Easy Ham and Noodles image

Great for leftover ham. This is easy to make with ingredients you probably already have in the kitchen. Try adding peas or other vegetables, if desired.

2 cups cooked egg noodles
1 cup cubed, cooked ham
½ cup cubed Cheddar cheese
1 (10.75 ounce) can condensed cream of mushroom soup
½ (10.75 ounce) can milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the noodles, ham, cheese, soup and milk in a 9x9 inch casserole dish and mix well.
  • Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes.

Ham and Turkey Noodle Soup image

I came up with this recipe while staying at my Aunt and Uncle's house in Dublin, Ireland over the Holidays. This is great, warming, flavorful usage for all those Christmas leftovers. You just take whatever Christmas meats you have left over and warm them up in some broth with noodles. In this recipe, I am using ham and turkey, but you could easily substitute with sirloin, duck, goose, whatever. The measurements for this are just a guess, so bung in whatever amounts you feel are reasonable.

1 1/2 cups water, boiling
1/2 cup ham, cooked (cooled and diced)
1/2 cup turkey, cooked (cooled and diced or shredded)
1/2 teaspoon fine sea salt (optional)
3/4 teaspoon soy sauce (to taste)
1 teaspoon herbes de provence (either store bought or home-made)
1/2 teaspoon fresh ground black pepper
1 teaspoon olive oil
3/4 cup penne pasta
1 teaspoon parmesan cheese (optional)

Steps:

  • In a large saucepan, bring the water to a boil. Once at a boil, add the salt, soy sauce, herbes de Provence, pepper and olive oil. Add the soy first, take a taste and put in the salt if you think it needs it.
  • After 30 seconds or so, add the penne. Give it a stir and let the pasta cook for 5-8 minutes or whatever it says on the packet.
  • After about 5 minutes, put the meat into the pot and stir. Continue cooking until the pasta is aldente, another 3-4 minutes.
  • Serve in a bowl with a sprinkle of Parmesan cheese.

2 cups (500 ml) Quebec turkey cooked and roughly chopped
2 tablespoons (30 ml) butter
1 large onion diced
1 lb (454 g) carrots sliced
1/2 lb (227 g) celery sliced
2 garlic clove minced
To taste salt and pepper
10 cups (2,5 L) homemade turkey broth
2 cups (500 ml) water
1 tablespoon (15 ml) fresh squeezed lemon juice
2 cups (500 ml) egg noodles uncooked

Steps:

  • Melt the butter in a large pot on medium and add the onions. Sauté for a few minutes. Add the carrots and celery. Cook until the onions become translucent and the other vegetables soften.Add the garlic, salt, and pepper. Cook for 1 minute.Cover in the broth and water. Bring to a boil then lower the heat and simmer for 20 minutes.Add the turkey, lemon juice, and noodles. Simmer for 6 to 10 minutes or until the noodles are cooked.Serve immediately (or the noodles will absorb all the liquid!)Note: The egg noodles can absorb all the liquid so it's best not to store this soup in the fridge.
