HAM & SWISS CHICKEN ROLL-UPS
White wine dresses up cream of chicken soup to make a lovely sauce for chicken, ham and Swiss cheese roll-ups. The tried-and-true recipe comes from my mother. -Carol McCollough, Missoula, Montana

- Flatten chicken to 1/4-in. thickness. Top each piece with a slice of ham and cheese. Roll up tightly; secure with toothpicks. In a shallow bowl, combine the flour, Parmesan cheese, salt and pepper. Roll chicken in flour mixture; refrigerate for 1 hour., In a large skillet, brown roll-ups in oil on all sides; transfer to a 3-qt. slow cooker. Combine the soup and wine or broth; pour over chicken. , Cover and cook on low for 4-5 hours or until meat is longer pink. Remove roll-ups and stir sauce. Discard toothpicks. Serve with rice. Freeze option: Freeze cooled chicken roll-up and sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or milk if necessary.

Steps:
- Stir ranch seasoning into softened cream cheese. (For extra creamy cream cheese, beat with a mixer for 2-3 minutes.)
- Spread a thin layer of cream cheese mixture over top of the tortilla. Layer 1-2 pieces of ham and 2 slices of cheese down the middle of the tortilla.
- Roll up as tightly as possible and then wrap in plastic wrap. Continue making rolls until ingredients are finished. Store in the refrigerator for at least one hour.
- Once the rolls have chilled, remove plastic wrap and use a knife to cut off the ends. Slice roll into 1/2 inch rounds and serve.

Steps:
- Flatten chicken to even thickness using either the palm of your hand or the flat side of a meat mallet.
- Place 1 ham slice and 1 cheese slice on each breast half.
- Roll up chicken from narrow end, jelly-roll fashion.
- Tuck in ham and cheese if necessary and secure with wooden toothpicks.
- Heat vegetable oil in a 10" skillet over medium-high heat, cook chicken rolls 10 minutes or until browned on all sides.
- Spoon off fat.
- Stir in soup, milk, onions and thyme.
- Heat to boiling then reduce heat to low.
- Cover and cook for 10 minutes or until chicken is no longer pink, stirring occasionally.
- Remove toothpicks and spoon some sauce over chicken rolls.
- Garnish with chopped parsley if desired.

Steps:
- Mix chicken, 1/3 cup soup, and onion in a bowl.
- Spoon 1/4 cup chicken and soup mixture into a ham Slice and roll up and secure with a toothpick.
- Spread rice in a shallow glass 1 1/2 quart microwave dish.
- Place rolled ham slices on top of rice.
- Mix remaining soup, sour cream or yogurt, and milk.
- Pour over Ham Rolls.
- Place in microwave and cook on high for 8-9 minutes.
- Sprinkle with Swiss Cheese and Paprika let stand for 5 minutes.

- Rinse and pat the chicken breasts dry with paper towels. Using a mallet or meat tenderizer, lightly pound out the chicken breasts until they are 1/4th inch thick.
- Lay the chicken out flat on the cutting board with the smoothiest side down. Sprinkle each with 1 teaspoon each salt and pepper, then layer each evenly with the swiss cheese (one or two slices each), then a thin layer of the ham. Fold the cheese and ham if needed to keep it inside the boarders of the chicken breast.
- Starting at whichever end is narrower, carefully roll the first chicken breast up tightly, keeping as much ham and swiss inside as possible. Secure the roll with a toothpick, and then repeat with the remaining pieces of chicken.
