- For the white beans: Put the white beans in a container with the 4 cups water and soak overnight. The next day, drain the water and put the white beans, salt, carrot, celery, thyme, bay leaf, onion and 6 cups water in a large pot and bring to a boil over high heat. Lower the heat to a simmer and skim any foam that forms on top. Simmer gently so as not to break the beans, until they are soft in the middle, about 2 hours. Take the pot off the heat and let the beans cool in the liquid. Drain, reserving the bean cooking liquid.
- For the fish stock: Put the olive oil, fennel, leek and onion in a 1-gallon stock pot and cook over medium heat to soften without browning, about 2 minutes. Add the wine and lemon juice. While that is going, wash the fish bones in cold water and then add to the pot with the bay leaf and 8 cups cold water. Bring the stock up to a rolling boil, then lower the heat and simmer, skimming off any foam that forms on top, for 30 minutes. Remove from the heat, cover, and let steep for 30 minutes. Strain the stock and cool in an ice bath. (Makes about 6 cups; leftover fish stock can be refrigerated for 3 days or frozen for 2 months.)
- For the white bean stew: Heat the oil in a large saucepan over low heat, add the garlic and let it brown slowly. Once it starts smelling of cooked garlic, whisk in the flour so it dissolves into the oil to make a roux. Whisk in the wine and 2 cups of the fish stock until smooth. Increase the heat to medium high, bring the stew to a boil, then reduce the heat and simmer for 15 minutes, stirring occasionally. If the sauce gets too thick, add up to 1 cup of the reserved bean cooking liquid. Add the white beans and simmer for another 10 minutes. Season with salt, pepper and 2 teaspoons Calabrian chile flakes-add more if you prefer spicy. Add a little lemon zest and juice. Keep the stew warm while you cook the clams and halibut. Just before serving add the parsley to keep it as green and fresh as possible.
- For clams: Put the clams in a pot and with wine to cover. Cover the pot and bring the wine to a boil over high heat, to gently open the clams. As soon as the clams start to open, use a slotted spoon to transfer them to a plate.
- For the fish: Heat the oil in a large skillet over medium heat. Season the halibut on both sides with salt and pepper. Sear the fish skin-side down until the first layer of fish starts to turn white, about 3 minutes. Flip, and cook until sides of the filets have turned white and the fish feels firm in the middle when you push down on the tops, another 2 minutes.
- To serve: Stir the parsley into the white bean stew. Divide the stew and clams among 4 bowls and top each with a piece of halibut, skin-side up. Sprinkle with some chopped parsley and serve.

- Divide halibut fillet into approximately 1.5" cubes.
- Mix dry ingredients, add beaten egg. Pour beer in until proper consistency. Batter will be smooth and a little runny but thicker than water.
- The remaining beer is yours to enjoy.

- Whisk together the flour, salt, pepper, garlic and paprika. Whisk in just enough beer to make the consistency pourable, but not too thin. The mixture should resemble pancake batter. Set the batter and the fish pieces in separate bowls next to the stove.
- Pour the oil into a heavy bottomed saucepan and warm it over medium high heat. You want it to be as hot as possible, without smoking. When the oil is hot, drop a few pieces of fish into the batter and coat well. Shake off the excess batter and using metal tongs, gently place the fish into the oil. Hold it there for a few seconds before releasing it, so that the coating will seal and it won't stick to the other pieces or the bottom of the pan. Repeat the process, cooking just a few pieces at a time to avoid crowding.
- Let them cook for a few minutes, until the coating is lightly browned. (I found it easiest to use separate tongs for coating the fish and for frying in the oil.) Remove from the oil with clean tongs or a large wire scoop (made for frying) and drain on a plate lined with paper towels. Test a piece with a fork to make sure the center is cooked and flaking. Serve with Dill Sauce and Enjoy!

- 1. White wine sauce is something you could make in 15 minutes, but I like to make it in advance: infused white wine with shallot, bay leaf and thyme, add fish stock and reduce by 2/3, add cream, reduce by 1/2, sieve it and add cube of ice cold butter before serving.
- 2. Start with boiling your potatoes and make a mash out of it. Depending on how you like it, mash more or less.
- 3. In the meantime you put a saucepan on the heat and pour in 2 cups of white wine with the chopped shallot, bay leaf and the thyme. When this is infused and reduced by at least 2/3, it becomes almost like syrup. Then add 3 cups of fish stock and reduce by 1/2. Add cream and reduce for another 5 minutes. Then sieve it and season to taste.
- 4. Now your potatoes should be ready. Put it aside and start with a new pan (I prefer coated for this, see "types of pots and pans" on suppliesformykitchen.com) with some olive oil, a cube of butter, all of the leek and a half inch of water.
- 5. Put is on a medium-high fire for about 4 minutes, make sure there is always water in the pan because it should not color or dry out! You have to taste it to make sure it's not underdone or worse!
- 6. Strain the leek and let it sit in the sieve to dry, BUT SAVE THE LIQUID. You will use this to make the mash smoother and tasty!
- 7. Meanwhile you can take a plate or pan that can go into the oven and strike butter with your hands on the whole inside of the pan, add the remaining stock and white wine and pour it in. Also put a bay leaf and some thyme in there and some crushed peppercorns and rough sea- or Himalayan salt. Cover it and let it poach for about 5 minutes in a strongly heated oven, each oven and pot or pan will take another poaching time... Just check up on it frequently and make sure there is always a quarter inch of moisture at the bottom!
- 8. When this is ready. Take out of the oven, and remove any cover it had and let at room temperature while you make the mash.
- 9. Add all the ingredients together for your mash (so also roast some chopped bacon, or cubes) and add the potatoes, leek, some cream and then the liquid from the leek. Season to taste with pepper and salt.
- 10. Then for the last part or the recipe you have to take a clean saucepan, add the 2 egg yolks and 2/3 of a cup of white beer, Belgian of course because this is a Belgian white beer recipe :-) Whisk it on top of a pot filled with simmering water to make sure it's temperature stays beneath the eggs cooking point! Whisk strong until you have a smooth foamy sauce! And add this to the slightly heated white wine sauce.

- Preheat oven to 425.
- In a large skillet, heat the olive oil over medium heat. Add more oil if necessary.
- Sprinkle halibut lightly with salt and a good shaking of freshly ground pepper. (watch the salt as the capers can be on the salty side).
- Sear the halibut lightly on both sides. Remove the halibut to a large dish with sides.
- Deglaze the skillet with the white wine and lemon juice. Pour over the halibut.
- Cook the fish for 12 - 15 minutes or until it lightly flakes.
