BREAD MACHINE PIZZA DOUGH (ITALIAN HERBS)

Steps:
- Unplug your bread machine and remove the bread pan.
- Place the water, olive oil and then the rest of the ingredients into the bread pan. You can make a little indent on top of the flour in order to avoid the yeast falling into the water (until the machine starts). Do not combine the salt with the yeast (as the salt can kill the yeast). Place the yeast & salt in separate parts of the bread pan.
- Place the bread pan (with ingredients) into the bread machine and then plug in the machine.
- Put your machine on the Dough setting and press the start button. In our Sunbeam bread machine, the kneading & rising on the dough setting takes about approximately 1:30 hours.
- When your bread machine has finished, unplug the machine & pour the dough onto a cutting board. Wear oven mitts (as the bread pan/bread machine may be hot). Sprinkle some flour on the cutting board (before you pour the dough) in order to avoid the dough sticking to the cutting board.
- Preheat oven to 400 degrees.
- Shape the pizza dough into a round pizza shape. Don't press down on the edges of the pizza. You want a little rim around the pizza. The higher edges will help to contain the sauce and cheese as the pizza bakes.
- The pizza dough can be used to create one large pizza or two small/medium pizzas.
- Place the pizza-shaped dough on a non-stick baking sheet or pizza pan.
- Spread a thin layer of tomato sauce (or pizza sauce) on the pizza dough.
- Sprinkle on a layer of shredded cheese.
- Add some already cooked toppings (i.e. fried Italian sausages). These toppings should be pre-cooked because the pizza baking process may not cook them properly or safely.
- Bake pizza in the oven at 400 degrees for 18-22 minutes or until crust is golden brown. Baking time will vary due to the amount & variety of toppings and size & depth of the pizza dough. Check the pizza frequently after 15 minutes to ensure that it has been baked to perfection!
- Wear oven mitts to remove pizza from the oven.
- Place finished pizza on cutting board and cut into pizza slices. Enjoy!

HAND TOSSED PIZZA DOUGH
This dough has a lot of steps but it is so well worth the effort!! I have NEVER had this dough fail and it cooks so perfect! This is the only recipe I use for anything that has to do with pizza or Calzone, Stromboli or anything that requires a pizza style crust!

- Place all of the ingredients in a large bowl or the bowl of a standing mixer with the dough hook attached. Combine the ingredients until a dough forms. If mixing by hand, turn dough onto a floured surface and knead for 8 to 10 minutes, or until smooth and elastic. If using a mixer, continue kneading on medium speed for 8 to 10 minutes, or until smooth and elastic.
- Place the dough in a large bowl, cover, and allow to rise for 30 minutes to an hour, or until doubled. I do not oil the bowl just cover it with a bowl bonnet.
- When the dough is doubled, turn it onto a flour surface and lightly punch down. Divide it into 3 equal pieces. I only divide into 2 we like a thick large crust. Shape each piece into a smooth ball. Place on a dry towel or piece of parchment, cover with another dry towel and allow to rise for an hour. I use flour sack towels that are 100% cotton and lint free I found these at wal-mart 5 for like 5 bucks and they are great for baking!!
- If using a pizza stone, preheat the oven to 550 degrees. If not, preheat the oven once you begin shaping the pizza. I use a pizza stone for everything lol
- When the balls have just about doubled in size, shape the pizza. Flatten one ball into a disk and i use a rolling pin to get the thickness I want. you can hand press if you prefer but i find it is easier to use the rolling pin
- Place shaped pizza on parchment . Drizzle olive oil around the edge and smear with fingertips and top with your favorite toppings
- Using a cookie sheet or pizza peel, transfer the parchment and pizza to the oven. Bake for one minute, then use a cookie sheet or peel to lift the edge of the pizza and remove the parchment. Continue baking for 5 to 7 minutes.
PIZZERIA UNO PIZZA CRUST (FOR BREAD MACHINE)
I found this in CopyKat recipes a few years ago and I've been using it ever since. I don't think it tastes exactly like Pizzeria Uno, but it's pretty close. I've changed the recipe a little from the original to give it more flavor.

- measure ingredients into bread machine in order listed, making sure that the yeast does not have contact with the salt. Use the dough cycle. Mine takes 1 hour and 20 minutes. Preheat oven to 500. If using pizza stone, oven temperature should be at 450. Spread finished dough into lightly oiled pizza pan or divide into 2 small deep dish pans. Finish pizza desired. Bake until crust is lightly browned and cheese is melted 15-20 minutes.

BASIC PIZZA DOUGH - BY HAND METHOD

- In a large bowl, combine yeast with water, olive oil, salt and stir well to proof. After 5 minutes, add half of the flour and mix well to thoroughly incorporate. Add all remaining flour except 1/2 cup and mix well with your hands. Transfer dough to a lightly floured work surface and knead dough for at least 5 and up to 7 minutes, adding enough additional flour as necessary to form a smooth and elastic dough. Dough should not be sticky. Transfer dough to a lightly oiled 2 or 3 quart bowl and turn to coat with oil. Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
- Preheat oven to 500 degrees F. and if you have one, place a pizza stone on the bottom rack of the oven.
- Divide dough into 2 portions (for 2 (12-inch) pizzas) and form into balls. (See note below for calzones.) Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface, shape as desired and roll out to a thickness of 1/4-inch. Transfer dough to a pizza peel and top with toppings of choice. Transfer to the preheated pizza stone and bake until crispy and golden brown, usually 12 to 18 minutes (depending on the toppings). Remove from the oven with a metal peel or spatula and serve immediately.
- Note: For calzones, divide the dough into 4 equal portions and form into 4 balls. Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface and roll out into 4 6-inch circles. Place filling of choice in the center of one side of each circle, then fold dough over filling to meet edges of filled side. Crimp edges with a fork or your fingers, then cut a small slit in the top of the calzone to allow steam to escape while cooking. Cook on a preheated pizza stone in a preheated 475 degree oven for about 8 to 10 minutes, or until well-browned. Remove from the oven with a metal peel or spatula and serve immediately.
PIZZA CRUST (BREAD MACHINE)
My family loves homemade pizza and using my bread machine to make the dough really takes the work out of it. This recipe make a soft thick crust. Sometimes I sprinkle the crust with garlic salt to add even more flavor. Prep time does not include cycle time, as bread machines vary.

- Select'dough' setting.
- When dough cycle is done, pat dough into greased 12x15-inch jelly roll pan.
