SLOW-COOKED HARISSA LAMB
Try this slow cooked harissa lamb as an alternative roast. We love the texture - it's half-roasted and half-pulled, fork-tender but still easy to carve

- If you're making the harissa, tip the dried chillies into a heatproof bowl and pour over just enough boiled water from the kettle to cover. Cover the bowl and leave to cool. Once cool enough to handle, drain the chillies, reserving the water. Remove any stalks and pat dry with kitchen paper. Tip the chillies into a food processor with the garlic, 1 tsp salt, the olive oil, spices and vinegar, and blitz to a purée. If needed, add a little of the reserved water to loosen. Will keep, chilled, for up to a month.
- Make 15 cuts, about 3-5cm long, all over the lamb. Reserve 1 tbsp of the harissa paste, then rub the rest all over the lamb and into the cuts. Scatter the onions into a large roasting tin and sit the lamb on top. Leave at room temperature for 1 hr, or cover and chill overnight.
- Heat the oven to 160C/140C fan/gas 2. Roast the lamb for 4-5 hrs until the meat is fork-tender. Lift the lamb out onto a large board or serving plate. If the tin is flameproof, pour in the stock; if not, tip the contents of the tin into a saucepan first. Bring to the boil, scrape up any browned bits using a wooden spoon, and cook until the liquid is reduced by about a third - it should be a thick, rich onion gravy. Stir in the reserved harissa and the chopped coriander. Serve the lamb with the onion gravy.

These are nice to serve with couscous, a salad or roasted vegetables or on a bun as a burger. Simple and quick to make. Harissa is a Moroccan spice paste, you might want to add it to taste.

Steps:
- In a bowl mix the sausage meat with the all the other ingredients, except the olive oil.
- Shape into 8 patties, it might be sticky, flour your hands if it makes it easier.
- Heat the oil in a frying pan and cook them for 4-5 minutes on each side.
- If you have to do this in batches, use half the oil for the first batch and keep the patties warm whilst you fry the others.

LAMB & QUINOA BURGERS WITH BEETROOT TZATZIKI

- Cook the quinoa in plenty of boiling water for 10-15 mins (don't worry if it still has a little bite), then drain well and leave to cool. Grate the beetroot and mix with the yogurt, half the mint and some seasoning. Chill until ready to serve.
- Use your hands to squish together the cooked quinoa, the lamb, the remaining mint, half the dill and some seasoning. Shape into four burger patties. Heat a large frying pan (if it's non-stick, you won't need oil as the lamb mince is already fatty; otherwise, add a drizzle of oil). Cook the burgers for 5-8 mins on each side until they have a nice golden crust and are cooked through, then leave them to rest for a few mins.
- Mix the carrots, onions and the remaining dill in a bowl. Gently warm the wraps or buns, then pile with the carrot mix, add the lamb patties and top with a dollop of the beetroot tzatziki.

Another great recipe from Donna Hay magazine. Beautiful flavours and a bit of spice. Quinoa uses 1/3 cup grain to 1 cup water and is cooked (simmer) around 15mins until liquid is absorbed - we haven't included this in the prep time.

Steps:
- Put mince, quinoa harissa, garlic, salt and pepper in a bowl and mix well to combine.
- Shape the lamb into 6 patties.
- Heat oil in a large frying pan over medium heat. Cook patties 4-5mins each side.
- Spread the rolls with the tzatziki and extra harissa. Top with green leaves and patties to serve.

- Heat the oven to 200°C/180°C fan/gas 6. Heat a glug of oil in a large frying pan over a medium heat. Add the onion and cook for 5 minutes. Add the garlic clove and harissa paste, lightly season with salt and pepper and cook for 2-3 minutes more.
- Tip into a large mixing bowl withthe lamb mince, egg, feta and a large handful of chopped fresh coriander. Mix everything together with your hands, season and shape into 4 large patties.
- Put the patties on a lipped non-stick baking tray (they give out a lot of juice) and bake for 30-35 minutes until the lamb is cooked through. Toast the brioche buns, then layer each base with 1 lettuce leaf, 1 slice of tomato and 1 slice of cucumber, then the burger. Mix the mayonnaise with the harissa and add a dollop to each. Top with the other half of the buns and serve with salad leaves, sliced cucumber and spring onion, if you like.
