WILD RICE AND HAM CASSEROLE

My grandmother gave me this recipe. The blend of flavors is fantastic. It's so simple to make and can easily be doubled for a large gathering.

1 package (6-1/4 ounces) quick-cooking long grain and wild rice mix
1 package (10 ounces) frozen cut broccoli, thawed and drained
2 cups cubed fully cooked ham
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup mayonnaise
2 teaspoons prepared mustard
1 cup shredded cheddar cheese

Steps:

  • Prepare the rice according to package directions. Spoon into an ungreased 2-1/2-qt. baking dish. Top with broccoli and ham. Combine the soup, mayonnaise and mustard. Spread over rice mixture and mix gently. , Cover and bake at 350° for 45 minutes or until bubbly. Sprinkle with cheese. Let stand for 5 minutes before serving.

1 (20 ounce) package frozen chopped broccoli, thawed and drained
2 cups cooked ham, cubed
1 cup shredded cheddar cheese
1 (10 3/4 ounce) can condensed cream of celery soup, undiluted
1 cup mayonnaise
2 teaspoons prepared mustard
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook rice according to directions on package, spread over bottom of greased 13 x 9 2 inch baking dish.
  • Layer broccoli over rice. Sprinkle ham over broccoli, then cover with cheddar cheese.
  • Combine soup, mayonnaise and mustard, spread over casserole.
  • Sprinkle with Parmesan cheese.
  • Bake 45 minutes.

Steps:

  • 1. Ingredients 1 (6 ounce) package quick-cooking long grain and wild rice mix 1 (10 ounce) package frozen cut broccoli, thawed and drained 2 cups cubed fully cooked ham 1 (10.75 ounce) can condensed cream of mushroom soup, undiluted 1 cup mayonnaise 2 teaspoons prepared mustard 1 cup shredded Cheddar cheese Directions Prepare the rice according to package directions. Spoon into an ungreased 2-1/2-qt. baking dish. Top with broccoli and ham. Combine the soup, mayonnaise and mustard. Spread over rice mixture and mix gently. 1/2 cup sour cream
1/2 cup milk
1 1/2 cups cubed ham
1 (14 1/2 ounce) can green beans
1 cup shredded cheese
3/4 cup breadcrumbs
1 tablespoon butter

Steps:

  • Preheat oven to 375 degrees.
  • Mix the cream soup, sour cream and milk together.
  • Add mixture, cheese and ham to rice.
  • Put in a 9 by 13 inch pain and place in oven.
  • In a skillet melt butter and add bread crumbs.
  • Cook until toasted and add to rice dish.
  • Bake until heated through.

2 cups cooked ham
1/2 cup grated cheddar cheese
1/2 cup evaporated milk
1 can cream of chicken soup
2 -4 tablespoons chopped onions
1 (10 ounce) package frozen chopped broccoli, thawed
3 tablespoons butter, melted
3/4 cup crushed corn flakes

Steps:

  • Combine all ingredients except butter and corn flakes.
  • Spoon into a greased casserole dish (8x8 or 10x7).
  • Combine butter and corn flakes and put over top of dish.
  • Bake uncovered at 375 for 40 minutes.

1/2 cup chopped onion
1/4 cup butter, cubed
2 garlic cloves, minced
6 tablespoons all-purpose flour

4 cups chicken broth
1-1/2 cups cubed peeled potatoes
1/2 cup chopped carrot
1 bay leaf
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
3 cups cooked wild rice
2-1/2 cups cubed fully cooked ham
2 cups half-and-half cream
1 can (15-1/4 ounces) whole kernel corn, drained
Minced fresh parsley

Steps:

  • In a Dutch oven, over medium heat, saute onion in butter until tender. Add garlic; cook 1 minute longer. Stir in the flour, salt and pepper until blended. Gradually add broth. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. , Add the potatoes, carrot, bay leaf, thyme and nutmeg; return to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. Stir in the rice, ham, cream and corn; heat through (do not boil). Discard bay leaf. Garnish with parsley.

4 to 5 cups diced cooked chicken
1 cup chopped celery
2 tablespoons butter

1 jar (4-1/2 ounces) sliced mushrooms, drained
1 small onion, chopped
1 cup uncooked wild rice, rinsed and drained
1/4 teaspoon poultry seasoning
3/4 cup cashew pieces
Chopped fresh parsley

Steps:

  • In a skillet, brown chicken and celery in butter. In a large bowl, combine soup and broth until smooth. Add the mushrooms, onion, rice, poultry seasoning and chicken mixture.
