Grilled to tender perfection, the fillets stay moist with a light coating of lemon and oil. They're topped with a fruity salsa of emerald kiwifruit, golden mango and red peppers for an eye-catching presentation.

2 medium mangoes, peeled and cubed (about 1-1/3 cups)
4 kiwifruit, peeled and cubed (about 1 cup)
1/2 cup diced sweet red pepper
1/2 cup chopped onion
1 jalapeno pepper, seeded and minced
2 tablespoons lemon juice, divided
1 tablespoon lime juice
2 teaspoons minced fresh mint or 3/4 teaspoon dried mint
1 teaspoon honey
1/2 teaspoon salt, divided
1 tablespoon olive oil
4 halibut fillets (4 ounces each)
1/4 teaspoon chili powder

Steps:

  • In a large bowl, combine the mangoes, kiwi, red pepper, onion, jalapeno, 1 tablespoon lemon juice, lime juice, mint, honey and 1/4 teaspoon salt. Cover and refrigerate until serving., In a small bowl, combine oil and remaining lemon juice; drizzle over both sides of fish. Sprinkle with chili powder and remaining salt. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fillets, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until fish flakes easily with a fork. Serve with salsa.

2 tablespoons chopped fresh chives
2 tablespoons finely chopped fresh flat-leaf parsley
1 teaspoon lemon zest
Four 6-ounce halibut fillets, each about 1 1/2 inches thick
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
Arugula Salsa Verde, recipe follows
Lemon wedges for garnish, optional
1 cup finely chopped arugula
2/3 cup finely chopped fresh flat-leaf parsley
1/4 cup olive oil
1/4 cup capers, rinsed and drained
Juice of 1/2 large lemon (about 2 tablespoons fresh lemon juice)
Zest of 1 large lemon
3/4 teaspoon kosher salt
1/2 teaspoon dried crushed red pepper

Steps:

  • Position an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
  • For the fish topping: Mix the chives, parsley and lemon zest in a small bowl. Cover and chill. This can be prepared 4 hours ahead, but keep chilled.
  • For the baked halibut: Coat the halibut fillets all over with the olive oil. Place the fish on a rimmed baking sheet. Sprinkle with the salt, pepper and chive-lemon topping, pressing slightly to adhere. Bake the fish just until opaque in the center, 9 to 10 minutes. Transfer 1 fish fillet to each of 4 plates. Spoon the Arugula Salsa Verde alongside. Serve with the lemon wedges, if using.
  • Stir the arugula, parsley, olive oil, capers, lemon juice, lemon zest, salt and red pepper together in a small bowl. Cover and chill. The salsa can be prepared 4 hours ahead, but let it stand at room temperature 1 hour before serving.

2 ounces tomato, diced
1-ounce red bell pepper, diced
1-ounce orange bell pepper, diced

1/4 bunch cilantro leaves
1 cup rice wine vinegar
1/2 cup sugar
1 tablespoon salt
2 ounces lime juice
1-ounce fish sauce
6 ounces halibut fillet
Salt and pepper
Chili threads
Microgreens
Chili oil

Steps:

  • For the salsa: Combine all the vegetables in a bowl. Chop cilantro finely. Mix rice wine vinegar, sugar, salt, lime juice, and fish sauce together until well blended. Add all chopped vegetables and cilantro to the mixture. Mix well.
  • For the halibut: Season with sea salt and pepper. Place the halibut directly onto a hot grill for a few minnutes. Then using tongs or a spatula give the halibut a quarter turn to create the second set of marks resulting in a crisscross pattern. When it's time to flip it, repeat the process of grilling for a few minutes and then give it a quarter turn. Remove from grill and finish in the oven.
  • Assembly: Spoon a nice mound of salsa in the center of each plate, adding a bit of the salsa juice. Place the halibut fillet on top. Garnish with chili threads and microgreens. Add chili oil to edges of salsa for color and heat. Enjoy!

  • Preheat broiler. Line broiler pan with foil; coat foil with nonstick spray. Combine 1 1/4 teaspoons pepper, coriander, and remaining 1 teaspoon coarse salt in small bowl; stir to blend. Pat fish dry. Sprinkle fish on all sides with seasoning mixture.
  • Arrange fish on prepared pan. Broil until just opaque in center, 3 to 4 minutes per side, depending on thickness.

BROWN-BAGGED HALIBUT WITH PAPAYA SALSA



Brown-Bagged Halibut with Papaya Salsa image

4 tablespoons olive oil
4 standard issue lunch-size brown paper bags
4 (6-ounce) halibut fillets
Salt and pepper
2 tablespoons soy sauce
2 tablespoons freshly squeezed lime juice
3 tablespoons freshly grated ginger
2 ripe papayas, skinned, seeded, then diced into 1/4-inch cubes. If papayas are unavailable, replace with a mango.
4 scallions, trimmed then diced
1/2 cup lightly packed cilantro leaves, chopped
4 tablespoons freshly squeezed lime juice
4 tablespoons red bell pepper or red cabbage (for color), finely chopped
2 jalapeno chilies, seeds and membranes removed, minced

Steps:

  • Preheat oven to 425 degrees F.
  • Drizzle 1 tablespoon of olive oil over the outside of each bag and rub it with your hand until all surfaces of the bag have absorbed the oil.
  • Rinse fillets, then pat dry. Season both sides with salt and pepper.
  • In a small bowl, mix soy sauce, lime juice, and ginger.
  • Set bags on their broad side and place one fillet flat inside each bag. Then, using a tablespoon, reach into the bag and spoon one quarter of the soy-lime-ginger mixture over each of the fillets. Force excess air from the bags, roll up the open ends and tightly crimp to seal shut.
  • Bake on a cookie sheet for 10 minutes.
  • Combine all salsa ingredients in a bowl and mix thoroughly with a fork.
  • To serve, tear a small slit in the bags, peel back the paper just enough to expose the fish, then spoon Papaya Salsa overtop of bag. Serve immediately.
  • Recommended beverage: Viognier (white)

1 tangerine
1 cup diced avocado
1/3 cup finely diced red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon finely grated lime zest
2 tablespoons fresh lime juice

1 to 2 tablespoons olive oil
Four 6-ounce halibut fillets

Steps:

  • Using a paring knife, remove the peel and white pith from the orange and tangerine. Working over a large bowl, carefully cut between the membranes to release the citrus segments, allowing them to fall into the bowl along with any juices. Add the avocado, onions, cilantro and lime zest and juice to the bowl with the citrus. Gently toss to mix. Season the salsa with salt and pepper.
  • In a large nonstick skillet, heat the oil over medium-high heat. Sprinkle the halibut liberally with salt and pepper. Add the halibut to the skillet and cook until golden brown and cooked through, 3 to 5 minutes per side. Transfer the halibut to serving plates, top with salsa and serve.

2 tablespoons flour
3/4 cup tomatillo, coarsely chopped (green tomatoes)
1/2 cup onion, coarsely chopped
2 poblano peppers, coarsely chopped (or sub in jalapeno for less heat)
1/4 cup fresh cilantro, packed coarsely chopped, plus 2 TBSP leaves for garnish
1/2 cup reduced-sodium chicken broth
3/4 cup sour cream, divided (I used Light Sour Cream)
kosher salt
1 tablespoon lime juice
1 3/4 lbs salmon fillets (about 1 inch thick) or 1 3/4 lbs mahi mahi (about 1 inch thick)

Steps:

  • Preheat oven to 375. In a large frying pan, melt butter over high heat. Stir in flour, remove from heat, and mix to form a smooth paste.
  • Scrape flour paste into a blender. Add tomatillos, onion, chilies, chopped cilantro, chicken broth, and 1/2 cup sour cream. Puree in blender. Pour green sauce back into frying pan; add salt and lime juice to taste and bring to a boil.
  • Rinse fish, pat dry with paper towels, cut into 6 equal pieces, and season with salt. Set pieces slightly apart in an 8 by 12 in baking dish.
  • Pour evenly over fish.
  • Bake fish until it flakes but still looks moist in the center of the thickest part (cut to test), 15 to 20 minutes.
  • Serve up fish and spoon sauce over portions. Top off with small spoonfuls of remaining sour cream, and sprinkle with cilantro leaves.

A handful of fresh cilantro, finely chopped
2 teaspoons hot sauce, such as Tabasco (eyeball it)
2 tablespoons vegetable oil (eyeball it)
1 jicama, about 1 pound
Coarse salt
1 tablespoon vegetable oil (once around the pan)
2 jalapeños
1 can diced fire-roasted tomatoes, such as Muir Glen brand, drained
2 tablespoons fresh cilantro, finely chopped
1 tablespoon fresh mint, finely chopped
1/4 red onion, finely chopped
Coarse salt
1/4 cup extra-virgin olive oil (EVOO)
4 6-ounce halibut fillets
Juice of 1/4 lemon
Salt and freshly ground black pepper
2 ripe Hass avocados
Juice of 1/2 lemon
Hot sauce, about 4 teaspoons

Steps:

  • Begin with the slaw salad. In a medium bowl, combine the lime zest and juice with the cilantro, hot sauce, and vegetable oil. With a paring knife peel the light brown skin from the jicama; slice 1/4-inch-thick disks, stack the disks up, then cut into 1/4-inch-wide strips. Add the jicama to the dressing and toss it around, then season with salt to taste and reserve.
  • To make the salsa: Heat a medium nonstick skillet over high heat. Add the veg oil and jalapeños and char until blackened on all sides. Remove the pan from the heat and remove the jalapeños to a cutting board. While the peppers cool enough to handle, in a bowl combine the fire-roasted tomatoes with the cilantro, mint, and red onion. Halve the peppers and remove the tops and seeds. Chop the jalapeño and add to the salsa. Toss to combine and season with salt to taste, then reserve.
  • Return the nonstick skillet to the stove with the EVOO in it and heat the oil over medium-high heat. Dress the fish with lemon juice and salt and pepper on both sides. When the oil ripples and begins to smoke, add the fish and cook for 4 minutes on each side, or until firm and opaque.
  • While the fish cooks, cut the avocados in half all the way down to the pit. Twist to separate the avocados. Use a spoon to remove the pits and scoop the flesh from the skin, keeping each half intact. Fill the cavity or "boat" with a little lemon juice, hot sauce, a pinch of salt, and a drizzle of EVOO.
  • To serve, place the fish on a dinner plate and top with the salsa. Pile some jicama alongside. Add an avocado boat to the plate and serve.

Steps:

  • Grate enough zest from lemon to measure 1/2 teaspoon and squeeze 2 tablespoons juice. Chop capers and in a small bowl whisk together with zest, lemon juice, garlic, and salt and pepper to taste. Add 1/4 cup oil in a slow stream, whisking constantly until blended. Whisk in herbs.

Steps:

  • Thaw fish, if frozen.
  • Rinse fish; pat dry with paper towels.
  • Cut into 4 serving-size pieces.
  • For fruit salsa, in a medium bowl, stir together strawberries, peaches, or nectarines; kiwifruit or apricots; the snipped cilantro; the orange juice or apple juice; and jalapeno chile pepper.
  • Set aside.
  • Brush both sides of each fish piece with oil.
  • Sprinkle with lemon-pepper seasoning.
  • Coat the unheated rack of a broiler pan with nonstick cooking spray.
  • Place fish on rack.
  • Broil 4 inches from heat for 8 to 12 minutes or just until fish flakes easily when tested with a fork, turning once halfway through broiling.
  • Serve with the fruit salsa.
  • If desired, garnish with cilantro sprigs. Makes 4 servings.
  • *Note: Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
  • Grill Method: Coat the unheated rack of an uncovered grill with nonstick cooking spray. Place fish on rack directly over medium coals. Grill for 8 to 12 minutes or just until fish flakes easily when tested with a fork, turning once halfway through grilling.

24 ounces halibut fillets
kosher salt
pepper, freshly ground
1 teaspoon ground cumin
1/2 teaspoon turmeric
1 pinch saffron thread, crumbled
1 pinch cayenne pepper
1 lime, cut in half
olive oil
1 cedar plank (soaked overnight or for at least 1 hour)
2 cups tropical fruit, diced (any combination of mango, papaya, kiwi and pineapple)
2 avocados, pitted, peeled and coarsely chopped
3 tablespoons cilantro, chopped
3 tablespoons red onions, chopped
1 jalapeno, seeded and finely chopped
1 lime, juice of
1 pinch sugar
salt and pepper, to taste

Steps:

  • Season both sides of the fillets with salt and pepper. Combine cumin, turmeric, saffron and cayenne and sprinkle evenly over fillets. Squeeze cut lime over fillets and drizzle with a little olive oil. Marinate for 15 minutes.
  • Preheat grill. Rinse plank and place on cooking grate. Cover grill and heat plank for 4 - 5 minutes, or until it starts to throw off a bit of smoke and crackles lightly. Reduce heat to medium low.
  • Place fillets on plank and cook 15 - 20 minutes. Remove from grill and tent lightly with foil. Let rest for 2 - 3 minutes.
  • Salsa: In a bowl, gently toss salsa ingredients. Taste and season with salt and pepper.
  • Serve fillets topped with a dollop of salsa and serve remaining salsa on the side.

1 kiwi fruit, peeled and diced
1 small yellow bell pepper, diced
1/2 small red onion, diced
1 jalapeno pepper, seeded and finely chopped
1 teaspoon lime zest, grated
3 tablespoons fresh lime juice
1/4 teaspoon sea salt
1/3 cup cilantro, chopped
1/2 teaspoon ground cumin
1/4 teaspoon fresh ground black pepper
2 teaspoons canola oil
4 swordfish steaks

Steps:

  • In a large bowl, toss together kiwi, bell pepper, onion, jalapeno, lime zest and juice, salt and cilantro. Set aside.
  • In a small bowl, mix together cumin and black pepper. Set an oven rack about 6 inches from the heating element and preheat the broiler.
  • Brush oil on both sides of swordfish steaks and sprinkle each side with the cumin mixture. Place fish on a rimmed baking sheet and broil for 5 minutes. Turn and broil until opaque in the center, another 4 to 5 minutes.
  • Place swordfish steaks on 4 plates and top each with kiwi salsa.
