1/4 cup chopped onion
1/2 cup chopped green bell pepper
1 can (8 oz) tomato sauce
1/2 cup ketchup
8 slices (3/4 oz each) American cheese
1 can (10.2 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Buttermilk Biscuits (5 Count)

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) baking dish with cooking spray. In 12-inch nonstick skillet, cook beef, onion and bell pepper over medium-high heat 6 to 8 minutes, stirring frequently, until beef is thoroughly cooked; drain.
  • Stir in tomato sauce, ketchup and 1/8 teaspoon black pepper; heat to boiling. Reduce heat to simmering; cook uncovered 3 to 5 minutes, stirring occasionally, until thickened.
  • Spoon half of beef mixture into baking dish. Top with cheese. Top with remaining beef mixture, spreading to edge of baking dish.
  • Separate dough into 5 biscuits. Cut each biscuit into 6 pieces. Arrange biscuits in single layer over hot mixture in casserole.
  • Bake 25 to 30 minutes or until biscuits are golden brown and biscuits in center of baking dish are cooked through on bottom.

1 pound lean ground beef
1 medium onion (chopped)
1 small can (4 ounces) mild green chiles (drained)
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 can (8 ounces) tomato sauce
1 can of 10 refrigerated biscuits (or 8 large)
1 1/2 cup shredded Monterey Jack or Mexican blend cheese (divided)
1/2 cup sour cream
1 egg (lightly beaten)

Steps:

  • Heat the oven to 375 F (190 C/Gas 5). Lightly butter a 9-inch square baking dish.
  • In a large skillet, brown ground beef with onion; drain. Add chiles, chili powder, cumin, garlic powder, salt, and tomato sauce. Simmer while preparing biscuit crust.
  • Separate the biscuits, then separate each biscuit into 2 layers. Press 10 biscuit layers over the bottom of the prepared baking dish.
  • In a bowl combine 1/2 cup of shredded cheese, sour cream, and egg. Remove meat mixture from heat then stir in sour cream mixture.
  • Spoon mixture over biscuit dough.
  • Arrange the remaining 10 biscuit layers over the top of the meat mixture then sprinkle with the remaining 1 cup of shredded cheese.
  • Bake in the preheated oven for about 25 minutes, or until biscuits are nicely browned.

This is an old-fashioned beef and biscuit casserole from a 1950s flour recipe booklet is made with a savory ground beef mixture and parsley biscuits.

1 pound ground beef (at least 85% lean)
2 tablespoons vegetable oil
1 cup celery (sliced)
1/4 cup onions (finely chopped)
1/4 cup green bell pepper (chopped)
1 teaspoon salt
1/4 teaspoon black pepper (freshly ground)
1/2 teaspoon chili powder
1 small clove garlic (finely minced)
1 can/10 3/4 ounces condensed tomato soup (or 1 1/2 cups crushed tomatoes)
Parsley Biscuit Topping:
2 cups flour (sifted and all-purpose)
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons cold shortening
3 tablespoons butter (cold)
1/4 cup parsley (minced and fresh)
1 cup milk

Steps:

  • Gather the ingredients.
  • Heat the oven to 425 F / 220 C / Gas 7.
  • In a large, heavy oven-safe skillet or Dutch oven, brown the ground beef in hot oil. Add remaining celery, onions, bell pepper, 1 teaspoon of salt, pepper, chili powder, garlic, and tomato soup. Simmer for 10 minutes.
  • Drop parsley biscuit topping (instructions below) over hot mixture in skillet.
  • Bake for about 20 minutes, or until the topping is golden brown.
  • Carefully turn the casserole out (upside-down) onto a large platter or scoop servings out onto plates with a spoon. Serve immediately.
  • Enjoy.
  • Sift dry ingredients into a bowl. With fingers, a pastry blender, or forks, in the shortening and butter. Stir in parsley and milk, only until flour is moistened. 1 cooking spray
2 tablespoons canola oil
1 cup chopped carrots
1 cup chopped onions
1 cup chopped celery
1 pound ground beef
4 tablespoons butter
3 tablespoons all-purpose flour
1 cup milk
2 cups beef broth
1 ½ teaspoons garlic salt
1 teaspoon onion powder
1 teaspoon garlic powder
¼ teaspoon ground black pepper
1 cup buttermilk
3 cups baking mix (such as Bisquick® Heart Smart Pancake and Baking Mix)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a glass baking dish (such as Pyrex®) with cooking spray.
  • Heat oil in a pan over medium-high heat. Add carrots, onions, and celery and saute until onions are translucent, 5 to 7 minutes.
  • At the same time, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Move beef to one side of the skillet and melt butter over medium heat. Whisk in flour a little at a time until combined; whisk in milk, whisking constantly to prevent lumps. Stir in beef broth. Add sauteed vegetables, garlic salt, onion powder, garlic powder, and black pepper. Bring to a boil; cover and remove from heat.
  • Add buttermilk to baking mix. Stir until a soft dough forms. Place on waxed paper. Roll to 1/2-inch thickness. Cut with a 2 1/2-inch round biscuit cutter dipped in baking mix.
  • Pour the beef mixture into the prepared baking dish and top with biscuits.
  • Bake in the preheated oven until biscuits are browned, 24 to 25 minutes.

1 1/2 lbs fresh ground chuck
1 large onion (chopped)
1 (8 ounce) package noodles
1 (16 ounce) can whole tomatoes or 1 (16 ounce) can diced tomatoes
1 can white corn
1 (10 ounce) can condensed tomato soup
1 cup grated cheddar cheese
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic salt

Steps:

  • Brown onions and meat,season with salt pepper and garlic salt.
  • Boil the noodles in water for 6 minutes and drain.
  • Drain corn.
  • Mix all ingredients and turn into a two-quart greased casserole dish.
  • Can top with a little more grated cheese.
  • Bake 30 minutes at 350 degrees.
