Spoon half of glaze over ham., Cover and bake at 350° for 2 hours. Uncover; bake 20-30 minutes longer or until a thermometer reads 140°, basting twice with remaining glaze.

PEACH GLAZED HAM
This is definitely a unique ham you should try this year for Easter dinner. The sweet peach glaze is a nice contrast to the smokiness of the ham. The cloves add an aromatic taste to the sauce and provide another depth of flavor. The peaches dotted all over really makes for a beautiful presentation.

- 1. Put ham cut side down in a large deep heavy pot (about 10 quarts) and add water and syrup. Bring liquid to a boil, then reduce heat to low and gently simmer ham, covered, until tender, 2 to 2 1/2 hours. Uncover and cool slightly.
- 2. Preheat oven to 350°F.
- 3. When ham is cool enough to handle, remove from pot, reserving cooking liquid. Then cut off any rind and excess fat, leaving a thin layer. Transfer ham to a roasting pan.
- 4. Drain peaches. Reserve 1/2 to 1 cup of the light syrup.
- 5. Whisk together sugar, mustard, peach syrup, and ground cloves (if using) in a bowl. Spoon over ham. Warm preserves until just runny (35-40 seconds in the microwave) and pour over ham as well. Attach peaches to ham with wooden toothpicks. Add 2 cups reserved cooking liquid to roasting pan and bake in middle of oven, basting occasionally, until ham is glazed and juices are bubbling, 30 to 40 minutes. Serve warm or at room temperature.

When I lived in Milwaukee we used to be able to buy hot ham and rolls on Sunday morn and had our choice of "baked" or boiled. I hated the boiled ham, but the baked was absolutely delicious. I suspect it was cooked in a Nesco roaster in water with certain spices.

MAPLE-PEACH GLAZED HAM STEAK

- Stir together the preserves, maple syrup, ancho powder and orange juice in a medium bowl.
- Heat grill to high. Grill the steaks for 4 to 5 minutes on both sides, keeping the grill covered to heat through. Baste with the glaze every few minutes. Slice and serve.

- Preheat oven to 350 degrees F.
- In a medium saucepan, simmer together peach nectar, ginger, lemon juice, and garlic cloves. Simmer for 20 minutes.
- Strain out ginger and garlic.
- Prepare ham for glaze. Rub Dijon mustard and then brown sugar on the ham.
- Pour glaze on bottom of pan and throw in sliced peaches for additional peach flavor.
- Place ham in oven for 1 1/2 hours. Every 10 to 20 minutes glaze ham with the glaze from bottom of pan to keep moist.
PEACH GLAZED HAM WITH PEACH CORN RELISH

- Preheat the oven to 325 degrees F.
- Score fat side on ham in a diamond design. Put the ham, fat side up, on a rack in a roasting pan. Insert a meat thermometer, making sure it does not touch the fat or the bone. Bake uncovered until the meat thermometer registers 135 degrees F, about 1 1/2 hours.
- Combine the peach preserves, mustard, hot sauce and ground cloves in a small bowl, to make a glaze. Whisk until smooth. Remove the ham from oven and brush with the glaze. Bake until the meat thermometer registers 140 degrees F, about 20 minutes.
- Arrange the ham on a platter and surround it with the peach halves. Spoon the relish into the peach halves, and serve.
- Combine the vinegar, sugar, mustard, mustard seed, and turmeric in a small saucepan and bring to a boil over medium heat. Add the corn, onion, and bell peppers; cook for 4 minutes. Add a pinch of cloves and stir to combine. Serve hot or cold.

- Place ham in a large roasting pan and bake as directed on the wrapping, about 18 minutes per pound. Combine remaining ingredients, in a small bowl and stir until smooth. Remove the ham from the oven and score the skin in a diamond pattern. Spoon the glaze over, spreading to coat completely. Return the ham to the oven and bake for about 30 minutes longer.
- Chef's Note: To make really special, take small can pineapple rings, drain syrup and place pineapple rings on top of the glazed ham. Secure the pineapple to the ham with wooden cocktail sticks. Then take small jar of cocktail cherries and place 1 cherry in the center of each pineapple ring and continue to baste with the glaze during the cooking process. This makes a good looking ham for a summer buffet table.
GRILLED HAM STEAK WITH PEPPERED PEACH GLAZE

- Combine preserves, ginger lime juice, mustard and lime peel in heavy small saucepan. Stir over low heat until preserves melt.

SUPER SIMPLE PEACH GLAZED HAM

- Rub exterior of ham with dijon mustard. I prefer using Raye's Old World Gourmet Traditional European-Style Dijon Mustard. Pat brown sugar on exterior of ham. Blend peaches and syrup in a blender to the consistency of a puree. Bake ham in a dutch oven with oven-proof lid skin side up accordingly. I baked mine at 325 degrees for 2 hours. Leave lid off for the first twenty-five minutes, but do not baste ham yet. After that, baste with peach puree every 25 minutes. Place lid on dutch oven after each basting. Remove from oven after 2 hours. Slice ham to desired thickness, and serve with warm peach sauce over each slice.
