Chickpeas seem to call out for Moroccan spices, so that's what they get here. I make this soup really chunky and hearty.

1/4 cup extra-virgin olive oil, plus more for garnish
1 large onion, medium diced
6 to 8 cloves garlic, pressed
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 heaping teaspoon sweet paprika
1 (14.5-ounce) can chopped tomatoes
3 (15-ounce) cans chickpeas, drained and rinsed well
1 quart vegetable broth or reduced-sodium chicken broth
1 teaspoon sugar
Kosher salt
Freshly ground black pepper
1 (5-ounce) package pre-washed baby spinach

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add onion and garlic and saute until the onions begin to turn translucent; lower heat if browning starts to occur. Add spices and saute a minute or so. Add tomatoes, chickpeas, broth, and sugar. Season with a couple pinches of salt and 10 grinds fresh pepper. Stir well. Chickpeas should be just covered with liquid. If level is shy, add some water so the chickpeas are just covered.
  • Bring to a simmer, then lower heat to low and gently simmer for 45 minutes.
  • Remove soup from heat. Use a potato masher to mash up some of the chickpeas right in the pot. Stir in the spinach and let heat through until wilted, just a couple minutes.
  • Season again, to taste, with salt and pepper.
  • Serve soup, drizzled lightly with extra-virgin olive oil, if desired.

1/3 cup dried Garbanzo Beans (chickpeas), soaked overnight (**see note)
2 3/4 cups Water
1/2 TBsp Vegetable Oil
2/3 cup Onions, chopped
2/3 cup Tomatoes, peeled and diced (optional)
2-2 Garlic Cloves, minced
1 small Hot Pepper, chopped finely (I used Green Chilli)
1/4 cup fresh Coriander, leaf chopped finely (Cilantro or Parsley)
1 tsp salt (adjust to taste)
1/2 tsp fresh Black Pepper
1/3 lemon, juiced
1/3 tsp Sweet Paprika
1/3 tsp ground Turmeric powder
You can also use Canned Beans - in which case, skip Step 1

Steps:

  • In a soup pot combine the chickpeas and water and bring to a rolling boil. Cover, reduce heat to medium and cook 1 hour. (Alternatively, you can also cook these in the pressure cooker) {You're looking for the chickpeas to be cooked with a bite to them} {Skip if using canned beans}
  • While the beans are cooking, heat the oil in a skillet and sauté the onions, garlic, and hot pepper until they barely take on color; very slightly browned.
  • Add the mixture and the remainder of the ingredients (except coriander & lemon juice) to the soup pot and simmer 30-45 minutes or until the chickpeas are soft. You don't want a "bite" to the chickpeas but firm and creamy.
  • Garnish with coriander (or parsley), lemon juice & serve!

1 tbsp olive oil
1 onion, chopped
2 celery sticks, chopped
2 tsp ground cumin
600ml hot vegetable stock
400g can chopped plum tomatoes with garlic
400g can chickpeas, rinsed and drained
100g frozen broad beans
zest and juice ½ lemon
large handful coriander or parsley and flatbread, to serve

Steps:

  • Heat the oil in a large saucepan, then fry the onion and celery gently for 10 mins until softened, stirring frequently. Tip in the cumin and fry for another min.
  • Turn up the heat, then add the stock, tomatoes and chickpeas, plus a good grind of black pepper. Simmer for 8 mins. Throw in broad beans and lemon juice, cook for a further 2 mins. Season to taste, then top with a sprinkling of lemon zest and chopped herbs. Serve with flatbread.

Hasa Al Hummus is a wonderful Moroccan vegetarian soup for a comforting winter warmer. Morocco adores her soups though there are not a million varieties. Many recipes online may taste good though are faux or Moroccan "style" soups. I can guarantee that from me what you get is completely authentic Moroccan fare. I owe this to those interested in Moroccan food/cooking that is authentic. This is a very simple basic soup as most Moroccan foods are. Go to a touristy, especially a fancy one, spot and you will get French food with Moroccan influences; not how we eat every day. We eat Moroccan food perhaps with a French influence or two though never vice versa. My housemaid Nasiha who is approximately 60 taught me this recipe. I say approximately as many in Morocco do not know their birthday. Whip this up like we do and enjoy! In a pinch you can use canned chickpeas. They are acceptable, merely omit the first cooking hour. As an aside, here, hummus is the word for chickpea, not the dip/spread.

1 tablespoon olive oil
1 medium onion, chopped
2 sticks celery
2 teaspoons ground cumin
600 ml vegetable stock, hot
400 g chopped tomatoes
400 g chickpeas (ready cooked)
1 teaspoon garlic
1/2 lemon
1 bunch coriander

Steps:

  • Heat the oil.
  • Fry the onion and celery for 10 minutes until softened.
  • Add the cumin and fry for one minute.
  • Increase the heat and add the stock, tomatoes and chickpeas, plus a decent sized helping of black pepper.
  • Simmer for 8 minutes.
  • Squeeze the lemon juice into the mix and cook for another 2 minutes.
  • Chop the coriander and add.
  • Serve with flatbread.

  • Soak chickpeas in water overnight, then drain. Place chickpeas and water in a saucepan and bring to boil. Cover and cook over medium heat for 1 hour. In the meantime, heat oil in a frying pan then stir-fry onions, garlic, and hot pepper until they begin to brown. Add frying pan contents with the remaining ingredients to the chickpeas. That's right-we turned the dip of the decade into a soup that's savory, silky, and garlicky good. A portion of the chickpeas are reserved and toasted in a skillet to offer some chew-a nice textural contrast to the creaminess of the pureed soup. If the soup feels a little too thick, adjust by blending in more water, 1⁄/4 cup at a time. You can make the soup a day or two ahead, but you'll definitely need to adjust the texture, as it will overthicken upon standing. Make the toasted chickpea topping up to a day ahead; store in an airtight container at room temperature. For the sake of your sanity, purchase tahini in a jar with a wide mouth; narrow tops make it difficult to stir and spoon out what you need.

Add vegetable stock, 1 3/4 cups water, and 1 teaspoon salt; bring to a simmer. Set aside 1 cup chickpeas; add remaining chickpeas to stock mixture. Cover and reduce heat to medium-low; simmer 10 minutes.
  • Meanwhile, heat 1 tablespoon oil in a small skillet over medium-high. Add reserved 1 cup chickpeas; cook, stirring occa­sionally, until toasted and browned, 8 to 10 minutes. Stir in cumin and remaining 1/8 teaspoon salt.
  • Pour stock mixture into a blender. Remove center piece of blender lid (to allow steam to escape); secure lid on blender, and place a clean towel over opening in lid. Process until smooth. Add tahini and lemon juice; process until smooth. Ladle soup into 6 bowls; drizzle with remaining 2 tablespoons oil, and sprinkle with cheese and toasted chickpeas.
