HALLOWEEN "SCREAM!" CHEESE SWIRL BROWNIES

8 ounces cream cheese (softened)
5 tablespoons butter (softened)
1/2 cup sugar
2 eggs
1 teaspoon vanilla
2 tablespoons flour
orange food coloring
1 1/4 cups plain cake flour (5 ounces)
1/2 teaspoon table salt
3/4 teaspoon baking powder
6 ounces unsweetened chocolate (chopped fine)
12 tablespoons unsalted butter (1 1/2 sticks, cut into six 1-inch pieces)
2 1/4 cups sugar
4 large eggs
1 tablespoon vanilla extract

Steps:

  • Heat oven to 350 degrees F. Put a long piece of aluminum foil in the length of an 9X13 inch pan, letting the foil extend up two sides of the pan and overhang slightly on both ends. Fit another piece of foil into width of baking pan in same manner, perpendicular to first sheet. Spray foil-lined pan with nonstick cooking spray.
  • To make the cheesecake layer: In the bowl of a stand mixer, cream together cream cheese, butter and sugar until light and fluffy, about 3 minutes. Add eggs, vanilla, and flour and mix until combined, about 30 seconds. Add orange food coloring to desired color; set aside.
  • To make the brownie layer: In a medium bowl, whisk together flour, salt, and baking powder; set aside.
  • In large heatproof bowl set over saucepan of barely simmering water, melt chocolate and butter, stirring occasionally, until smooth. Remove bowl from saucepan and gradually whisk in sugar. Add eggs one at time, whisking after each addition until combined. Whisk in vanilla. Add flour mixture in three additions, folding with rubber spatula until batter is completely smooth and homogeneous.
  • Transfer 3/4 of the batter to prepared pan; using spatula, spread batter into corners of pan and smooth surface.
  • Spread cream cheese mixture on top. Distribute the remaining brownie mixture in 16 dollops over batter in the pan. Swirl in with a knife or spatula.
  • Bake until toothpick inserted into center of brownies comes out with few moist crumbs attached, 30 to 35 minutes. Cool on wire rack to room temperature, about 2 hours, then remove brownies from pan by lifting foil overhang.

1 (19.9 ounce) package dark chocolate brownie mix, prepared according to package directions
1 (8-ounce) package cream cheese, softened
1/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 teaspoon orange food color

Steps:

  • Preheat the oven to 350 degrees F. Coat a 9-inch square baking dish with cooking spray.
  • Reserve 1/4 cup brownie batter for later use; pour remaining batter into baking dish.
  • In a medium bowl, with an electric mixer, beat cream cheese and sugar until creamy. Add egg and vanilla; mix until smooth. Stir in orange food color. Slowly pour cream cheese mixture on top of batter. Drop spoonfuls of reserved brownie batter on top of cream cheese layer and swirl with a knife.
  • Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Let cool completely before cutting.

2 (3 ounce) packages cream cheese, softened
1 egg
1/4 cup sugar
4 drops red food coloring
4 drops yellow food coloring
1/2 teaspoon vanilla
21 1/4 ounces betty crocker supreme brownie mix (with chocolate syrup pouch)
1/3 cup vegetable oil
1/4 cup water
2 eggs

Steps:

  • Heat oven to 350°F
  • Grease bottom only of 13x9-inch pan with shortening or cooking spray.
  • In small bowl, beat filling ingredients with electric mixer on low speed until smooth; set aside.
  • In large bowl, stir brownie ingredients until well blended.
  • Spread 3/4 of brownie batter in pan.
  • Spoon filling by tablespoonfuls evenly onto brownie batter.
  • Spoon remaining brownie batter over filling.
  • For marbled design, pull knife through batter and filling in wide curves; turn pan and repeat.
  • Bake 26 to 30 minutes or until set.
  • Cool completely at room temperature, about 1 hour.
  • Refrigerate at least 1 hour until chilled.
  • For brownies, cut with plastic knife into 6 rows by 4 rows.
  • Store covered in refrigerator.
  • *High Altitude (3500-6500 ft): Follow High Altitude brownie mix directions--except add 1/4 cup flour to dry mix. Bake 32 to 36 minutes.
