What to do with that leftover Easter ham bone? Try this tasty soup that is created from a ham stock, to use now, or later. Use your favorite dried white beans. My choice is Great Northern.

1 ham bone with meat
4 quarts water
1 pound dry great Northern beans
2 cups diced fully cooked ham
1 cup diced celery
1 cup diced carrots
1 cup diced onion
2 cloves garlic, minced
4 tablespoons dry sherry
salt and pepper to taste
¼ cup minced fresh parsley

Steps:

  • Combine ham bone and 4 quarts of water in a large stock pot of Dutch oven at least the night before. Bring to a boil, cover, reduce heat and simmer for 10 to 12 hours.
  • In the meantime, place beans in a large pot with water to cover; soak overnight. Drain beans the next day and return to the pot.
  • Remove ham bone from the pot and pick off any edible meat. Strain the stock and measure out 3 quarts for the soup. Remaining stock can be frozen.
  • Pour 3 quarts of stock over the soaked beans. Add ham, celery, carrots, onion, and garlic. Season with salt and pepper. Bring soup to a boil, then reduce heat to a simmer. Cover, tilting the lid to allow steam to escape, and simmer until beans are tender, 1 1/2 to 2 hours. Add sherry in the last 30 minutes of cooking and season with salt and pepper.
  • Ladle soup into bowls and sprinkle with fresh parsley.

Steps:

  • Place beans in a Dutch oven or soup kettle.
  • Add water to cover by 2 inches.
  • Bring to a boil; boil for 2 minutes.
  • Remove from heat; cover and let stand for 1 hour.
  • Drain beans and discard liquid.
  • In same kettle, saute onion, celery, and garlic in butter until tender.
  • Add beans, ham bone, water, broth, tomatoes, bay leaves, cloves, and pepper; bring to a boil.
  • Reduce heat; cover and simmer for 2 hours.
  • Remove ham bone; bay leaves, and cloves.
  • When cool enough to handle, remove ham from bone; cut into small pieces and return to soup.
  • Chill for 8 hours, or overnight.
  • Skim fat from soup.
  • Stir in milk; cook on low until heated through.
  • Just before serving, stir in cheese.

This soup is creamy as well as hearty and filling; easy to prepare and budget-friendly. The corn adds a tiny bit of sweetness to the taste. For variety, you could probably add some peas and/or carrots; shredded cheddar for topping upon serving. Add some nice warm bread to accompany the meal. 2 celery ribs, diced
1/4 cup onion, diced
2 tablespoons margarine or 2 tablespoons butter

  • Boil water; meanwhile peel and dice potatoes.

  • Bring to a boil while stirring until thickened, about 2 minutes.

6 slices bacon

Steps:

  • Place beans in a large bowl with the water, cover, and soak overnight.

This bean chowder is similar to chili. It's one of the most popular dishes at Tulsa Public Schools. Those of us growing up in the 60's and 70's remember it fondly as a favorite treat. A real stick-to-your-ribs comfort food. Tradition dictates that it is served with cinnamon rolls. This was given to me by my grandmother who was a dietician/cook for over 40 years.

2 teaspoons vegetable oil
1 cup onion, chopped
2 garlic cloves, minced
2 (15 ounce) cans great northern beans, drained and rinsed
1 (4 ounce) can green chilies, diced
1 cup corn kernel
1/2 cup carrot, grated
1/4 cup celery, diced
1 cup chicken or 1 cup vegetable broth
2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
2 cups milk
1 tablespoon cornstarch
1 cup cheddar cheese, shredded and divided
4 tablespoons cilantro, chopped

Steps:

  • Heat oil in a large pan over medium heat and saute the onion and garlic until onion is softened.
  • Add one can of beans and mash roughly.
  • Stir in remaining can of beans, green chilies, corn, carrots, celery, and broth.
  • Bring soup to a simmer and stir in the cumin, chili powder, and cayenne pepper.
  • Combine milk and cornstarch, stirring well.
  • Stir the milk mixture into the soup, bringing it gradually to a boil.
  • Reduce heat and allow soup to simmer until veggies are tender, about 5 minutes. Stir frequently.
  • Stir in 3/4 c of the cheese, reserving the remainder for use as garnish, and remove from heat.
  • Serve garnished with cheese and cilantro.
  • Note: I usually serve with some hot sauce on the table for those who like to add some heat.

1 pound package of dried white Northern beans (soaked and sorted)
6-8 cups vegetable stock or chicken stock (for cooking the beans)
1-1 pound Ham steak chopped into bite-sized pieces
1 medium yellow onion diced
3 jalapeño peppers diced
½ cup diced celery
4 cloves garlic (minced)
2 teaspoons Cajun seasoning (+ more)
Kosher salt (to own taste)
freshly ground black pepper (to taste)
white rice (for serving *optional^)
½ cup sliced green onions (for serving)
sliced Jalapeno peppers ( for serving *optional*)
Tabasco sauce ( for serving)

Steps:

  • Place the dried Northern beans in a colander, rinse the beans off thoroughly sorting through to remove any debris or broken beans at this time.
  • Place the Northern beans in a large pot and add enough water to cover as well as come about 2-3 inches above the beans. Place a tight-fitting lid over the pot and let sit overnight or for at least 8 hours before you begin cooking them.
  • Drain off the water that the Northern beans have soaked in and placed them back in the pot they have soaked in. Add 6-8 cups of vegetable stock to the Northern beans to cover the beans and come about 2-3 inches above them. If the beans become too thick during the process, add more stock to the pot
  • Next, add the chopped Ham steak, diced yellow onions, diced jalapeño peppers, diced celery, and minced garlic to the pot of Northern beans. Place on medium heat and let pot come to a simmer, reduce heat if need be and cook on a low simmer for about 2 hours or 2.5 hours if you prefer a softer bean.
  • The last half of an hour is when you will add your seasoning to the pot, at this time add 2 teaspoons of low-sodium Cajun seasoning or regular, kosher salt, and freshly ground pepper. Cook on low for the last 30 minutes.
  • Serve over white rice with sliced green onions, sliced jalapeño, and Tabasco sauce if desired.

1 meaty ham bone, fat trimmed
1 (32 fluid ounce) container chicken stock
1 onion, chopped
2 tablespoons chopped garlic
6 red potatoes, cubed
4 large carrots, chopped
1 tablespoon chopped fresh parsley
2 teaspoons ground cumin
1 cup frozen corn
1 cup milk
salt and ground black pepper to taste

Steps:

  • Place ham bone in a slow cooker; top with chicken stock, onion, and garlic.
  • Cook on Low for 6 to 8 hours.
  • Remove ham bone from slow cooker; pull meat of bone and shred. Return meat to slow cooker and discard ham bone. Add potatoes, carrots, parsley, and cumin to soup.
  • Cook on High until potatoes are tender, about 45 minutes. Add frozen corn and stir.
  • Remove 1 cup soup and pour into a blender. Add milk to blender. Cover and hold lid down; pulse a few times before leaving on to blend. Return blended soup to slow cooker and stir. Season with salt and pepper.

  • Cook beans with ham hocks (I use a ham bone with some meat) for at least 2 hours on low heat. Remove ham bone from beans and let cool.
  • Add all other ingredients.
  • Remove ham from the bone and return ham to the bean mixture. Cook until vegetables are tender, about 30 minutes to 1 hour.
  • Freezes well.
  • Note: I submitted this to a family cookbook and it is the recipe that "everyone" loves.

1 large smoked ham bone, ham hock, OR ham shank
2 cups (approximately 6 ounces) shredded, julienned, or diced carrots
1 medium stalk celery (sliced)
4 cloves garlic (minced)
7 cups low-sodium chicken broth OR stock
2 bay leaves
1 tablespoon dried parsley
1/2 teaspoon celery salt
1/2 teaspoon dry mustard powder
Freshly ground black pepper
Several dashes of hot pepper sauce (such as Tabasco)
1 to 2 cups additional diced ham (optional)

Steps:

  • Rinse and drain the beans and place them in the bottom of a large (7- to 8-quart) slow cooker. Nestle the ham bone/hock/shank in the center, and add the carrots, celery, and garlic on top. Carefully pour the chicken broth over the ingredients in the slow cooker, and then sprinkle with the bay leaves, parsley, celery salt, mustard powder, black pepper, and hot pepper sauce. Cover and cook on low for 7 to 9 hours or until the beans are tender.
  • Remove the ham bone/hock/shank. Pull any ham meat from the bone, shred, and set aside; discard the bone and any fat or cartilage. Use an immersion blender to puree just enough of the soup to give it a creamy consistency, leaving most of the beans whole. Stir the shredded ham (from the bone) into the soup, along with any additional diced ham you'd like to add. Allow to cook for a few more minutes until just heated through.

  • Place chicken, turkey stock or vegetable stock into a large stock pot with the ham bone and bring to a boil. Your ham bone will probably not be covered by the broth which, is o.k. Cook on medium heat for one hour, covered. Meanwhile, about 20 minutes prior to taking out the ham bone, prepare vegetables. Prep potatoes last because they will brown if they sit out too long.
