HAM AND CHEESE SPINACH PUFFS
Perfectly flaky puff pastry cradles a creamy mixture of ham, cheese and spinach. These spinach puffs are a great use for leftover ham!

Steps:
- Preheat oven to 400 degrees F. Cut each puff pastry sheet into 4 equal squares (about 5" wide), then cover and place in refrigerator until later.
- Add butter to a medium saucepan and heat over MED heat. Add onion and cook 3 minutes, until softened. Add flour and whisk to combine until mixture looks like wet lumpy sand. Cook about 1 minute, whisking often.
- Pour in milk, in thirds, whisking well to combine after each addition to ensure no lumps remain. Continue whisking often as mixture cooks, about 5-7 minutes. Mixture will thicken considerably and should coat the back of a spoon.
- Turn off heat and add ham and spinach. Add in 1 cup of the gruyere cheese and stir to melt the cheese into the sauce. Season with salt and pepper, to taste, and ground nutmeg.
- Line baking sheet with parchment paper and place puff pastry squares on the sheet (if your baking sheet isn't large enough, 2 baking sheets may be needed).
- Spoon 1 1/2 Tbsp of the cream sauce mixture into the center of a puff pastry square. Sprinkle with a bit of the remaining gruyere cheese, then fold all four corners of the puff pastry in towards the center, but not touching. Repeat with remaining puff pastry squares.
- Whisk egg with the 1 Tbsp water to make an egg wash. Brush over the puff pastry and bake for 20 minutes, until golden brown.
- Serve garnished with fresh parley if desired.

HAM AND CHEESE IN PUFF PASTRY
Steps:
- Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan.
- Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.
- Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.
- Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.

Friends and family request that I make these golden brown puffs every year on Christmas Eve. The tasty little treats are so good, you can't help but pop them in your mouth.

- In a saucepan, bring the milk, butter and salt to a boil over medium heat. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. , Add eggs, one at a time, beating well after each addition. Continue beating until the mixture is smooth and shiny. Stir in spinach and cheese. Line baking sheets with foil and grease the foil. Drop batter by tablespoonfuls 1-1/2 in. apart onto prepared baking sheets. , Bake at 375° for 23-28 minutes or until puffed and golden brown. Remove to wire racks. Serve warm. Refrigerate any leftovers.

Steps:
- Drain spinach; squeeze dry with paper towels.
- In 3-quart saucepan over medium heat, heat milk, margarine or butter, and salt until margarine melts and mizture boils.
- Remove saucepan from heat.
- With wodden spoon, vigorously stir in flour all at once until mixture forms a ball and leaves side of saucepan.
- Add eggs to flour mixture, 1 at a time, beating well after each addition, until mixture is smooth and satiny.
- Stir in Gruyere and parmesan cheeses and spinach.
- If not baking right away, cover surface of mixture with plastic wrap and refrigerate.
- Preheat oven to 375 degrees.
- Lightly grease 2 large cookie sheets.
- Drop batter by level tablespoons onto cookie sheets, about 1 1/2 inches apart.
- Bake 15 to 20 minutes until cheese puffs are golden brown.
- Arrange appetizer and garnish on platter; serve immediately.
HAM AND CHEESE PUFFS
My family used to make these for special occasions, or random visitors! Basically a gougere! They can be baked and frozen then just brought out and thrown in a toaster oven when needed! Sometimes I like a stronger mustard taste so I double the dry mustard. I'm guessing at the amount of servings as I don't think I've ever made a single batch of this recipe - haha.

- Preheat oven to 400 degrees Fahrenheit.
- Combine water, butter, and salt in a saucepan and bring to a boil.
- Add the flour all at once, stirring vigorously, until the batter leaves the sides of the pan and a ball of paste forms.
- Remove from heat and allow to cool for about a minute.
- Add eggs, one at a time, beating vigorously after each one until the dough is smooth.

- Coat twenty-four 1 3/4-inch muffin cups with cooking spray.
- In a medium bowl, whisk together 3 eggs, the ham, 1/3 cup of the cheese, cream, spinach, salt, and black pepper until well combined.
- On a lightly floured surface, roll pastry to a 15x10-inch rectangle. Cut pastry into twenty-four 2 1/2-inch squares. Press squares into greased muffin cups. Into each of the cups, spoon about 1 tablespoon of the egg mixture.

- Preheat oven to 400°. Unfold puff pastry; cut each sheet into 12 sections. Place in greased mini muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up., In a large bowl, stir together spinach, cream cheese, mozzarella, feta, 1 egg, garlic, pepper and salt.
