PAIFALA (AMERICAN SAMOA) - HALF-MOON PIES
This recipe is from week six of my food blog, "Travel by Stove." I am attempting to cook one meal from every country on Earth, and American Samoa is my sixth stop. This is a very tasty pineapple dessert with a hint of coconut. It comes together a lot like a calzone.

Steps:
- Combine the pineapple, sugar and milk into a saucepan and heat until simmering. Be careful not to boil or the milk will curdle.
- Now mix the cornstarch with the reserved pineapple juice until it is smooth, and add to the pineapple. Stir until the mixture thickens, then remove from the heat and let cool.
- Put all of the dough ingredients into a bowl and blend until a dough forms. Divide the dough into five parts, then roll each part into an 8-inch circle.
- Spread some onto one half of each circle. Fold the other half over the top, stopping about a quarter inch from the edge. Fold the bottom quarter inch over the top edge, then crimp with a fork. Repeat until you've finished all of your pies.
- Prick a couple of holes in the top and put into a 375 degree oven for 30 to 35 minutes.
CHICKEN CRESCENT POCKETS
This is my version of this well-known recipe. I have adapted it from other recipes to suite my own taste.

Steps:
- Preheat oven to 350 degrees.
- In a medium sized bowl, mix together chicken, cream cheese, ONE HALF of the cream of celery soup,the onions, and the pepper. Mix until thoroughly combined.
- Seperate crescent rolls into 4 squares. One square equals 2 triangles put together. Press triangles together to form a square. Place these on a non-stick cookie sheet.
- Place 1/4 to 1/3 cup of filling into each square, and pull up the corners of the crescent roll to the center to form a "pocket".
- Bake at 350 for about 20 minutes or until golden brown.
- If you have any filling left, mix it with the remaining cream of celery soup and heat it in a small saucepan over low heat and use this to top your cresent pockets.

Steps:
- Melt marshmallows with 2 tbls milk in pan over low heat, stirring constantly.
- Remove from heat, cool, fold in 1 cup whipped topping.
- Refrigerate mixture while preparing remainder of pie.
- In large bowl, combine remaining milk with pudding, whisk for 2 minutes.
- Fold in remaining cool whip, spoon into pie shell.
- Arrange layer of vanilla wafers on top and spread with chilled marshmallow mixture.
- Refrigerate 4 hours.
- Drizzle with chocolate syrup before serving.

- Toast seaweed sheets by placing under grill for 1-2 minutes. Cut each sheet into eigths, layer on top of each other and cut into thin strips.
- Place seaweed, seeds, salt and chilli in a processor bowl, process for a few seconds set aside.
- Place beaten eggs in a jug, pour half mixture into a lightly oil pan, let set 1-2 minutes. Tip out onto a flat surface and roll up and cut into thin strips. Repeat.
- Place warm rice, carrot, shallots, ginger and mirin in a bowl. Stir with fork to combine.
- Gently open pockets from the top edge, fill each with some rice mixture. Place some egg roll and a spoonful of seed mixture on top of each pocket.

AMISH HALF MOON PIES OR PREACHING PIES
These little pies were taken to the church for the children to eat so they would be quiet. They would be great for picnics, potlucks, breakfast, or for visiting grandkids. They freeze well.

Steps:
- Cook the dried apples in a saucepan with water and the salt.
- When apples are soft and pulpy, add the sugar, orange and cinnamon.
- Simmer until water is cooked away.
- Roll pastry out and cut in 8 inch circles.
- Place generous portions of the mixture on half of the pastry rounds; fold the pastry over and pinch the edges tightly together.
- Bake in 450 degree oven for 10 minutes.
- Reduce heat to 350 degrees and bake about 35 to 40 minutes longer or until golden brown.
