1 breast large chicken breast
1 slice baby swiss cheese
1 slice provolone cheese
1 thin slice ham
5 leaves baby spinach leaf
½ cup flour
2 eggs, beaten
⅔ cup breadcrumb
oil, for frying
salt, to taste
pepper, to taste

Steps:

  • Cut a pocket into the side of the chicken breast.
  • Season chicken with salt and pepper.
  • Stack the two cheeses and spinach on top of the ham and roll up tightly.
  • Stuff the chicken with the roll and press the edges of the chicken together to create a seal.
  • Place the flour, eggs, and bread crumbs into 3 separate bowls.
  • Being careful to keep the chicken from opening, dip the stuffed chicken in the flour, shaking off the excess. Then dip the floured chicken into the egg, then breadcrumbs, then egg and breadcrumbs again. Coat evenly and shake off any excess breading.
  • Heat oil in a cast iron pan over medium heat and preheat oven to 375ºF (190°C).
  • Fry the chicken until golden brown on both sides.
  • Once the chicken is fried, place into a baking dish and bake for 20 minutes, or until the internal temperature of the chicken reaches a minimum of 165ºF (75ºC).

1 teaspoon salt, for chicken
¼ teaspoon pepper, for chicken
1 teaspoon garlic powder
4 slices ham
4 slices provolone cheese
1 cup flour
2 eggs, beaten
1 cup breadcrumb
3 cups broccoli floret
4 tablespoons olive oil
1 teaspoon salt
¼ teaspoon pepper

Steps:

  • Preheat oven to 400°F (200°C)
  • Cut about ¾ of the way through the chicken horizontally, making sure not to cut through the other side. Flip the chicken open and flat.
  • Lay a sheet of plastic wrap on top of the chicken and pound it flatter using a pot or a pan. Remove the plastic wrap.
  • Season with the salt, pepper, and garlic powder, rubbing the seasoning in evenly. Lay 2-3 slices of ham over the chicken, followed by 4 slices of provolone cheese.
  • Carefully roll the chicken up.
  • Transfer the flour, eggs, and breadcrumbs into 3 separate bowls.
  • Dip the chicken roll into the flour, tapping off any excess, and then into the egg, followed by the breadcrumbs. Place on a baking sheet
  • Add the broccoli to the baking sheet, mixing it with the olive oil, salt, and pepper. Make sure to save a little oil to drizzle on top of the chicken.

Four 8- to 10-ounce boneless skinless chicken breast halves
2 tablespoons Dijon mustard
4 slices deli ham, each slice halved (about 3 ounces)
4 thin slices provolone (about 2 1/2 ounces)
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2/3 cup chicken broth
1 tablespoon unsalted butter
1 tablespoon chopped fresh herbs, such as parsley, chives or dill
1 1/4 pounds red-skinned potatoes
2 tablespoons olive oil
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Insert a paring knife into the thickest part of each chicken breast to make a 3-inch-long pocket down the side, cutting in about halfway. Rub the insides of the pockets with 1 tablespoon of the mustard for all 4 breasts. Stuff each breast with 2 half slices of ham and 1 slice of provolone, folding them to fit. Rub both sides of the chicken breasts with the olive oil and sprinkle with the salt and pepper.
  • Heat a nonstick skillet over medium-high heat until very hot, 3 to 5 minutes. Add the chicken breasts and cook until golden brown and just cooked through, 6 to 8 minutes per side depending on the thickness of the chicken; reduce the heat to medium if the chicken becomes too dark towards the end of the cooking time. Cover the skillet with a lid or a piece of aluminum foil during the last 3 minutes of cooking time to finish cooking the chicken through to an internal temperature of 160 degrees F. Check the temperature at the thickest part of the breast without stuffing.
  • Transfer the chicken to 4 plates or a cutting board and add the chicken broth and remaining 1 tablespoon mustard to the skillet. Cook, whisking, over medium-high heat until the sauce has reduced by about half, 3 to 4 minutes. Remove from the heat and swirl in the butter and chopped herbs.
  • Depending on the size of the breasts, either put 1chicken breast on each of 4 plates or slice all the breasts and divide among 6 plates. Spoon the sauce over the chicken and serve with Crispy Sliced Roasted Potatoes on the side.

  • Place a rimmed baking sheet in the center rack of the oven and preheat the oven to 425 degrees F.

Steps:

  • Stir ranch seasoning into softened cream cheese. (For extra creamy cream cheese, beat with a mixer for 2-3 minutes.)
  • Spread a thin layer of cream cheese mixture over top of the tortilla. Layer 1-2 pieces of ham and 2 slices of cheese down the middle of the tortilla.
  • Roll up as tightly as possible and then wrap in plastic wrap. Continue making rolls until ingredients are finished. Store in the refrigerator for at least one hour.

1 17.5 oz package (2 sheets) store-bought puff pastry(thawed but still cool)
1/2 cup pizza sauce
12 slices deli ham
1-1 1/2 cup shredded cheese (mozzarella)
2 Tablespoon olive oil
1 teaspoon dried basil or oregano ( you can combine both)
2 tablespoon grated parmesan cheese

Steps:

  • Preheat oven to 400 F and line two large baking sheets with silicone baking mats or parchment paper and set aside.
  • Place a sheet of thawed puff pastry onto a baking paper dusted with flour and roll out into approximately 8×12 inch rectangle (dimension may vary depending on brand of pastry you use) It should be rolled out thin but don't thin it out too much or it won't be able to hold the filling.
  • Spread athin layer of pizza sauce, arrange ham slices and sprinkle with shredded cheese (do not over-top or else you won't be able to roll the dough into neat log, you can add more cheese onto top of each slice before baking).
  • Tightly roll up the dough like a cinnamon bun with the baking paper already under the dough(lift the edge of baking paper and roll). Repeat the process with the second sheet of puff pastry and the other half of the filling.
  • You can place rolls onto 1 prepared baking sheet and set it in the freezer for 10 minutes , it will be easier to cut, or you can cut it immediately.
  • Cut roll into slices, approximately 1-inch wide and place onto baking sheet keeping 2 inch apart.(while you cut the roll slices will flatten and lose their shape but using your finger shape them back into circle when place them onto baking sheet).
  • Combine olive oil with basil or oregano and brush the tops and edges of each slice, then sprinkle with parmesan.
  • Bake in preheated oven about 15-20 minutes (until the edges are golden brown).
  • Let them cool 5-10 minutes onto baking sheet (if the bottoms are stick a little run a thin knife under each slice and transfer them onto a serving plate).
  • If you want make them ahead and keep in the freezer pack them into a foil. When you're ready to bake take them out the freezer for 15 minutes before cutting into slices, then let the slices sit another 15 minutes at room temperature to thaw completely before baking(brush with oil, sprinkle with parmesan and bake).

2 cups shredded cheddar cheese

Steps:

  • Boil the Chicken Breasts for 20 minutes, or until they are completely cooked.
  • Remove them from the boiling water and let them cool.
  • Once they have cooled, cut them into bite size pieces.
  • Combined the Cooked Chicken, Cream of Chicken Soup, 2 Cup of Shredded Cheddar Cheese, Salt and Black pepper in a large bowl and mix well.

Steps:

  • Place one chicken breast between plastic wrap or freezer bags and bash it until it is nice and thin -- repeat with the other breast.
  • Mix the pepper, five spice and crushed garlic.
  • Sprinkle the mixture over both breasts.
  • Roll up one slice of ham and place it on the chicken breast.
  • Roll the chicken up firmly and fold the ends under.
  • Whisk the egg and milk together.
  • Coat the chicken with flour (easiest in a freezer bag) shake off the excess.
  • Dip in the egg mixture -- shake of the excess.This step will stop the chicken from separating from the spring roll wrapper.
  • Place the chicken "roll" diagonally across the spring roll wrapper. Brush some of the egg mixture on the ends of the wrapper.
  • Roll the chicken, tucking the ends in as you roll.
  • Deep fry in oil until golden brown and cooked through. Don't have the oil too hot -- otherwise the spring roll wrappers will brown before the chicken is cooked.
  • Drain on paper towels and then cut on the diagonal.

1 cup ham, diced
1 tablespoon onion powder

  • Preheat oven to 350°F (180°C).
  • Finely chop the broccoli florets, and then transfer to a large bowl.

2/3 cup (70g) shredded sharp cheddar cheese
2/3 cup (100g) sliced ham ((leftover ham is great here))
1/3 cup (30g) chopped chives or green onions
1 cup (225g) loosely packed baby spinach
5 corn tortillas (the large white ones)

Steps:

  • Soften the cream cheese to room temperature.
  • In a bowl, combine the cream cheese with the ranch seasoning mix. Stir in the shredded cheddar cheese.
  • In a thin layer, spread the cheese mixture onto a tortilla.
  • Add chopped ham, chives, and spinach leaves on top of the cheese.

3 ½ cups broccoli, finely chopped, divided
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
8 oz cream cheese, 1 package, softened
3 chicken breasts
salt, to taste
pepper, to taste
14 oz cheddar cracker, 1 package
1 cup all-purpose flour
2 eggs

Steps:

  • In a small bowl, microwave 1½ cups (225 g) of broccoli for 1 minute. Add the cheddar cheese, garlic powder, onion powder, and cream cheese. Mix thoroughly, and set aside until ready to use.
  • On a cutting board, butterfly the chicken breasts with a knife. Cut through the chicken breast so you have 6 thinner chicken cutlets. Cover in plastic wrap, and tenderize by beating with a rolling pin or a heavy pan.
  • Remove the plastic wrap, and season with salt and pepper. Place a scoop of the broccoli cheddar mixture on top of a chicken cutlet, and spread until the chicken is covered.
  • Roll the chicken up starting from the tapered end. Use 2 toothpicks to keep the chicken tightly rolled. Repeat with the rest of the chicken.
  • Preheat the oven to 325˚F (165˚C). Line a baking sheet with parchment paper.
  • In a plastic bag, crush the cheddar crackers until they have a coarse, sand-like texture. Pour the cracker crumbs into a large bowl. Add the rest of the minced broccoli. Stir to combine.
  • Put the flour into a medium bowl.
  • Whisk the eggs in another medium bowl.
  • Using tongs, place one of the pieces of chicken into the flour. Turn the chicken in the flour until it is fully coated, tap off any excess flour. Place the chicken in the egg, turn until the chicken is coated. Place the chicken in the broccoli cracker crumb mixture, turn until the chicken is fully coated. Repeat with the remaining chicken rolls.
  • Transfer the pieces of chicken to the prepared baking sheet. Bake for 40-45 minutes.
  • Let the chicken cool slightly, then remove the toothpicks.
  • Enjoy!
