THE MOTHERLOAF

- For the meatloaf: Preheat the oven to 350 degrees F. Grease a muffin pan with nonstick cooking spray.
- Combine the cracker crumbs, oats and milk to soften in a medium bowl. Combine the ground chuck, ground pork, onions, milk, parsley, celery, ketchup, green peppers, Worcestershire sauce, salt, pepper, paprika, mustard, marjoram, thyme, seasoned salt and eggs in a large bowl. Add the oats mixture and mix well, but do not over-mix.
- Portion the meat mixture into eight 8-ounce cupcakes and place into the prepared muffin pan. Smooth the tops of each portion. Bake until the internal temperature reaches 165 degrees F, about 30 minutes. Unmold and set on paper towels to absorb any additional liquid. (The meatloaf can also be cooked in a loaf pan.)
- For the mashed potatoes: Peel the potatoes and cut into 1-inch pieces. Place in a pot covered with cold salted water and bring to a boil. Cook until the potatoes are fork tender, 15 to 20 minutes. Drain well. Place the potatoes, milk, sour cream and butter in a mixing bowl and mash until smooth. Season with salt and pepper.
- For immediate enjoyment, using ice cream scoop, scoop the potatoes on top of a meatloaf cupcake. Serve with your favorite gravy.
ALMOST CLASSIC HASH BROWN MEATLOAF

- Preheat oven to 375 degrees F. Combine potatoes, bread crumbs, onion, ketchup, mustard, oregano, salt, eggs and garlic in a large bowl and stir mixture well. Crumble ground beef over potato mixture and stir just until blended. Shape mixture into an 8 1/2-by-4 1/2-inch loaf. Place loaf in an 11-by-7-inch baking dish coated with cooking spray. Spread 1/3 cup ketchup over top of loaf. Bake at 375 degrees F for 1 hour and 15 minutes, or until an instant-read thermometer inserted in the loaf registers 160 degrees F. Let stand 5 minutes before slicing.

COWBOY MEATLOAF AND POTATO CASSEROLE

- 1.Preheat oven to 375°F. Coat 9x9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, Barbecue Sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish.
- 2.Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source.
- 3.Meanwhile, microwave Potatoes according to package instructions. In a large bowl, mix together hot Potatoes, milk, butter, parsley and garlic, and mash with a potato masher until smooth. For a smoother consistency, mix with an electric mixer to desired consistency. Stir in bacon and fried onions. Spread evenly on top of beef mixture and sprinkle with cheese.
- 4.Broil for 3 to 5 minutes, or until cheese is lightly browned. Serve hot with additional Barbecue Sauce if desired.

- Preheat oven to 350°. Mix first four ingredients, 1 teaspoon pepper and 1/2 teaspoon salt; stir in potatoes. - In a large bowl, combine the crumbs, broth, egg and seasonings; let stand for 2 minutes. Sprinkle beef over mixture and mix well. , On a piece of waxed paper, pat meat mixture into a 10-in. square. - Preheat oven to 375 degrees F. Place potatoes in a large bowl and set aside.
- In heavy skillet over medium heat, saute onion and garlic in olive oil until tender, about 5 minutes. Add to potatoes along with eggs, bread crumbs, 1/3 cup of the ketchup, salt and pepper and mix well until thoroughly combined. Add ground beef and mix gently just until combined.
- On a broiler pan, shape meatloaf mixture into an 8 x 4-inch loaf. Spread remaining 1/3 cup ketchup over top of loaf. Bake in preheated oven for 70 to 75 minutes or until center is no longer pink and instant read thermometer reads 160 degrees when inserted in center of loaf.
- Let stand, covered, 15 minutes before slicing to allow juices to settle.
POTATO AND MEATLOAF HASH
This hash is a fantastic way to use up leftover meatloaf and get an extra meal out of it. This is good as a light supper.

- Cook potatoes in boiling salted water until tender. Drain, mash roughly with a fork or hand device so that you leave lumps of unmashed potato.
- In a frying pan, brown the bacon & the onion in the olive oil.
- Add potato, parsley and the leftover meatloaf chopped into bite-sized pieces. Fry over a medium heat until the bottom layer of potatoes browns.
- Turn the potatoes over, add more oil if needed, and brown that other side. Serve immediately.
UGLY MEATLOAF
I came up with this tonight in order to use up some ground turkey and hash brown patties. I crossed my fingers as I went along, and surprise! - It is delicious! :) The kids also loved it (6 and 3 y.o.). It is comfort food at its best. Yum! I served this with a simple side salad.

- Preheat the oven to 350 degrees F.
- In a large mixing bowl, add ground turkey, ground pork, onions, 1/3 c cream of mushroom soup, egg, breadcrumbs, salt, pepper and garlic powder. Mix together by hand until all ingredients are well blended.
- Coat an 8 x 13 or 10 x 13 casserole dish with non-stick spray.
- Press half of the meat mixture into a long rectangle in the dish (about 10").
- Position the three hash brown patties from the center out (these were rectangular and about the size of an index card - made by Mr. Dee's). There should be an inch of meatloaf all around the edges, and you can add meatloaf where needed.
- Spread the rest of the cream of mushroom soup evenly over the three hash brown patties. Try not to get the soup on the meatloaf.
- Carefully press the rest of the meat mixture flat between your hands and place piece by piece over the hash browns until completely covered.
- Bring the edges of the meatloaf together, pinch and smooth out bumps. No soup should peek through.
- Place casserole dish uncovered in oven. Bake for 1 hour.
- Let the meatloaf rest for 5 minutes before serving.
