LEEK, BACON, AND PASTA
This is our family's take on a dish my husband saw on TV (I believe the original used pancetta and some hard-to-find ingredients). It's super tasty and quick. Always a big hit at my house and we rarely have leftovers.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain.
- Fry diced bacon in a large skillet until browned, stirring often, about 10 minutes. Transfer bacon into a bowl with a slotted spoon, leaving drippings in skillet. Cook and stir leek and cremini mushrooms in the hot bacon drippings until mushrooms are tender, 8 to 10 minutes.
- Return bacon to skillet and stir in bow-tie pasta. Gently mix in sour cream and season with black pepper and parsley. Top with Parmesan cheese to serve.

- Cook pasta as directed on package, omitting salt.
- Meanwhile, cook and stir bacon and onions in large skillet on medium-high heat until bacon is crisp and onions are crisp-tender. Remove from skillet; drain. Add cream cheese and milk to skillet; cook and stir 5 min. or until cream cheese is completely melted and sauce is well blended. Add peas; cook 1 to 2 min. or until heated through.
- Drain pasta. Add to sauce in skillet along with the bacon mixture; mix well. Sprinkle with Parmesan and parsley.

PASTA WITH PANCETTA AND LEEKS

- Cook the pasta according to package directions to al dente and set aside, reserving 1/2 cup of the pasta water.
- Saute the pancetta in a large skillet over medium heat until the fat is rendered and it starts to brown. Add the leeks and cook, about 8 minutes. When you add the leeks, you can also throw in a pat or 2 of butter if you want to. This'll give the dish some scrumptious flavor.
- After 8 to 10 minutes, pour in the wine, and then cook until reduced, an additional 1 to 2 minutes. Reduce the heat to low, and then pour in the cream. Add salt and pepper to taste. Stir in some Parmesan.
- Toss in the pasta, adding a little pasta water to thin as needed. Serve with Parmesan over the top - delicious!
BOW-TIE SKILLET ALFREDO

- Bring a large pot of water to a boil. Cook the pasta according to the package directions. Drain and set aside.
- Slice the chicken into thin strips and season with salt and pepper. Heat the butter and oil in a large skillet over medium-high heat. Add the chicken strips and cook until deep golden brown on both sides and done in the middle. Remove the chicken from the skillet and add the minced garlic. Cook the garlic for 1 minute, then pour in the broth. Let it bubble up and reduce for 1 1/2 to 2 minutes.
- Next, add the half-and-half, cream and some salt and pepper. Add the Parmesan, whisking constantly until it's all combined. Allow the liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth.
- When the sauce looks good, remove it from the heat. Return the cooked chicken to the skillet along with the grape tomatoes, spinach and pasta. Toss, taste, adjust the seasoning, top with minced parsley and serve immediately in the skillet!
CREAMY FARFALLE WITH PEAS AND BACON
Steps:
- Bring a medium pot of salted water to a boil. Add farfalle and cook according to package instructions until done then drain and set aside.
- Meanwhile, in a large skillet, over high heat, saute bacon until browned (3-4 minutes). Remove from heat and use a paper towel to soak up most of the fat.
- Place skillet with bacon back over high heat. Add garlic and saute about 1 minute.
- Add heavy cream to skillet and simmer for about 5 minutes. Add the peas to the skillet and return to a simmer. Cook about 3 more minutes.
- Add parmesan cheese into sauce.
- When pasta is ready, drain it and put it back into the pot. Pour sauce over pasta and stir in the chopped parsley. Enjoy!
FARFALLE (BOW-TIE PASTA) WITH CREAMY BACON & LEEK SAUCE
I came up with this as a way to use up leftover leeks after I made a stew. I also substitute ham when I have leftovers after a holiday meal.

Steps:
- Cook bacon in frying pan until crisp. Drain on paper towels. (If using ham, skip this step.).
- Heat 3 tbsp of butter in a large frying pan and add the leeks & garlic. Add ham after a few minutes and cook until brown and the leeks are soft.
- Add in cream, wine, sour cream, and cheese. Stir until the mixture is hot and slightly thickened. Stir in the bacon/ham & pepper to taste.
- Meanwhile cook farfalle (bow-tie) pasta in boiling, salted water. Cook until al dentè.
- Add sauce to drained pasta. Toss to combine and serve immediately. As with most pastas, this pairs well with salad & bread. Enjoy!

- Begin to boil water for pasta & add dash of olive oil & salt to water.

- Heat 1 tablespoon olive oil on medium-high heat in a large skillet. Add sliced onions and cook on high heat for about 10 minutes, constantly stirring with the spatula.
- The onions should start to brown, but without burning.
- Reduce heat to medium and continue cooking onions for 10 more minutes, continuing to stir, as onions brown even more without burning. At this point add a pinch of salt over onions.
- Continue cooking for 10 more minutes on medium or low heat, stirring occasionally to make sure onions don't stick to the bottom of the pan or burn.
- In total, you should have cooked onions for 30 minutes.
- Remove the skillet from heat and sprinkle the onions with a small amount of balsamic vinegar to deglaze the pan.
- Using a spatula, stir the onions, scraping the bottom of the pan and coating onions with a pinch of balsamic vinegar you just added. Remove caramelized onions to a plate.
- Heat 1 tablespoon olive oil in the same skillet on medium heat. Add sliced mushrooms. Sprinkle with a pinch of salt.
- Cook mushrooms for about 5 minutes, occasionally stirring, until mushrooms are soft.
- Add fresh spinach to the skillet and stir on low heat just until spinach starts to wilt.
- Add half-and-half to the mushroom and spinach mixture and bring to a quick boil. Immediately reduce to simmer.
- Add 2/3 cup of shredded Parmesan cheese and 1/4 teaspoon salt. Keep stirring while the sauce simmers until the cheese melts.
- Add caramelized onions back to the skillet with the pasta sauce.
- Cook pasta according to package instructions. Drain.
- Add cooked and drained farfalle pasta to the creamy sauce. Stir on low heat for a couple of minutes to reheat.
- If the sauce is too thick, add a small amount of half-and-half to thin it out. If it is too thin, add a small amount of shredded Parmesan cheese, and stir it in, while the sauce simmers.
- Serve with more shredded parmesan cheese sprinkled on top.
