Haricots Verts, Belgian Endive and Mushroom Salad image

12 ounces slender green beans (preferably haricots verts), trimmed
12 ounces mushrooms, sliced
4 heads Belgian endive, cut crosswise into 3/4-inch-thick slices
3 tablespoons white wine vinegar
1 1/2 tablespoons Dijon mustard
1/2 cup olive oil
1 fresh chive bunch, sliced

Steps:

  • Blanch green beans in large pot of boiling salted water until just crisp-tender, about 2 minutes. Drain. Rinse with cold water to stop cooking; drain well. Pat green beans dry. Transfer to large bowl. Add mushrooms and endive.
  • Mix white wine vinegar and Dijon mustard in small bowl. Gradually mix in olive oil. Mix in sliced chives. (Can be prepared 6 hours ahead. Cover vegetables and refrigerate. Let dressing stand at room temperature.)
  • Pour dressing over vegetables and toss to coat. Season with salt and pepper.

1 cup extra-virgin olive oil
1 shallot, chopped
2 cloves garlic, chopped
1 sprig thyme
1 sprig rosemary
1 sprig flat-leaf parsley
1/3 cup balsamic vinegar
1/4 cup Dijon mustard
Salt and freshly ground black pepper
1 cup balsamic vinegar
1 1/4 pounds haricots verts, stem end trimmed
3 ounces prosciutto, julienned
1/2 cup toasted pine nuts
6 ounces Boucheron cheese or other ripened or aged goat cheese, cut into six slices

Steps:

  • Combine oil, shallot, garlic and herbs in a small nonreactive pan and bring to a simmer. Remove from heat and cool. Strain and discard the solids. Set aside.
  • In a food processor, combine the vinegar and mustard. With the motor running, very slowly pour in the oil. Season with salt and pepper and set aside.
  • Place the balsamic vinegar in a small stainless-steel pan. Simmer slowly until very syrupy and reduced to 1/3 cup. Set aside.
  • Parboil the haricots verts in a large pot of salted water until just tender, 2 to 3 minutes. Drain, refresh in ice water and dry. Toss beans with the prosciutto and pine nuts and then add enough dressing to coat the ingredients. Transfer to a platter, top with the cheese and drizzle the reduced vinegar over all.

5 pounds baby blue lake beans or haricots verts, stems removed
6 Fuyu Persimons
4 cups frisee, yellow leaves only, picked and washed (Belgian endive may be substituted)
2 shallots, peeled and finely minced
4 tablespoons sherry vinegar
1/4 cup walnut oil
1/4 cup pure olive oil

Steps:

  • Blanch the green beans in boiling salted water and shock into ice water to stop the cooking. Dry on paper towels. Peel the Fuyus with a peeler or sharp pairing knife, remove the core and slice into 1/8 thick slices. Place the shallots into a mixing bowl and add the vinegar, slowly whisk in the two oils, season well with salt and pepper. Place the persimmons into a large mixing bowl and add the vinaigrette, mix well and season with salt and pepper, add the green beans and the frisee and toss well, check for seasoning and add salt and pepper as necessary.

1 1/2 tablespoons unsalted butter, cut into bits, plus additional for greasing wax paper
1/2 lb haricots verts or other thin green beans, trimmed
4 Belgian endives (1 lb), trimmed, leaving leaves attached, and halved lengthwise
1/2 cup reduced-sodium chicken broth
1 tablespoon fresh lemon juice
1 teaspoon sugar
1/4 teaspoon salt

Steps:

  • Cut out a round of wax paper to fit just inside a 12-inch heavy skillet, then butter 1 side of round.
  • Fit endives, cut sides down, snugly in skillet. Add broth, lemon juice, butter bits, sugar, and salt, then cover endives with wax-paper round, buttered side down, and simmer until endives are tender and liquid is thickened and reduced to about a quarter of its original volume, 20 to 25 minutes.
  • Meanwhile, cook beans in a 4-quart pot of boiling salted water, uncovered, until just tender, about 5 minutes. Drain and rinse under cold water to stop cooking, then drain again.
  • Remove wax paper from endives, then gently stir in beans and cook until beans are just heated through, about 1 minute.

2 tablespoons red wine vinegar
1/2 teaspoon kosher salt, divided

16 large basil leaves (about 1/2 cup)
1 1/2 lbs French haricots vert
3 tablespoons chopped ready-to-use sun-dried tomatoes

Steps:

  • Heat oil and garlic in a small skillet over medium heat; cook 2 minutes, stirring occasionally. Remove from heat; cool slightly.
  • Combine garlic mixture, 1 tablespoon nuts, vinegar, 1/4 teaspoon salt, pepper, and basil in a food processor; pulse until well combined.
  • Cook beans in boiling water 4 minutes or until crisp-tender; drain. Rinse under cold water; drain.
  • Place in a large bowl. Add basil mixture and remaining 1/4 teaspoon salt; toss to coat. Sprinkle with 2 tablespoons nuts and tomatoes.
