HARISSA-GLAZED CHICKEN
A tasty five-ingredient glaze takes boneless skinless chicken breasts to the next level in around a half hour-perfect for a busy weeknight meal with rice or couscous alongside. Tunisia's fiery harissa pepper paste is often served as a condiment but also does double-duty as an ingredient to deepen the flavors of meats, soups and stews. Here it's perfect in a flavorful glaze for mild chicken breast.

- Preheat the oven to 400 degrees F. Line a baking sheet with foil. Pat the chicken breasts dry, sprinkle with salt and pepper and transfer to the prepared sheet.
- Whisk together the honey, harissa, vinegar and garlic in a small skillet. Whisking constantly, bring to a boil over medium heat and continue to whisk until sauce is thick enough to coat the back of a spoon, 7 to 8 minutes. Whisk in the butter.
- Spoon half the glaze over the chicken and bake until beginning to turn golden brown, about 15 minutes. Remove the chicken from the oven and brush on the remaining glaze. Return to the oven and bake until an instant read thermometer inserted into thickest part of the chicken registers 165 degrees F, 5 to 10 minutes more.

- Heat the oven to 220C/200C fan/gas 7. Pat the chickpeas dry with kitchen paper, and tip into a small roasting tin with the oil. Season well and toss together. Cook for 15 minutes, tossing occasionally, until the chickpeas start to crisp up and split.
- Mix the runny honey, harissa, garlic and ginger in a small bowl. Season the fish with salt and pepper, and add to the chickpeas in the roasting tin. Spoon over most of the dressing and bake for another 6-8 mins until the fish is flaky when pressed, and cooked through.
- While the fish is baking, cook the beans in boiling salted water for 4-6 mins until just tender. Serve over the chickpeas alongside the fish, with the remaining harissa-honey dressing on the side to serve.

- Preheat the oven to 350. Place the chicken thighs (and the oil if you’re using skinless thighs) in a small ovenproof (preferably cast iron) skillet and season it with sea salt and fresh cracked pepper. Cover the pan (with a lid or foil) and bake it for 15 minutes.
- While the chicken is cooking, prepare the sauce. Whisk together the honey, harissa, white vinegar and garlic in a small frying pan over medium-high heat. Bring it to a boil and continue to boil it, whisking constantly, until the sauce has thickened enough to coat the back of a spoon. Remove the sauce from the heat.
- After 15 minutes, remove the chicken from the oven and drain off any liquid. Increase the oven temp to broil at 450. Place the chicken back in the oven, uncovered, on the second rack from the top. Broil for 10 minutes. Remove the chicken from the oven and drain off any liquid. Pour the honey harissa sauce over the chicken and toss it to coat then put it back in the oven to broil for 5 minutes more. Serve it immediately.
