HOW TO MAKE THE BEST HAR GOW (蝦餃)



How to make the best Har Gow (蝦餃) image

Shrimp dumpling is one of the most famous Cantonese dim sum available.

Number Of Ingredients 13

50 g wheat starch
50 g tapioca starch
1/2 g salt
1/4 teaspoon vegetable oil
160 ml boiling water
500 g prawns, Weigh before cleaning, then peeled, deveined, and patted dry
50 g bamboo shoot, finely chopped
2 teaspoons salt
5 g sugar
5 g corn starch
1/4 teaspoon ground white pepper
1 tablespoon Shaoxing wine
2 teaspoons sesame oil

Steps:

  • Mix the wheat starch, tapioca starch, and salt in a mixing bowl.
  • Add the boiling water into the mixing bowl. Stir the mixture vigorously until it looks like snowflakes.
  • Add the oil.
  • Knead the dough until soft and pliable.
  • Cover it and let it relax for 5 minutes.
  • Put it on a work surface and roll it into long strips.
  • Cut dough into small portions, 15-20g each.
  • Roll out the dough, and wrap the shrimp filling with the wrapper.
  • Clean and devein the shrimps. Marinate with salt for 5 minutes and wash thoroughly under running water.
  • Chop the shrimp coarsely.
  • Chop the bamboo shoots into small pieces.
  • Mix the shrimps, bamboo shoots, and the seasoning until it becomes sticky.
  • Place the dumplings in the bamboo steamer.
  • Steam for 6 minutes.
  • Serve immediately.

A traditional Cantonese dumpling stuffed with prawns, this is a popular dish in dim sum restaurants around the world

150 g prawns (shelled and deveined)
1 tsp spring onion (finely chopped) - white part only
1 tbsp water chestnuts (chopped)
1 tsp ginger (finely grated)
2 tbsp + 2 tsp tapioca starch
1½ cups wheat starch
2 tsp Shaoxing wine
1 tsp soy sauce
1 cup boiling water

Steps:

  • Chop prawns and mix filling. Mince half the prawns and roughly chop the other half. Combine prawns with water chestnuts, spring onion, grated ginger, 2 tsp Shaoxing wine, 1 tsp soy sauce and tapioca starch. Mix well and set aside. | Having two sizes of prawn will result in a slight bite when eating the har gao, instead of a mush
  • Form dough. In a mixing bowl, add wheat starch and tapioca starch and pour in 1 cup boiling water. Mix well with chopsticks until you form a dough.
  • Prepare dumpling skin. Knead the dough until springy, then divide in two and roll out into 1 inch sausages. Using a rolling pin, roll out the dough. Use a 4 inch circle oiled cookie cutter to cut out circles. | The oil on the cookie cutter ensures a clean cut, without dough sticking to the surface. If you do not have a cookie cutter, you may use a cup with a thin rim (ie paper cup) with a diameter of 4 inches.
  • Wrap and steam har gao. Place ½ tbsp filling into the skin and pleat. Repeat for all. Line a steaming basket with parchment paper. Steam the dumplings for 6 to 7 minutes, until the skin is translucent and the prawn filling is cooked.

Although these are some work, you'll be very proud of the results. These are those lovely, translucent dumplings you get at dim sum places. The tapioca flour and wheat starch can usually be found at good oriental food stores. These are best made in a bamboo steamer. I've included a recipe for a dip but you can use your own favorite dumpling sauce if you wish. This is a Madame S.T. Ting Wong recipe. Prep time includes fridge time for the shrimp mixture.

1/2 lb shrimp, shelled,deveined and chopped into pieces
1 scallion, chopped fine (green onion)
4 whole water chestnuts, chopped fine
1 egg white
1 teaspoon cornstarch
1/2 teaspoon salt
1 pinch black pepper
1 tablespoon light soy sauce
1 tablespoon oil
1/4 cup tapioca flour
3/4 cup wheat starch
10 1/2 tablespoons boiling water
1 tablespoon oil
3 tablespoons light soy sauce
1 tablespoon sesame seed oil
1/2 teaspoon chili oil

Steps:

  • Mix filling ingredients together; stir in one direction, mixing thoroughly; refrigerate this mixture for 1 hour.
  • Combine dip ingredients and set aside.
  • Sift flour and starch together; gradually add boiling water; add oil and let dough cool.
  • Knead dough until smooth; divide dough in half and shape each half into a sausage; divide each sausage into twelve pieces (24 pieces total); when not working with the dough, keep it covered with a damp towel.
  • Oil a cleaver and your work surface lightly; press a piece of dough, with the oiled cleaver, into a flat round circle.
  • To shape each dumpling- Make 3 deep pleats in the top half of a dough circle to form a little crescent cap; fill with 1 teaspoon of the shrimp mixture; press dough edges together and place dumplings on a lightly oiled plate or an oiled piece of parchment paper over the holes on the first level of the steamer.
  • Bring water to boil in the bottom part of the steamer; place steamer section with dumplings over boiling water (if you have multiple'tiers' or sections of the steamer, you can cook them all at once).
  • Cover and steam 5 minutes.
  • Serve with dip.
  • These can be made ahead through the shaping of the dumplings, keeping them covered with a damp cloth or, you can shape the dumplings and freeze them before steaming, defrost before steaming.

  • Mix the two flours and add around 160ml to 170ml (in dryer climate) boiling hot water. Use a chopstick to stir in the water. Mix well and cover with a lid, set aside for 5 minutes to 10 minutes.
  • Add 20ml vegetable oil. Traditionally we use pork lard in the dough. You can choose either one.
  • Deal with the dough when it is still warm. Knead everything together to form a ball . The dough should be not too soft. It should be quite firm, similar to common dumpling dough. If the dough is too soft, it is hard to keep the shape after steaming and the skin lots its tenacity.
  • Re-knead on operating board until smooth in surface. Cover with wet cloth and set aside for another 10 minutes.

We ordered several different varieties of dim sum including the shrimp har gow, beef sui mai, mushroom stuffed with shrimp as well as the beef short ribs and fried wontons. The food arrived quickly and tasted super fresh! Overall a great experience and will definitely be back. Just a note, it's a cash only place but please don't let that stop you from trying out this great place!
