughly chopped
2 sprigs thyme, leaves picked
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
2 tablespoons chopped flat-leaf parsley

Using a slotted spoon, remove the bacon and shallots and put in a large mixing bowl (reserve the bacon fat and pan) with potato slices, egg white, green onions, and thyme leaves and season well with salt and pepper. Toss to combine. Spoon mixture into the hot pan with the bacon fat. Pack it in well pressing down with a large spoon to compress the mixture a little. Drizzle the top with some extra-virgin olive oil and season with salt and pepper. When it starts to get golden brown and crispy around the edges flip the hash brown over and pop into the oven to bake for 15 minutes. Remove from oven and allow to cool slightly before running a knife around the edges and then inverting the potato onto a cutting board. Slice into wedges, garnish with chopped flat leaf parsley and serve.

POTATOES FOR HASH BROWNS ( HOW TO PARBOIL )

Potatoes for Hash Browns ( How to Parboil ) image

I used to go to a tavern for breakfast on the weekends from time to time. The cook there made the best hasbrown potatoes. She finally told me what the secret is to having good hashbrowns. You need to partially cook the potatoes first. Raw potatoes have a tendency to absorb the grease and stick together. Any kind of potato can be used but I prefer the Yukon Golds or red potatoes. You can use these in my Recipe #78432 recipe.

Provided by AuntWoofieWoof

Categories     Breakfast

Time 20m

Yield 5-6 potatoes

Number Of Ingredients 2

5 -6 medium unpeeled yukon gold potatoes or 5 -6 medium red potatoes
water

Steps:

  • Put the potatoes in a large pan.
  • Cover with cold water.
  • Bring water to a boil over high heat.
  • As soon as the water starts to boil, turn the heat off but keep the pan on the burner.
  • Let the pan of potatoes stand on the burner for about 5 minutes, depending on the size of the potatoes.
  • Larger potatoes may need more standing time.
  • Drain all of the water from the pan.
  • Allow potatoes to cool enough to handle.
  • Store the potatoes in a bowl in refrigerator until ready to use.
  • Storing the potatoes in a plastic bag tends to make them "sweat" and softens them, which could cause them to go bad sooner(that has been my experience in the past.).
  • If you do store them in a plastic bag, use them within a day or two to ensure freshness.
  • Use the potatoes for hashbrowns or fried potatoes.
