HALLOWEEN PUMPKIN PATCH OREO PIE
I came across this recipe in an older magazine tonight and it looked so cute that I had to post it! Cooking time is actually freezing time.

Steps:
- Place sherbet in a bowl; stir until smooth.
- Stir in 1/2 of the whipped topping until well blended.
- Spoon into premade Oreo cookie crust. Sprinkle with chopped Oreos, pressing firmly into sherbet.
- Cover with remaining whipped topping. Freeze 4 hours or until firm.
- Let stand at room temperature 10 minutes before serving.
- Garnish with finely chopped Oreo cookies and candy pumpkins, if desired.
- NOTE: For a more intense orange color, stir in a few drops each of red and yellow food coloring to the sherbet mixture.

CREAMY OREO PIE

Just like the pie that my aunt makes for me all time time....Enjoy. remember to reduce the ingrediats if serving less than eight (the number of servings this recipie has) cooking time is actually chill time. and remember also that you can always substitute the butter for margarine.

Steps:
- Crush 26 of the cookies; mix with butter until well blended. Press firmly onto bottom and up side of 9-inch pie plate. Refrigerate while preparing filling.
- Chop 9 of the remaining cookies; set aside. Beat cream cheese and sugar in medium bowl with electric mixer on medium speed until light and fluffy. Add chopped cookies and whipped topping; stir gently until well blended. Spoon into prepared crust.
- Refrigerate at least 2 hours or until firm. Halve remaining 4 cookies; stand on cut edges around center of pie. Store leftover pie in refrigerator.

- Either purchase a prepared chocolate wafer pie crust, or make one: Crush one package chocolate wafer cookies into fine crumbs, mix with 1/3 cup melted margarine, and press all but three tablespoons of the crumb mixture into a ten-inch pie plate.
- To make the filling: Combine the orange jello, boiling water, sugar, orange juice and orange rind (freshly grated, not dried), stirring until the sugar crystals are dissolved.
- Chill in a bowl until this reaches a soft jelly-like consistency.
- Whip the chilled evaporated milk (a small tin, 160 mL in size, not the big one) until it becomes light and frothy.
- Fold this into the jello mixture along with the liqueur.
- Pour into the pie shell, and sprinkle with reserved crumbs, if available.
- Chill for one to two hours before serving.
- This lets the pie set and you'll be able to cut it into slices.

OREO PUMPKIN DELIGHT RECIPE
This Oreo Pumpkin Delight takes pumpkin desserts to a whole new level.

- Preheat oven to 350 degrees.
- In a food processor, finely crush the Oreos.
- Mix in the sweetened condensed milk until fully combined and it is sticky.
- Spray the bottom of a 9x13 pan and press the Oreo cookie crust into the bottom of the pan.
- Bake for 10 minutes or until it stiffens on the top.
- Set aside and let cool after baking.
- In a separate bowl, mix the cream cheese, powdered sugar. Lightly fold in 1 cup of the whipped cream, until fully combined.
- In a different bowl, mix the two small packages of vanilla pudding mix and milk, until the pudding is set up. Then add 1 cup of the whipped topping and the pumpkin puree, until well combined.
- Add the pumpkin spice, cinnamon, and nutmeg to the fluffy pumpkin mixture.
- Once the Oreo crust has cooled, spread the cream cheese layer on top first.
- Once the cream cheese layer has been spread, spread the pumpkin layer next.
- Top the layers with the last cup of whipped topping.
- Garnish with Oreo's, and story in fridge or freezer until ready to serve.

- Finely crush your cookies. I like to use a food processor for this step, but you can also place the cookies in a plastic bag and roll the sealed bag with a rolling pin. If you're using a rolling pin, seal the bag but leave about an inch open for air to escape. You'll have to put some muscle in it to get a fine crush. The crust sticks together best when the cookies are crushed finely.
- Preheat your oven to 375oF/190oC. Prepare your crust into your pie shell. In a mixing bowl, combine milk, puree, cornstarch, spice, and extract. Whisk to combine until smooth. Pour into the prepared pie shell. Bake for 50-60 minutes until pie appears firm. Chill for several hours or overnight (if you can last that long).
- In a small saucepan, combine the granulated sugar and water and bring to a boil. Cook over high heat without stirring until a candy thermometer inserted in the syrup registers 240°, about 5 minutes. Meanwhile, in the bowl of a standing mixer fitted with the whisk, beat the egg whites with the salt until soft peaks form. With the machine on, carefully drizzle in the hot syrup and beat at high speed until the whites are stiff, glossy and warm to the touch, about 5 minutes. Beat in the vanilla.

- Place the Oreos in a gallon sized ziptop bag. Press all the air out of the bag and seal it well. Use a rolling pin to crush the cookies until all large chunks are gone. Open the bag and pour in the melted butter. Seal the bag and "smush" the butter and the Oreos together until well incorporated.
- Press the Oreo crumbs into a 9-inch pie dish. It's ok if the crust doesn't come all the way up the sides.
- Whisk together all of the pumpkin pie filling ingredients until smooth, and pour into the prepared pie crust.
