1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed

Steps:

  • Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  • Stir flour mixture into banana mixture; batter will be slightly lumpy.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

2 small very ripe bananas ((about 1 cup tightly packed sliced banans))
2 large eggs
1 cup buckwheat flour or whole wheat
1 cup milk
2 cups lightly packed baby spinach
1 tablespoon ground flaxseed
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
Coconut oil for cooking ((or canola oil or butter))

Steps:

  • Add all ingredients to a blender except the flour.
  • Blend on high until very well combined, about 20-30 seconds, or until you no longer see any noticeable flecks of spinach.
  • Stir or pulse in the flour and thoroughly combine without over-mixing.
  • Warm a nonstick or cast iron skillet or griddle over medium heat and coat with oil or butter. Pour small rounds of batter onto the hot surface-the batter should spread fairly thinly on its own-and let cook until bubbles form on the surface and the surface is mostly set, about 3-4 minutes.
  • Flip and cook for an additional 3 minutes, or until fully cooked.
  • Continue to prepare the rest of the batter, keeping the finished pancakes warm in a 275 degree oven if desired.
  • Serve warm with fruit, maple syrup, or another favorite dip.

2 large eggs
2 cups buttermilk
6 tablespoons (3/4 stick) unsalted butter, melted
1 1/2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking soda
1/2 teaspoon sea salt
1 cup diced bananas (2 large)
1/2 cup finely chopped pecans
Nonstick cooking spray or 2 tablespoons unsalted butter

Steps:

  • In a medium bowl, whisk together the eggs and buttermilk. Stir in the melted butter.
  • In a small bowl, mix the flour, sugar, baking soda, and salt together.
  • Add the dry ingredients to the wet ingredients, stirring until just combined - don't worry if there are a few lumps. Stir in the bananas and pecans.
  • Lightly grease a large sauté pan or griddle with the nonstick spray or butter. Heat the pan until hot and then spoon out 3 tablespoons of batter per pancake. Cook the pancakes until the tops look dull and a few of the bubbles pop, about 3 minutes. Turn the pancakes over and cook for another minute.
  • Transfer the cooked pancakes to an ovenproof dish and place in a warm oven until the entire batch is ready to be served.

2 cups buttermilk (or 2 tablespoons vinegar + enough milk to equal 2 cups)(can substitute almond milk + vinegar)
1 large or 2 small ripe bananas (or about 1 cup mashed) (plus extra for slicing on adding to top of pancakes)
2 eggs
3 tablespoons unsalted butter (melted and cooled slightly) (can substitute melted coconut oil)
2 teaspoons pure vanilla extract
2 1/2 cups all-purpose flour
1/4 cup granulated sugar (can substitute pure maple syrup)
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Add the buttermilk to a large bowl. If you're using the vinegar plus milk option, let sit for about 10 minutes to allow the milk to turn to buttermilk. Whisk in the mashed banana, eggs, butter, and vanilla into the buttermilk.
  • To a medium bowl, add the the flour, sugar, baking powder, baking soda, and salt. Whisk together to combine.
  • Pour the dry ingredients over the wet and mix just until incorporated. Do not overmix!
  • Let the batter rest for about 5 minutes. It should form bubbles and rise just a bit.
  • Heat a non-stick griddle to 325 degrees Fahrenheit or place a large frying pan over medium heat. Melt a little butter on the cooking surface, spreading it evenly, if desired (or if the griddle/pan is not non-stick). Using a 1/3 cup measure (or a trigger-handled ice cream scoop works as well), pour the batter onto the griddle or into the frying pan. The pancakes are ready to flip when they look a little dry around the edges and start to form little bubbles (about a minute). Flip and cook on the other side until golden brown and the cooked through.
  • Serve topped with sliced bananas, butter, and maple syrup.

  • Crack two eggs into the bowl with the mashed banana and whisk with a fork until well combined. It’s okay if there are lumps of banana. Next, add in coconut flour and milk and mix to combine.   • Flip cakes and cook until golden brown on the underside. If you find that pancakes are browning too quickly then you need to lower the heat. I normally start on medium heat, then decrease to medium low later so that my pancakes don't burn. If at any point your griddle starts smoking or if your pancakes are burning, it means your pan is too hot.
