This is a Pennsylvania Dutch recipe my mom has made all my life and it is my favorite dish. She usually serves it alone or with some small side dish, because everybody fills there plate with the pot-pie. My husband never heard of it till I made it for him. Now it is one of his favorite dishes.

5 lbs ham (with bone in)
water
3 medium potatoes (cubed)
5 cups all-purpose flour
5 eggs
1 cup milk
salt
pepper
chopped parsley

Steps:

  • Place ham in large pot and cover with water.
  • Boil to make ham broth.
  • Cut ham into cubes and set aside.
  • Place potatoes in broth to cook while you are mixing dough.
  • In large mixing bowl, mix flour, eggs, and milk to form soft dough.
  • You may need to add a little more milk.
  • Roll dough to 1/8" to 1/4" thickness (depending on preference).
  • Cut dough into 1" by 3" rectangles.
  • Drop dough into broth one piece at a time.
  • Cook until dough is done.
  • Add ham.
  • Salt and pepper to taste.
  • Add parsley for color.

This is my husband's all time favorite. It is a Pennsylvania Dutch treat that his mother showed me how to make and his eyes light up every time I make it. The ham, onion and potatoes create a union a pure joy and one happy man!

3 cups white onions
3 cups cubed ham
6 cups ham stock or 6 cups chicken broth
4 cups flour
4 tablespoons shortening
1 teaspoon baking powder
1 cup ice water

Steps:

  • Roll out dumpling dough until ¼" thick. Cut dough into 1/2" squares.
  • Boil onion and ham in broth until it boils.
  • Drop dumplings in slowly and consistently.
  • Cook for 1 hours on simmer and stir constantly.

3 tablespoons olive oil
1 ½ teaspoons kosher salt, divided
1 ½ teaspoons freshly ground black pepper, divided
2 tablespoons unsalted butter

2 cups chicken stock
½ teaspoon fresh thyme, chopped
¼ teaspoon garlic powder

Steps:

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Toss the onion, squash, carrot, and celery with the olive oil, 1 teaspoon salt, and 1 teaspoon pepper on the prepared baking sheet until well coated, then spread in an even layer.
  • Roast the vegetables, stirring occasionally, for 20-25 minutes, or until lightly browned. Remove from the oven and transfer to a large bowl. Reduce the oven temperature to 350°F (180°C).
  • Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute, until bubbling. While whisking constantly, slowly pour in the chicken stock, ½ cup (120 ml) at a time, until the mixture is smooth. Bring to a simmer and cook, stirring frequently, for 7-10 minutes, or until the sauce has reduced slightly and is thick and creamy.
  • Add the thyme, remaining ½ teaspoon salt, remaining ½ teaspoon pepper, the garlic powder, and cayenne, if using, and whisk to incorporate. Remove the pot from the heat.

Use up leftover ham in this family dish - add some celery sticks or other veg to the sauce too, if you like

2 tbsp butter
1 large onion, finely chopped
3 leeks, finely sliced
2 large potatoes, cut into small cubes
2 tbsp plain flour, plus extra for dusting
300ml chicken or ham stock
100ml pot crème fraîche (or use leftover double cream)
2 tsp wholegrain mustard
200g cooked ham, shredded
4 bay leaves, optional
375g pack puff pastry
1 egg, beaten, to glaze (or use milk)

Steps:

  • Heat a large frying pan, melt the butter, then add the onion and leeks. Cover, then very gently cook for 15 mins until soft. Add the potatoes after 5 mins cooking.
  • Stir in the flour, turn up the heat, then add the stock, stirring until the mix thickens a little. Take off the heat, then stir in the crème fraîche, mustard and ham. Season to taste, then cool, if you have time. Spoon the mix into a large pie dish, adding a couple of bay leaves. Heat oven to 220C/fan 200C/gas 7.
  • Roll out the pastry on a floured surface to the thickness of a £1 coin. Cut a pastry strip the same width as the lip of the dish, wet the edge of the dish with egg, then fix the strip around it. Brush the top with egg, then lay over the remaining pastry.
  • Trim pastry to the edge of the dish, then ruffle the cut edges with the knife blade to help the layers rise. Cut a few slits to let the steam escape, decorate with bay leaves, if you like, then brush all over the top with egg. Can be done up to a day ahead, keep chilled. Bake for 30 mins until risen.

2 hard-boiled large eggs, chopped
Pastry for single-crust pie (8 inches)

Steps:

  • Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth. Gradually add milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 8-in. square or 11x7-in. baking dish. On a floured surface, roll pastry to fit top of dish; place over filling. I bought a crazy amount of boneless ham for the freezer recently because the sale was just too good to resist! I came up with the recipe as a way to utilize some of it! It came out really good! Hope you all enjoy it!

1 pie crust homemade or other
2 c diced ham
1/4 c all purpose flour
1/2 stick butter + 2 tbsp. butter, divided
2 c milk
1 c shredded cheddar cheese
salt & pepper to taste
1/2 c frozen peas
2 medium carrots, peeled and diced
1 small onion, finely diced
2 large potatoes, peeled and cut into cubes

Steps:

  • 1. arrange half of pie pastry into deep dish pie plate. Bake in oven at 400 degrees for 10 minutes or until pie crust is just barely golden.
  • 2. Par-boil potatoes and carrots until just barely tender, drain.
  • 3. Melt 1 Tbsp. butter in skillet over medium-high heat. Add onions and ham. Saute until ham is browned and onions are soft. Remove ham and onions to a plate, set aside.
  • 4. Add 1/2 stick to pan and melt butter. Stir in 1/2 cup flour, stirring constantly for a minute or two until starting to brown. Pour in 2 cups milk and shredded cheese.
  • 5. Turn heat to medium. Stir liquid until thickened and smooth and cheese has completely incorporated into liquid. (About 10 minutes) Salt & pepper to taste.
  • 6. Add carrots, potatoes, ham, onion, and frozen peas to liquid and mix until well combined.
  • 7. Pour mixture into bottom pie pastry. Cover with top pastry and seal edges.
  • 8. Brush top of pie crust with butter. Bake at 400 degrees for 35-40 minutes or until golden golden and flaky on top.

100g fresh or frozen soffritto mix (or any ready chopped onions, carrots and celery)
2 tsp rapeseed oil
2 button mushrooms , quartered
2 tbsp frozen peas
1 slice of ham , cut into pieces
2-3 tbsp cream (of any sort)
1 tsp Dijon mustard or other French mustard
¼ pack puff pastry (freeze the rest for another time)
flour (any kind), for rolling

Steps:

  • Heat oven to 200C/180C fan/gas 6. Fry the soffrito mix in the oil until it softens and starts to turn golden, add the mushrooms and cook for a couple of mins. Add the peas and ham and cook until the peas are heated through. Stir in the cream and mustard, then turn off the heat. Season well and tip into a pie dish, ovenproof bowl or large shallow mug.
  • Roll out the pastry using a little of the flour until it is larger than the top of your dish. Lightly score a criss-cross pattern into the pastry. Wet the rim of the dish with water and lift the pastry on top, pressing the pastry on to the edges of the dish.
  • Cook for 20-25 mins or until the pastry is risen and golden.
