HAM, CHEESE & PEAR SALAD



Ham, cheese & pear salad image

Whip up this ham, ricotta, pear, rocket and couscous salad in just 15 minutes. Serving two, it's a lovely summer lunch or speedy balanced supper

100g couscous
2 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp honey
80g baby spinach
60g rocket
2 small pears, cored, quartered and finely sliced
50g ricotta
1⁄2 small bunch of chives, finely sliced
1 lemon, zested
4 thin slices of ham, shredded

Steps:

  • Tip the couscous into a heatproof bowl and pour over 140ml boiling water from the kettle. Cover and leave for 4 mins. Meanwhile, whisk the olive oil, mustard, vinegar and honey together in a bowl. Set aside.
  • Toss the spinach, rocket and pears with the dressing. Fluff the couscous with a fork, then mix into the salad while still warm (this will wilt the greens slightly). Divide between two plates.
  • Combine the ricotta and 2 tbsp water with most of the chives and the lemon zest. Top the salad with spoonfuls of the ricotta mixture, the ham and remaining chives. Finish with a grinding of black pepper, if you like.

1/2 recipe Peasant Bread (see recipe)
4 firm Bosc pears
1 tablespoon unsalted butter
4 thin slices prosciutto
1/2 pound bleu de Bresse cheese
Cornmeal
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Make the bread dough through Step 1. Meanwhile, peel, core and slice the pears thin. Melt the butter in a large skillet over medium heat. Add the pear slices and saute until they begin to brown. Remove from the heat, cover the pan and let stand for 15 minutes. Trim the fat from the prosciutto and cut it into slivers. Set aside. Remove the rind from the cheese, crumble it into large pieces and set aside.
  • Preheat the oven to 425 degrees. Sprinkle a baking sheet lightly with the cornmeal. Punch the dough down. On a lightly floured surface, roll the dough out into a 10-inch circle. Top with the prosciutto slivers, then the pear slices and their juices. Season with the salt and pepper. Bake until the edge of the bread is golden, about 25 minutes. Sprinkle the cheese evenly over the top and continue to bake until the cheese melts, about 2 minutes. Cut into 6 wedges and serve.

1 tablespoon whole grain mustard
1/2 teaspoon mayonnaise
1 teaspoon brown sugar
1/2 teaspoon honey
1 pinch cinnamon
1 pinch nutmeg
1 fresh pear, cored, skinned, and thinly sliced
4 ounces thinly shaved ham, sliced
4 slices baby swiss cheese
4 pieces rye bread or 4 pieces whole grain wheat bread
1 tablespoon soft butter

Steps:

  • Combine the first six ingredients and spread onto one side of each of the four slices of bread.
  • To assemble the two sandwiches: On top of 2 slices of bread, with the mustard-mayo combination side up, layer the ingredients as follows: cheese, ham, pear, cheese - and then top with the remaining slices of bread, with the mustard-mayonnaise side down.
  • Next, thinly butter the outsides of both sandwiches.
  • Grill for 2-3 minutes over medium heat, cooking until golden brown. Turn and cook on the other side for another 2-3 minutes.

8 thin sandwich pickle slices
4 slices deli ham

Steps:

  • Cut baguette in half without slicing through completely. Arrange half of the cheese on bottom half. Top with pickles, ham and remaining cheese; sprinkle with paprika. Close sandwich; cut crosswise into four pieces., Transfer to an ungreased baking sheet. Bake at 350° for 12-15 minutes or until cheese is melted.

8 slices sourdough bread (or other good-quality bread)

6 slices prosciutto, very thin and trimmed of excess fat
1/2 medium bartlett pears (very ripe and sweet is best) or 1/2 medium Anjou pear, cored and cut into 6 wedges (very ripe and sweet is best)
1/2 cup blue cheese, crumbled
2 tablespoons light cream
1/2 teaspoon thyme, finely chopped
fresh ground black pepper

Steps:

  • Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil.
  • Lay the prosciutto slices side by side on a work surface. Place a pear wedge near the end of each one and roll up. Transfer the wrapped pear wedges to the baking sheet. At this point you can lightly sprinkle over with freshed ground black pepper, if desired. Roast about 6 minutes, until the prosciutto is lightly browned and the pear has softened.
  • Meanwhile, combine the blue cheese, cream and thyme in a small saucepan over medium heat. Cook about 3 minutes, stirring constantly, until the cheese melts. Season with pepper to taste. 8 slices rustic bread (1/2 inch thick)
4 teaspoons extra-virgin olive oil
4 teaspoons Dijon mustard
4 ounces Gruyere cheese, very thinly sliced
4 ounces thinly sliced deli ham
2 cups baby arugula
1 pear, such as Anjou or Bosc, cored and thinly sliced

Steps:

  • Brush one side of each bread slice with oil; spread mustard on other side. Layer half the cheese on mustard side of 4 bread slices and top with ham, arugula, pear, a sprinkle of pepper, and remaining cheese. Sandwich with remaining bread slices, mustard side down.
  • Heat a large skillet over medium. Working in batches if necessary, place sandwiches in skillet and weight with another skillet. 1 tbsp olive oil
100g sliced ham , chopped
1 bunch spring onions , sliced
2 eggs , lightly beaten
300g tub soft cheese , room temperature
2 large handfuls rocket leaves
50g blue cheese , crumbled
2 tbsp pine nuts

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Brush each filo sheet with a little oil and layer into a 20cm springform or loose-bottomed tin, overlapping each sheet at a different angle.
  • Mix together the ham, spring onions, eggs, soft cheese and rocket, then pour into the filo case. Sprinkle with blue cheese and pine nuts, then bake for 30 mins until just set. Cool slightly, slice and serve with a salad.
