Ham and Broccoli Bake image

This quick, week-night dinner is a nice alternative to mac and cheese with ham. It comes together easily and is comforting and filling.

Provided by mrs.embee

Categories     Main Dish Recipes     Pork     Ham

Time 1h

Yield 6

Number Of Ingredients 8

14 ounces whole wheat rotini pasta
1 (10 ounce) package frozen broccoli
1 tablespoon olive oil
2 cups diced fully cooked ham
1 (15 ounce) jar Alfredo sauce
½ cup 2% milk
ground black pepper to taste
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
  • Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
  • Heat the olive oil in a large skillet over medium heat; cook and stir the diced ham in the hot oil until the edges start to brown, about 10 minutes. Stir in the broccoli and cook and stir until any excess water has cooked away and the ham and broccoli are hot. Pour in the jar of Alfredo sauce and the milk; stir to blend, sprinkle with pepper, and add the cooked pasta. Stir everything together to coat the pasta with sauce and bring to a simmer.
  • Spread the bubbling pasta mixture into the prepared baking dish, top with shredded Colby-Monterey jack cheese, and bake in the preheated oven until the casserole is hot and the cheese is melted and starting to brown, about 30 minutes.

Garlicky Ham and Swiss image

All of the elements of a great French country picnic rolled into one grilled cheese sandwich.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 6

4 tablespoons unsalted butter
2 cloves garlic, 1 minced or grated, 1 cut in half for rubbing bread, optional
Eight 1/3- to 1/2-inch-thick slices Pullman or white sandwich bread
8 slices emmentaler or Swiss cheese (about 4 ounces)
4 ounces thinly sliced leftover or deli ham
1/2 cup cornichons, sliced lengthwise

Steps:

  • Melt the butter in a medium saucepan over medium-low heat and add the minced garlic. Cook to infuse the garlic flavor into the butter and until the butter turns brown, about 15 minutes. Remove from the heat and strain.
  • Lay out 4 slices of the bread on a work surface. Layer each with 1 slice of the cheese, some ham and then some of the cornichons. Top with 1 more slice of cheese. Close the sandwiches with the remaining bread and brush with butter until fully coated on both sides.
  • Place 2 sandwiches into a medium skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches. If desired, rub the outside of the toasted bread with the garlic halves to add a little more garlic flavor.

  • Preheat oven to 375*F. Spray a baking sheet & lay crescent rolls with fat end of the triangle in the center, four on the right, four on the left, each crescent slightly overlapping, & press together. (See picture if it's confusing.)
  • In a stand mixer with the paddle attachment, break up broccoli (you can chop it up smaller on a cutting board, but the mixer is capable of doing this if your broccoli is thawed-NOT FROZEN.) Add ham, cream cheese, shredded cheese, dehydrated onion, & salt & pepper to taste.
  • Place filling in center of dough & pull ends of crescents up & over the filling, tucking underneath the braid so it is sealed shut.
  • Sprinkle top of braid with parmesan cheese & bread crumbs. Bake for 20 minutes or until GOLDEN brown. You want to make sure that the dough that is overlapped is still baked completely (not doughy) & that your filling is hot. Remove from oven, let cool 5 minutes, cut & serve.

Pinch together perforations to form a single sheet of dough (adapt or eliminate this step if using the Recipe Creations or using homemade bread/crescent dough). There should be a solid strip about 3 inches wide down the center, with the cut strips forming a fringe down each side. Fold the side strips over filling, alternating strips from each side and pressing them into the dough on the opposite side, forming a braid. Pinch or twist to seal.
