TOPPING:
1/4 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375°. Cook pasta according to package directions for al dente; drain., Meanwhile, in a large saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk and cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Gradually stir in Swiss and Colby cheeses until melted. Add ham and pasta; toss to coat., Transfer to a greased 11x7-in. baking dish. In a small bowl, mix topping ingredients; sprinkle over pasta. Bake, uncovered, until bubbly, 15-20 minutes.

1 green pepper, diced
1/4 cup onions, diced
4 oz boneless lean ham, chopped
10 oz. frozen spinach, defrosted and drained
1 cup reduced fat shredded cheddar cheese
6 eggs
6 eggs whites
1/4 cup skim milk
1/2 tsp salt
1/4 tsp pepper

Steps:

  • Spray the crockpot with nonstick cooking spray.
  • Mix the hashbrowns with the onions and peppers. Press into the bottom of the crockpot and season with salt and pepper.
  • Mix together the spinach and ham in a bowl. Layer half in the crockpot and top with 1/2 cup cheese. Layer the additional veggies on top and add remaining cheese.
  • Whisk together the eggs, egg whites, milk, salt, and pepper.
  • Pour the eggs over top.
  • Cook on high for 4 hours or low for 6-8 hours until cooked through.

  • Bring a pot of water to boil.
  • Add pasta to pot and cook per package directions.
  • Drain pasta.
  • Heat ham in a skillet over medium heat with garlic.

1 (9 ounce) box frozen spinach, thawed, squeezed to drain
2 medium red bell peppers, cut into strips

1 medium yellow onion, finely chopped
2 garlic cloves, minced
1/2 cup dry white wine
1/2 pound ham, chopped

Steps:

  • Preheat oven to 375 degrees. In a large bowl, combine spinach, rice, milk, eggs, 3/4 cup cheese, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. In a large skillet, heat oil over medium-high. Add onion and garlic and season with salt and pepper. Cook, stirring occasionally, until onion is soft and beginning to brown, about 10 minutes. Add wine and cook until evaporated, about 3 minutes. 1 large baguette
1/4 cup butter, melted
2 tablespoons olive oil
2 medium onions, chopped
1 lb ham, cut into 1/2-inch cubes
4 large eggs
4 cups milk
1/4 teaspoon nutmeg, grated
salt & freshly ground black pepper
6 cups fresh spinach, coarsely chopped (about 2 bunches)
3/4 lb Fontina cheese or 3/4 lb gruyere cheese, grated

Steps:

  • Preheat broiler. Cut baguette diagnoally into 3/4" thick slices. Brush both sides with butter and toast on baking sheet 3" from heat until golden, about 30 seconds each side.
  • Heat oil in frying pan over medium-high heat. Add onions and stir until golden. Add ham and saute until lightly browned. Set aside.
  • In large bowl whisk together eggs, milk, salt, nutmeg and pepper. Add toasted bread and toss gently. Transfer saturated bread to shallow 3 quart casserole, slightly overlapping slices. Place spinach and ham mixture between slices. Pour remaining egg mixture over all.
  • Sprinkle cheese over strata, slightly lifting baguette slices with a spatula to allow cheese to fall between all slices. Preheat oven to 350°F Bake strata in middle of oven for 45 minutes to 1 hour, or until puffed and edges of bread are golden and eggs are set.

1 cup shredded mozzarella cheese

  • Preheat oven to 350°. In a large skillet, heat 1 tablespoon butter over medium heat. Add onion; cook and stir until transparent, 6-8 minutes. I got this recipe out of one of those checkout, small Betty Crocker cookbooks. I think it's delicious and a good way to use up leftover ham and mashed potatoes. The first 5 ingredients and instructions are there if you're going to make instant potatoes, but you can skip that and use leftover mashed potatoes instead.

1/4 cup margarine or 1/4 cup butter
1 teaspoon salt, if desired
1 cup milk
2 2/3 cups instant potatoes
1/4 cup finely chopped onion
1/8 teaspoon ground pepper
9 ounces frozen chopped spinach, thawed and well drained
8 ounces sour cream
3 ounces cream cheese, softened
2 eggs
3 cups cubed cooked ham
4 ounces shredded cheddar cheese

Steps:

  • Heat oven to 350 degrees. Butter 13x9 inch baking dish. If using instant potatoes, make, following directions above, otherwise, heat leftover mashed potatoes, so they are spreadable.Set aside. In medium bowl, combine onion,pepper,spinach,sour cream,cream cheese and eggs; mix well.Spread this mixture into bottom of buttered dish.Sprinkle ham over spinach mixture, top with hot mashed potatoes. Cover with foil, and bake at 350 for 35 to 40,minutes, or until mixture begins to bubble at the edges. Remove foil, sprinkle with cheese evenly over the top. Bake uncovered for an additional 3-5 minutes or until cheese is melted. Let stand 10 minutes before cutting into.

This ham pasta casserole makes a perfect meal with a tossed salad or fresh sliced tomatoes. This is a great way to use leftover ham.

3 cups (12 ounces) penne pasta
1 1/2 to 2 cups peas (frozen; thawed)
6 tablespoons butter (divided)
3 green onions (thinly sliced)
2 tablespoons parsley (fresh; chopped)
1/2 teaspoon garlic (finely chopped)
5 tablespoons flour (all-purpose)
3 cups milk
2 cups ham (diced)
2 1/2 cups cheddar cheese (about 12 ounces; divided)
1 1/2 cups breadcrumbs

Steps:

  • Gather the ingredients.
  • Spray a 3-quart baking dish with nonstick cooking spray or lightly grease it with butter. Heat the oven to 350 F.
  • In a large saucepan, cook the pasta in boiling salted water, following the package directions. Drain in a colander and rinse with hot water.
  • In a saucepan or sauté pan, melt 4 tablespoons of the butter. Add the green onions, parsley, and garlic; cook, stirring, for 1 minute. Add the flour and cook, stirring, for 1 minute.
  • Stir in the milk and cook, stirring, until thickened. Add the ham and 2 cups of the shredded cheese. Cook, stirring, until the cheese is melted and the sauce is hot and bubbly.
  • Add the drained pasta and peas to the sauce, mixing well and heating through.
  • Spoon into the baking dish. Sprinkle with the remaining 1/2 cup of cheddar cheese.
  • Melt the remaining 2 tablespoons of butter and toss with ​the breadcrumbs. Sprinkle over the shredded cheese layer.
  • Bake for about 30 minutes, until crumbs are browned, and the casserole is hot and bubbly.
  • Serve and enjoy.
