I just found this recipe among my Mother's handwritten recipe cards circa 1976. As I remember, we enjoyed it often. I think it came from a Pa. Dutch cookbook we had. That book might have been a gift from my Pa. Dutch mother-in-law. We never used the pineapple, though.

Ingredients

1 slice ham, 3/4-inch to 1-inch thick
4 tablespoons brown sugar
1 teaspoon dry mustard
milk
pineapple slice (optional)

Steps:

Rub ham slice with dry mustard.
Place ham in large skillet or glass baking dish.
Cover with brown sugar.
Add enough milk to barely cover the ham.
Bake 1 hour to 1-1/4 hours at 325. Milk should be almost all absorbed.
You can add pineapple slices 1/2 hour before done. We preferred not to use the pineapple.

An old-fashioned way of cooking ham. From the Laura Secord Canadian cookbook, which says this recipe comes from PEI.

Ingredients

2 slices cooked ham (1 inch thick)
1 teaspoon dry mustard
3 tablespoons brown sugar
2 cups milk
6 whole cloves
2 bay leaves

Steps:

Trim the excess fat off the ham and put in a shallow baking dish.
Combine the mustard and sugar and spread over the ham.
Cover with the milk and add in the spices.
Put a lid on the dish or cover the top with foil and bake for 30 minutes in a 300 F oven.
Bake 30 minutes longer uncovered.
Remove from liquid and serve.
