CROCK POT HAM AND BEANS



Crock Pot Ham and Beans image

This is cheap eating at it's best. Really good for scraping by at the end of the month if your cash gets low. Goes best with freshly baked corn muffins drizzled with honey.

1 lb dried great northern beans (mixed if desired) or 1 lb other dried beans (mixed if desired)
3 garlic cloves, peeled and sliced
1 large sweet onion, chopped coarsely
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon chopped parsley
1/4 teaspoon ground cloves
1 lb smoked ham or 1 lb ham hock
6 cups water or 6 cups broth

Steps:

  • Sort beans and soak in enough water to cover overnight.
  • Or you may sort them and place in a saucepan with 2-inches of water to cover.
  • Bring them to a boil, boil for 3 minutes, then cover and remove from heat.
  • Allow to sit for one hour after boiling (don't lift the lid).
  • Whichever method you use, rinse and drain the beans before placing them in the crock pot.
  • Put the rinsed beans, garlic, onion, salt, pepper, parsley, cloves, ham (chopped into large chunks) or ham hocks into the crock pot along with 6 cups water or broth.
  • Cover crock, and cook on low for about 8 hours, or until beans are tender and creamy.
  • Skim any excess fat, if necessary, before serving.

4 tablespoons butter
1 small onion, finely chopped (1/4 cup)
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
6 medium peeled or unpeeled potatoes, thinly sliced (6 cups)
1 1/2 cups cubed fully cooked ham

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
  • In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
  • Mix potatoes and ham in casserole; gently press down so surface is even. Pour sauce over potato mixture. Cut remaining 1 tablespoon butter into small pieces; sprinkle over potatoes.
  • Cover and bake 30 minutes. Uncover and bake 1 hour to 1 hour 10 minutes longer or until potatoes are tender. Let stand 5 to 10 minutes before serving (sauce thickens as it stands).

2 lbs dry navy beans (pea)
2 quarts boiling water
1 tablespoon salt
1/4 cup instant minced onion
1 cup green pepper, cut in thin strips
3/4 cup butter or 3/4 cup margarine
3/4 cup unsifted flour
4 teaspoons dry mustard
1 1/2 quarts bean cooking liquid and milk
8 ounces processed cheddar cheese, shredded (2 cups)
2 1/2 lbs cooked ham, diced (8 cups)
1 cup fine dry breadcrumb
4 tablespoons melted butter

Steps:

  • Line four 8x8x2-inch baking pans with heat-resistant freezer wrap.
  • Allow enough extra wrap to fold over top.
  • Use one pan for each six servings or one-fourth of the recipe.
  • Do not line pans for food to be served without freezing.
  • Add beans to boiling water; return to boiling.
  • Boil beans 2 minutes;then soak beans 1 hour (or overnight, if preferred).
  • Add salt to beans.
  • Cook beans slowly until tender, about 1 1/2 hours.
  • Drain; save cooking liquid.
  • Cook onion and green pepper in fat about 5 minutes, stirring occasionally.
  • Stir in flour and mustard.
  • Add enough milk to the reserved bean liquid to make 1 1/2 quarts.
  • Add the bean liquid and milk slowly to the vegetable mixture.
  • Cook until thickened, stirring constantly.
  • Stir in beans, cheese, and ham.
  • Pour one-fourth of mixture into each baking pan.
  • Pack food tightly to avoid air pockets.
  • TO SERVE WITHOUT FREEZING: Preheat oven to 375F.
  • (moderate).
  • Mix 1/4 cup fine breadcrumbs with 1 Tbs melted butter or margarine for each pan which will not be frozen.
  • Sprinkle topping over bean mixture in baking pan.
  • Bake 30 minutes or until crumbs are lightly browned.
  • TO FREEZE: Cool for 30 minutes at room temperature.
  • Complete wrapping by pulling paper up over top of food.
  • Put edges of wrap together and fold several times so paper lies directly on top of food.
  • Fold ends of freezer wrap over the top and seal with freezer tape.
  • Label with name of food, date of freezing, and last date the food should be used for best eating quality (about 6 months).
  • Freeze immediately for 10 to 12 hours before removing packages from the pans.
  • TO HEAT FROZEN FOOD: Preheat oven to 375F.
  • Remove freezer wrap.
  • Place food in baking pan.
  • Mix 1/4 cup fine breadcrumbs with 1 Tbs melted butter or margarine for each pan.
  • Sprinkle topping over bean mixture in baking pan.
  • Bake 1 1/2 hours or until edges are bubbly, crumbs are lightly browned, and center is hot.

8 potatoes, peeled and thinly sliced
½ cup butter
1 onion, finely chopped
½ cup all-purpose flour
2 teaspoons Dijon mustard
1 teaspoon salt

2 cups shredded Cheddar cheese
3 cups diced ham

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Bring a large pot of water to a boil. Add sliced potatoes and cook until almost tender, 5 to 10 minutes. Transfer to a colander and rinse with cold water until cool enough to handle. Drain well.
  • Melt butter in a large skillet over medium heat. Add onion; cook and stir until tender, about 5 minutes. Stir in flour, Dijon mustard, salt, and pepper; cook for 1 minute. Gradually pour in milk, stirring constantly until sauce is thickened, about 5 minutes. Stir in Cheddar cheese until melted.
  • Layer half of the potatoes in the bottom of the prepared baking dish. Top with 1 1/2 cup diced ham and half of the Cheddar cheese sauce. Repeat layering potatoes, ham, and sauce.
  • Bake in the preheated oven until the top is lightly browned, about 1 hour.

1 large cooking onion, diced
2 tablespoons minced garlic
2 cups diced cooked ham
3 cups cooked white pea beans
2 cups canned Italian tomatoes or 2 cups Mexican-style stewed tomatoes with jalapeno peppers, diced
1 cup grated cheddar cheese
1 1/2 cups fresh breadcrumbs
1/4 cup parmesan cheese or 1/4 cup romano cheese
1/4 cup finely chopped fresh parsley
1 tablespoon olive oil
1 cup grated provolone cheese (optional)
1/2 teaspoon basil (optional)
1/4 teaspoon pepper (optional)

Steps:

  • In a nonstick skillet, heat the olive oil over medium/high heat. Sauté the onions and garlic until soft. Remove from heat.
  • (Note: If you are using Italian stewed tomatoes, change the cheese to the Provolone and add the basil & pepper. If you are using the Mexican stew tomatoes stay with the cheddar cheese.).
  • In a large bowl, combine the garlic/onion mixture with the ham, beans, tomatoes, cheese, basil & pepper. Spoon into a lightly greased 3 quart casserole dish.

1 can (14-1/2 ounces) chicken broth

1 pound dry navy beans, soaked overnight
4 quarts water
1 pound leftover ham bone with meat attached
1 onion, finely diced
2 carrots, sliced
2 stalks celery, diced
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
½ teaspoon paprika

Steps:

  • In a large stock pot, add water, ham bone and pre-soaked beans. Bring to a boil, reduce heat and simmer until beans are close to soft.
  • Remove bone and cut off remaining meat. Remove 1/3 of beans and mash with potato masher or food processor.
  • Return ham and beans back to stock pot and add onion, carrots, celery, garlic powder, pepper and paprika. If you are using dripping from a previously cooked ham add those now. Simmer until vegetables are tender and serve.
