STEAKHOUSE BURGERS
This is the ultimate burger recipe. The burgers are packed with flavor and reliably juicy, even when cooked to well-done.

Steps:
- Preheat the grill to high heat.
- In a large bowl, mash the bread and milk together with a fork until it forms a chunky paste. Add the salt, pepper, garlic, Worcestershire sauce and ketchup and mix well.
- Add the ground beef and scallions and break the meat up with your hands. Mix everything together until evenly combined. Divide the mixture into 8 equal portions and form compact balls. Flatten the balls into ¾-inch patties about 4½ inches across. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill.
- Oil the grilling grates. Grill the burgers, covered, until nicely browned on the first side, 2 to 4 minutes. Flip burgers and continue cooking for a few minutes more until desired doneness is reached. Before serving, toast the buns on the cooler side of the grill if desired.
- Freezer-Friendly Instructions: The uncooked burgers can be frozen for up to three months. (Freeze the burgers on a baking sheet or plate so their shape sets, then transfer them to a sealable plastic bag for easy storage.) Defrost the burgers overnight in the refrigerator prior to serving and then cook as directed.

HAMBURGERS

- Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
- Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
- Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
- Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
- Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
- Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
- When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
- Timing for a countertop grill:
- For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
- For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
- For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
- Combine all ingredients.
GROUND BEEF GRAND STYLE
Steps:
- 1. Brown beef and onions; drain.
- 2. Combine cream cheese, soup and milk.
- 3. Add salt, ketchup and beef.
- 4. Pour into 2 quart casserole.
- 5. Bake at 375 degrees for 10 minutes.
- 6. Put biscuits on top and add olive slices.
- 7. Bake at 375 degrees for 15 to 20 minutes, until golden brown.
GRAND BURGERS
Oh, this is a lot of yumminess wrapped in a biscuit! The onions and garlic add a huge punch of flavor to these burgers. Cooking the garlic in the pan mellows the flavor a bit, similar to if you were roasting it in the oven. We loved the sauce too ... make extra for dipping. It's the perfect touch. - 1. Preheat oven to 350.
- 2. Add ground beef to a bowl and add the Worcestershire sauce. Add 1/2 teaspoon salt and pepper.
- 3. Add to the bowl 1/2 teaspoon red pepper flakes. Combine with your hands.
- 4. Make six small patties.
- 5. Cook patties over medium-low heat for 5 minutes per side or until desired doneness.
- 6. While the patties are cooking add the six garlic cloves to center of pan and cook 3 to 4 minutes or until tender.
- 7. Let patties cool slightly on a paper towel with the garlic.
- 8. In the same, skillet cook the onion until tender, about 4 minutes.
- 9. Cook the bacon according to the box.
- 10. Take each biscuit and pull apart to make 12 halves.
- 11. Use a small class or biscuit cutter to cut the cheese into six circles.
- 12. Put a piece of cheese on six halves the biscuits.
- 13. Put a patty on top of the cheese.
- 14. Cut the bacon into and put a half on top of each patty.
- 15. Put a slice of onion on top of bacon. Then smash each garlic clove and add to the top of onion.
- 16. In a small bowl, stir together the mayo and mustard. Add the rest of the salt, pepper, and red pepper flakes. Stir together.
- 17. On the other six halves of biscuits add a teaspoon of the sauce.
- 18. Grease a cookie sheet. Take the biscuit with the sauce on it and put over the top of the biscuit with the meat on it. Pull top over to the bottom and press to seal around the burger.
- 19. Cook on greased cookie sheet for 15 to 20 minutes. Extra sauce can be made for dipping.
HAMBURGER GRAND STYLE
Great recipe for the family, doesn't take long to make. You can cook it with the biscuits on top, or you can cook them separately just use it like a gravy.

PERFECT BURGER
Bobby's Flay's Perfect Burger recipe from Food Network needs only a handful of ingredients, a hot grill and toasted hamburger buns.

Steps:
- Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
- IF USING A GRILL: Heat a gas grill to high or heat coals in a charcoal grill until they glow bright orange and ash over. Brush the burgers with the oil. Grill the burgers until golden brown and slightly charred on the first side, about 3 minutes for beef and 5 minutes for turkey. Flip over the burgers. Cook beef burgers until golden brown and slightly charred on the second side, 4 minutes for medium rare (3 minutes if topping with cheese; see step 3) or until cooked to desired degree of doneness. Cook turkey burgers until cooked throughout, about 5 minutes on the second side.
- IF USING A GRILL PAN: Heat a grill pan over high heat on top of the stove. Cook the burgers as for a grill, above.
- IF USING A SAUTE PAN OR GRIDDLE (PREFERABLY CAST IRON): Heat the oil in the pan or griddle over high heat until the oil begins to shimmer. Cook the burgers until golden brown and slightly charred on the first side, about 3 minutes for beef and 5 minutes for turkey. Flip over the burgers. Cook beef burgers until golden brown and slightly charred on the second side, 4 minutes for medium rare (3 minutes if topping with cheese) or until cooked to desired degree of doneness. Cook turkey burgers until cooked throughout, about 5 minutes on the second side.
- Add the cheese, if using, to the tops of the burgers during the last minute of cooking and top with a basting cover, close the grill cover, or tent the burgers with aluminum foil to melt the cheese.
- Sandwich the hot burgers between the buns and serve immediately.

HAMBURGERS (TAVERN STYLE)
Here is the hamburger you get in better taverns and bars, plump and juicy, with a thick char that gives way to tender, medium-rare meat. It is best cooked in a heavy, cast-iron skillet slicked with oil or fat. Ask a butcher for coarse-ground chuck steak, with at least a 20 percent fat content, or grind your own. Keep it in the refrigerator until you are ready to cook, and then when you do, form your patties gently. Season after the meat is in the pan.

- Add oil or butter to a large cast-iron or stainless-steel skillet and place over medium heat. Gently divide ground beef into 4 small piles of around 8 ounces each, and then lightly form these into thick patties of around 3 1/2 inches in diameter, like flattened meatballs. Season aggressively with salt and pepper.
- Increase heat under skillet to high. Put hamburgers into the skillet with plenty of distance between them and allow them to cook, without moving, for approximately 3 minutes. Use a spatula to turn hamburgers over. If using cheese, lay slices on meat.
- Continue to cook until meat is cooked through, approximately another 3 to 4 minutes for medium-rare. Remove hamburgers from skillet and allow to rest for approximately 5 minutes; meanwhile, toast the buns. Place hamburgers on buns and top as desired.
