Hash Brown Crusted Veggie and Ham Quiche image

Provided by Trisha Yearwood

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 11

3 cups (about 10 ounces) frozen hash browns, thawed
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/2 small zucchini, diced (about 1/2 cup)
1/2 small red bell pepper, diced (about 1/2 cup)
1 ounce (about 1 slice) ham, chopped
1/3 cup shredded sharp Cheddar
1/2 cup heavy cream
1 tablespoon finely chopped fresh chives
Large pinch cayenne
3 large eggs

Steps:

  • Preheat the oven to 450 degrees F.
  • Pat the hash browns dry and add to a large bowl. Melt 3 tablespoons of the butter in a medium skillet and add to the hash browns with salt and pepper and mix well. Press the hash browns on the bottom and up the sides of a 9-inch pie pan, pushing them gently into the corners. Bake until golden brown, 20 to 25 minutes. Remove the crust from the oven and reduce the oven temperature to 375 degrees F.
  • Meanwhile, melt the remaining tablespoon butter in the same skillet over medium-high heat. Add the zucchini and bell pepper and cook, stirring, occasionally, until slightly softened, about 3 minutes.
  • Spoon the vegetables into the crust and sprinkle with the ham and Cheddar.
  • Whisk the cream, chives, cayenne and eggs together in a bowl with 1/4 teaspoon salt. Pour the mixture into the crust. Bake the quiche until golden brown and just set in the center, 20 to 25 minutes.
  • Cool at least 10 minutes before serving. Serve warm or at room temperature.

HAM AND CHEESE HASH BROWN QUICHE -WEIGHT RECIPE - (4.1/5)

Ham and Cheese Hash Brown Quiche -Weight Recipe - (4.1/5) image

Provided by Pattywak

Number Of Ingredients 10

INGREDIENTS:
20 oz bag of refrigerated shredded hash brown potatoes (such as Simply Potatoes or Reser's)
4 tablespoons light butter, melted (I use Land O'Lakes)
1 teaspoon salt, divided
1/4 teaspoon ground black pepper, divided
4 large eggs
1/2 cup fat free milk
4 oz (about 1 cup shredded) 50% reduced fat sharp Cheddar cheese, shredded (I used Cabot)
5 oz diced deli ham (I used Hillshire Farm Deli Select Ultra Thin Brown Sugar Ham)
1 scallion diced

Steps:

  • DIRECTIONS: Pre-heat the oven to 400. Lightly mist a 9" pie plate with cooking spray and set aside. Place the shredded potatoes in a large mixing bowl and drizzle with the melted butter. Add ½ teaspoon of the salt and 1/8 teaspoon of the pepper and stir together until ingredients are well mixed. Transfer the potatoes to the pie plate and press them down across the surface of the dish and up the sides to form a "crust." Place the dish in the oven and bake for 30 minutes. While the potatoes are baking, combine the eggs and milk in a mixing bowl and whisk together until well combined. Add the shredded cheese, ham, scallions and the remaining ½ teaspoon of salt and 1/8 teaspoon of pepper and stir together until thoroughly mixed. When the crust is done, remove from the oven and pour the egg mixture into the crust, spreading the ingredients across but leaving a raised edge of crust all around the outside. Reduce the oven heat to 350 and return the pie plate to the oven for an additional 30 minutes until eggs are set and the hash brown edges are browned. LOWER FAT AND CALORIE HAM AND CHEESE QUICHE

Lower Fat and Calorie Ham and Cheese Quiche image

Surprisingly delicious recipe adapted from a Weight Watchers recipe. I bake a ham now and then and this is a great way to use some leftovers. Very creamy and sinful tasting. The cottage cheese sounded weird to me, but honestly my whole family loves this. My husband even takes a slice cold for breakfast. You can also make it with a bag of spinach instead of the ham.
