COUNTRY HAM BREAKFAST CASSEROLE

Butter, for buttering the baking dish
6 slices country white bread, torn into 2-inch pieces
1 1/2 cups heavy cream
1 1/2 cups shredded sharp white Cheddar
1 1/2 cups cubed country ham
1 cup milk
1/2 cup chopped scallions
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
12 large eggs
1 teaspoon paprika
1/4 cup chopped chives, for garnish

Steps:

  • Butter a large baking dish and evenly spread out the torn bread to cover the bottom of the dish.
  • In a large bowl, beat to combine the heavy cream, cheese, ham, milk, scallions, salt, pepper and eggs. Pour the egg mixture over the bread and top with the paprika. Cover and refrigerate for at least 1 hour and up to overnight.
  • Remove the dish from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees F.
  • Uncover the dish and bake until puffed, golden and cooked through, about 45 minutes. Let cool 5 minutes, sprinkle with the chives and serve.

1 cup ham, diced
1/2 cup sliced mushroom
3/4 cup cheddar cheese, shredded
4 eggs, beaten
1 1/3 cups milk
1 teaspoon dried onion flakes
1 teaspoon dried parsley flakes
1/2 teaspoon lemon pepper

Steps:

  • Spray 8 X 8 baking dish with cooking spray.
  • Place 4 slices of bread in prepared baking dish.
  • Sprinkle ham, mushrooms, and chees over top.
  • Cover with 4 slices of bread.
  • In a medium bowl, combine eggs and skim milk.
  • Add onion flakes, parsley flakes, and lemon pepper.
  • Mix well to combine.
  • Evenly pour egg mixture over bread.
  • Cover and refrigerate for at least 1 hour or overnight.
  • Uncover and bake at 350 F for 1 hour.
  • Place baking dish on a wire rack and let set for 5 minutes.
  • Cut into 4 servings.

This easy ham and cheese breakfast casserole makes a delicious brunch, breakfast, or brinner! Such an easy dish to make it ahead of time!

16 slices bread (cubed and divided)
16 ounces cubed cooked ham (1 package)
2 cups shredded cheddar cheese
1 cup shredded swiss cheese
6 eggs
3 cups milk
½ teaspoon garlic powder
½ teaspoon ground mustard
pinch pepper
pinch cayenne pepper
1½ cups cornflakes (crushed)
3 Tablespoons butter

Steps:

  • Place 8 slices of cubed bread on the bottom a 9 x 13 inch baking dish. Top with ham and cheeses and then the remaining cubed bread.
  • In a large bowl, whisk together eggs, milk, garlic powder, ground mustard, and peppers. Pour over bread, ham, and cheese. Cover and refrigerate 8 hours (or overnight).
  • Remove from fridge 30 minutes before cooking.
  • Preheat oven to 375 degrees.
  • In a small bowl, mix together crushed cornflakes and melted butter. Sprinkle over top the casserole and bake for 40-45 minutes, until a knife inserted in the center comes out clean.
  • Serve warm.

1 pound fresh mushrooms, coarsely chopped
1/3 cup butter, cubed
1/2 teaspoon Italian seasoning
1/8 teaspoon pepper
4 cups shredded sharp cheddar cheese
1-3/4 cups cubed fully cooked ham
1/2 cup shredded Parmesan cheese
2 tablespoons all-purpose flour
24 large eggs
2 cups heavy whipping cream
1 tablespoon Dijon mustard
1/8 teaspoon white pepper

Steps:

  • In a Dutch oven, saute mushrooms in butter until tender. Add Italian seasoning and pepper; saute 1 minute longer. Spread mushroom mixture evenly into two greased 13x9-in. baking dishes. , In a large bowl, combine the cheddar cheese, ham, Parmesan cheese and flour. Sprinkle over mushroom mixture. In another large bowl, whisk the eggs, cream, mustard and white pepper. Pour over cheese mixture., Cover and freeze one casserole for up to 3 months. Bake remaining casserole, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting., To use frozen casserole: Remove from the freezer 30 minutes before baking (do not thaw). Cover and bake at 350° for 55 minutes. Uncover; bake 15-20 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.,
