CHEESY HAM AND MUSHROOM STRATA



Cheesy Ham and Mushroom Strata image

Make this ham-and-cremini strata even more flavorful with a little Parmesan and a lot of Swiss cheese.

Number Of Ingredients 10

Unsalted butter, for the baking dish
2 tablespoons olive oil
12 ounces cremini mushrooms, thinly sliced
Kosher salt and freshly ground black pepper
3 cups half-and-half
1/4 cup grated Parmesan
10 large eggs
One 12-ounce loaf rustic Italian bread, crusts removed, cut into 1-inch cubes, preferably stale (about 6 cups)
2 cups shredded Swiss cheese
6 ounces diced ham

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Heat the oil in a large nonstick skillet over medium-high heat until hot. Add the mushrooms and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Season with salt and pepper. Set aside.
  • Whisk the half-and-half, Parmesan and eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Swiss cheese, followed by the cooked mushrooms and the ham. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
  • On the day of baking, preheat the oven to 325 degrees F.
  • Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Swiss cheese. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

If you have lots of leftover ham from your Christmas festivities, this Ham, Mushroom and Spinach Strata will use it all up!

10 cups cubed French, Italian, or ciabatta bread (day old is best)
3 tbsp butter
8 oz sliced button mushrooms
2 cups baby spinach
2 cups cooked and cubed ham
2 cups shredded Monterey jack cheese (Swiss would be great too!)
9 large eggs
2 cups whole milk
1 tsp salt
1 tsp dijon mustard
1/4 tsp fresh ground black pepper
2 tbsp chopped fresh parsley

Steps:

  • Generously butter or spray a 9x13 casserole dish.
  • In a medium saute pan, melt butter over medium-high heat. Add mushrooms, and cook until lightly browned. Fold in the spinach in batches until completely wilted. Stir in the cubed ham and stir to evenly combine.
  • Layer in the cubed bread, then mushroom, spinach, and ham mixture. Sprinkle cheese evenly over top.
  • Whisk the eggs, milk, salt, dijon mustard, and pepper together. Pour evenly over other ingredients in the casserole dish.
  • Cover tightly and refrigerate for 1 hour or overnight (overnight is best, but only up to 12-16 hours).
  • Remove casserole from the refrigerator and allow to sit out at room temperature while your oven preheats.
  • Preheat the oven to 375°F.
  • Bake casserole, uncovered, for 30 minutes. Cover with aluminum foil for the remaining 20-30 minutes. The casserole is done when it's brown on the edges and puffy in the center, about 55 minutes.
  • Remove from the oven and allow to cool for 5 minutes before serving. Top with chopped parsley, if desired.
  • Cover leftovers tightly and store in the refrigerator for up to 5 days.

This hearty meatless breakfast casserole is a great way to use up stale bread. The cubes on top bake into a delicious crunchy crust that just might be the best part! The whole thing can be assembled the night before and popped into the oven in the morning.

4 tablespoons extra-virgin olive oil, plus more for greasing the dish
8 cups rustic Italian bread, crust removed, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
10 ounces cremini mushrooms, sliced (about 4 cups)
2 cloves garlic, minced
5 ounces fresh baby spinach (about 5 cups)
4 ounces Gruyere, shredded on the large holes of a box grater (about 1 1/2 cups)
1/3 cup grated Parmesan
8 large eggs
2 1/2 cups half-and-half
1 teaspoon fresh thyme leaves, roughly chopped

Steps:

  • Grease a 9-by-13-inch (3-quart) casserole dish with oil.
  • Toss the bread cubes with 2 tablespoons of the oil, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Heat a large skillet over medium heat. Add the bread to the skillet, and cook, tossing occasionally, until toasted and golden brown, about 8 minutes. Return the toasted bread to the bowl to cool.
  • Wipe out the skillet. Heat the remaining 2 tablespoons oil over medium-high heat until it starts to shimmer. Add the mushrooms in one layer (resist the urge to stir right away), and cook until they start to brown, about 3 minutes; stir, then continue to brown for 2 minutes more. Add the garlic, thyme, 1/4 teaspoon salt and some pepper, stir continuously for 1 minute, then fold in the spinach and another 1/4 teaspoon salt. Continue to cook, stirring often, until the spinach is wilted, 1 to 2 minutes. Remove from the heat.
  • Place half the bread cubes in the prepared casserole dish, and sprinkle them with half each of the Gruyere and Parmesan. Add the mushroom-spinach mixture in an even layer. Top with the remaining bread cubes, Gruyere and Parmesan.
  • In a large bowl, whisk together the eggs, half-and-half, 1/2 teaspoon salt and several grinds of pepper. Pour the egg mixture into the casserole dish. Cover with plastic wrap, and refrigerate for at least 6 hours up to overnight. Remove the casserole from the refrigerator 30 minutes before baking.
  • Preheat the oven to 350 degrees F. Bake the casserole until the custard is set and the top is golden brown, 50 to 55 minutes. Cool for at least 15 minutes before serving warm or at room temperature.

1 tablespoon minced garlic
8 ounces sliced baby portabella mushrooms
1 teaspoon salt, divided
1/2 teaspoon ground black pepper, divided
6 large eggs
1 cup half-and-half
1/2 cup sour cream
8 ounces cream cheese, softened
8 -10 slices sourdough bread
2 cups shredded monterey jack cheese, divided
1/2 lb thinly sliced smoked ham
10 ounces frozen chopped spinach, thawed and squeezed dry

Steps:

  • Spray a 9"x11" dish with cooking spray.
  • In a large skillet, heat olive oil; add onion and garlic. Cook for 3 minutes.
  • Add mushrooms, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook for 8 minutes. Set aside.
  • In a medium bowl, whisk together eggs, half and half, sour cream, and remaining salt & pepper. Mix in the cream cheese.

12 ounces pasta
1 large yellow onion, sliced
2 tablespoons olive oil
1 pound sliced mushrooms
1 1/2 cups ham pieces
Chopped parsley
Grated Pecorino cheese

Steps:

  • Cook pasta in boiling salted water until al dente. Reserve 1/4 cup pasta water; drain pasta and return to pot. Meanwhile, in a large skillet, combine sliced large yellow onion with olive oil; season with salt and pepper. Cook over medium-high until beginning to brown, 3 to 5 minutes. Add sliced mushrooms; cook until browned, about 5 minutes. Add ham pieces; cook until warm. Toss with pasta, adding enough pasta water to create a sauce that coats pasta. 2 tablespoons unsalted butter
1 cup finely chopped onion (1 medium)
5 ounces chopped mushrooms
1 teaspoon salt (divided)

4 cups whole wheat bread, cubed (1 inch)
3 ounces coarsely grated gruyere (1 cup)
1 ounce finely grated parmesan cheese (1/2 cup)
1 1/2 cups milk

1 tablespoon Dijon mustard

Steps:

  • Squeeze liquid from spinach and set aside.
  • Heat butter over medium heat and cook onion and mushrooms until soft.
  • Add 1/2 teaspoon of the salt and the pepper and nutmeg and cook for one minute.
  • And spinach, stir, and remove from heat.
  • In a lightly buttered 1 1/2 to 2 quart casserole, spread one third of the bread cubes across the bottom, then 1/3 of the spinach mixture, then 1/3 of the Gruyere, and 1/3 of the Parmesan.
  • Continue layering ingredients, finishing with a cheese layer.
  • Whisk together the milk, eggs, and mustard. Pour evenly over casserole.
  • Bake at 350 degrees for about 45 minutes, until golden brown and puffy in the middle. Casserole can be refrigerated overnight before cooking.

1/2 cup shredded mozzarella cheese (2 ounces)
1/4 cup shredded Fontina cheese (1 ounce)

2 ounces prosciutto or 2 ounces Canadian bacon, chopped

A rich and delicious strata that would be a nice feature dish at a brunch. This can be assembled a day ahead. Just cover and refrigerate before baking. This is another recipe from the Best of Bridge ladies. They are legends from my home town. Enjoy!

1 large baguette
1/4 cup butter, melted
2 tablespoons olive oil
2 medium onions, chopped
1 lb ham, cut into 1/2-inch cubes
4 large eggs
4 cups milk
1/4 teaspoon nutmeg, grated
salt & freshly ground black pepper
6 cups fresh spinach, coarsely chopped (about 2 bunches)
3/4 lb Fontina cheese or 3/4 lb gruyere cheese, grated

Steps:

  • Preheat broiler. Cut baguette diagnoally into 3/4" thick slices. Brush both sides with butter and toast on baking sheet 3" from heat until golden, about 30 seconds each side.
  • Heat oil in frying pan over medium-high heat. Add onions and stir until golden. Add ham and saute until lightly browned. Set aside.
  • In large bowl whisk together eggs, milk, salt, nutmeg and pepper. Add toasted bread and toss gently. Transfer saturated bread to shallow 3 quart casserole, slightly overlapping slices. Place spinach and ham mixture between slices. Pour remaining egg mixture over all.
  • Sprinkle cheese over strata, slightly lifting baguette slices with a spatula to allow cheese to fall between all slices. Preheat oven to 350°F Bake strata in middle of oven for 45 minutes to 1 hour, or until puffed and edges of bread are golden and eggs are set.
