This is the best shepherds pie recipe I've ever had, and it comes from a friend who was a whiz at pinching pennies without sacrificing hearty flavor.-Valerie Merrill, Topeka, Kansas

2-1/2 pounds potatoes, peeled and cooked
1 cup sour cream
Salt and pepper to taste
2 pounds ground beef
1/2 cup chopped onion
1 medium sweet red pepper, chopped
1 teaspoon garlic salt
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (16 ounces) whole kernel corn, drained
1/2 cup milk
2 tablespoons butter, melted
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large bowl, mash potatoes with sour cream. Add salt and pepper; set aside. In a large skillet, cook beef with onion and red pepper until meat is no longer pink and vegetables are tender; drain. Stir garlic salt into meat mixture. Stir in the soup, corn and milk. , Spread meat mixture into a 13x9-in. baking dish. Top with mashed potatoes; drizzle with butter. , Bake, uncovered, until heated through, 30-35 minutes. For additional browning, place under broiler for a few minutes. Sprinkle with parsley if desired.

1 pound ground beef chuck
1 medium onion, chopped
1 garlic clove, minced
1/4 teaspoon dried thyme
2 tablespoons ketchup
1 tablespoon all-purpose flour
1 box (10 ounces) frozen mixed vegetables (no need to thaw)
Coarse salt and ground pepper
3 cups mashed potatoes

Steps:

  • Preheat oven to 425 degrees. Heat a large (5-quart) heavy pot or Dutch oven over high. Cook beef, breaking up meat with a spoon, until no longer pink, 4 to 5 minutes. Add onion and garlic; cook until softened, about 4 minutes.
  • Add thyme, ketchup, and flour; stir until combined. Add 1/2 cup water and vegetables. Cook until vegetables are warmed through and liquid has thickened, about 3 minutes. Season with salt and pepper.
  • Spoon beef mixture into a 2-quart baking dish. Spread potatoes evenly over beef; using a fork, decorate potatoes with lines and peaks. Place dish on a rimmed baking sheet, and bake until potatoes are lightly browned, 10 to 15 minutes. Serve.

1 1/2 pounds russet potatoes
1/4 cup half-and-half
2 ounces unsalted butter
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 egg yolk
2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 1/2 pounds ground lamb
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons all-purpose flour
2 teaspoons tomato paste
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 teaspoons freshly chopped rosemary leaves
1 teaspoon freshly chopped thyme leaves
1/2 cup fresh or frozen corn kernels
1/2 cup fresh or frozen English peas

Steps:

  • Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
  • Preheat the oven to 400 degrees F.
  • While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

Mini Sweet Potato Cheddar and Chorizo Sheperds Pies image

Spicy Mexican chorizo, with the cheesy, creamy sweet potatoes... it works! Topped off with diced avocado and a heavy sprinkle of cotija cheese, it is British food turned Mexican. So so good.

1 tablespoon olive oil
1/2 onion (finely chopped)
2 cloves garlic (mince or grated)
3/4 pound ground chorizo
1 red pepper (chopped)
1 orange pepper (chopped)
2 carrots (chopped)
1 jalapeno (seeded and chopped)
1/4 cup chicken broth
1 tablespoon tomato paste
1 cup black beans (rinsed and drained if using canned)
1 cup spinach (chopped)
1/2 cup cilantro (chopped, plus more for topping)
2 medium sweet potatoes
2 tablespoon butter
1/4 cup milk
1 in chipotle chili adobo (minced)
1/8 teaspoon cinnamon
1/4 teaspoon honey
salt and pepper (to taste)
1/2 cup shredded sharp cheddar cheese
1 avocado (diced, for serving)
crumbled Cotija cheese (for serving)

Steps:

  • Preheat oven to 400 degrees F.
  • Using a fork prick the sweet potatoes all over and place in the oven. Bake for 45 to 55 minutes or until the sweet potatoes are fork tender. Remove from the oven and add to a large bowl, if desired peel away the skins (I left most of the skin on mine). Add the butter and milk and mash mash mash until they're, well mashed! Add the chipotle chili, cinnamon, honey,cheddar cheese and a good pinch of salt and pepper. Mash some more and get it super creamy.
  • In the meantime heat the oil in a large skillet over medium high. Add the onions and sauté until they start to soften, 4 minutes. Add the chorizo and brown the meat all over, breaking it up as you go. Add the red pepper, orange pepper, carrots and jalapeno. Cook another 5 to 10 minutes or until the veggies are soft and begin to caramelize. Add the chicken broth and tomato paste, cook another 5 minutes and then stir in the spinach, black beans and cilantro. Cook another minute or so and then remove from the heat.
  • Then divide the chorizo filling evenly among 4 ramekins. Spoon the mashed sweet potatoes on top of each pie. Arrange them on a baking sheet and slide into the oven for about 20 minutes or so.
  • Garnish with chopped cilantro, diced avocado + crumbled cotija. Serve!

This is a traditional English pub style recipe. I can make this anywhere in the world and it will evoke memories of pub lunches! This is no way a diet item! Its a robust & hearty dish!

700 g ground lamb
half a can Guinness stout (to marinade ground lamb)
1 large onion, diced
1 carrot, diced (optional)
2 garlic cloves, chopped
1/2 teaspoon dried marjoram
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 cup chopped english parsley
75 ml Worcestershire sauce
2 teaspoons flour (for thickening)
2 tablespoons olive oil
salt & pepper
1 kg potato (peel, boil, mash & season)

Steps:

  • Use 1/2 a can of Guiness Stout to marinade ground lamb. Leave covered in fridge for at least 1 hr and if possible overnight.
  • In a hot pan, put in olive oil and add mince lamb to brown. Strain cooked mince with a big sieve, separating meat & juice.
  • Reheat same pan, add more olive oil and now saute & brown diced onions, garlic and carrot till fragrant and translucent.
  • Add the cooked mince into this pan and mix well.
  • Add dried marjoram, rosemary and thyme and mix well.
  • Pour left over juice from the mince into the pan and add all the Worcestershire sauce and half of the English parsley and stir well.
  • Cook on low heat for 20 mins and when it starts bubbling, add in flour to thicken the mixture.
  • Add salt & pepper to taste.
  • Cook potatoes in salted water till soft enough to mash.
  • Strain potatoes and mash with a big knob of salted butter, cream and milk (totally full fat!). Season with salt, pepper and a dash of nutmeg powder.
  • Pour cooked mince mixture in a big enough pyrex dish.
  • Layer the mash potato on top and seal the edges.
  • Bake or brown in oven for 20 to 30 mins at 180 degrees celsius.
  • Serve with a side of boiled cabbage & carrots with lots of butter and sprinkle leftover English parsley!

BAKED MEATLOAF SHEPHERD'S PIE

After doing a search, I couldn't find a decent Shepherd's Pie recipe... I did find recipes for meatloaf and mashed potato bake, however. And thus, Baked Meatloaf Shepherd Pie was birthed. This recipe is an adaptation of two highly rated recipes, Meatloaf #54257 and Mashed Potato Bake #41344. It is comfort food and a great dish to bring to someone who needs a meal, as it doubles easily, and freezes well. Enjoy!

1 lb lean ground beef
1/2 slice bread, finely chopped
1 whole egg
1/2 small sweet onion, finely chopped (such as Vidalia)
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons ketchup
1/4-1/3 cup half-and-half cream
1 sweet onion, sliced in rings (such as Vidalia)
4 butter potatoes, cubed
1/3 cup half-and-half cream or 1/3 cup milk
2 tablespoons butter
1/4 cup cheddar cheese, shredded
1 (8 ounce) box frozen peas, thawed and drained
1 (8 ounce) box frozen carrots, thawed and drained

Steps:

  • Preheat oven to 350 degrees.
  • Prepare meatloaf: Combine first eight ingredients in a large bowl.
  • Smooth into a loaf baking dish.
  • Bake uncovered for 1 hour.
  • While meatloaf is baking, prepare potatoes: Boil potatoes until tender, drain water.
  • Mash potatoes with fork, stirring in 1/3 cup of half & half.
  • In skillet melt margarine and brown slices of onions.
  • Put on lid and cook, stirring occasionally, making sure all of the onions get brown (usually about 10 minutes).
  • Mix potatoes and onions in a medium-size bowl.
  • Place mixture in 2-qt baking dish and top with cheese.
  • Bake at 350 for 20 minutes.
  • When meatloaf and potatoes are done, remove from oven.
  • Assemble shepherd's pie: Drain the meatloaf of grease and spoon into a 3-qt casserole dish (The meatloaf will break apart as you spoon it out.) Mash the meatloaf down into a flat layer.
  • Mix peas and carrots together and add them on top of the beef.
  • Spoon mashed potato mixture on top of the vegetables. The potatoes should form the top layer, so be careful not to mix the vegetables with the potatoes.
  • Bake at 350 degrees for 20 minutes.

1 tablespoon molasses
1 teaspoon fresh ginger, peeled and grated
1/2 teaspoon salt

2 cups carrots, diced
1 cup parsnip, peeled and diced
1 cup turnip, peeled and diced

Steps:

  • Place sweet potatoes on baking sheet and bake at 375 for 50 minutes, or until very tender. Let cool, and peel.
  • Combine sweet potatoes, molasses, ginger root, salt, and pepper in a bowl. Beat at medium speed with a mixer until smooth. Set aside.
  • Heat oil in a large nonstick skillet over medium-high heat. Add squash and next six ingredients (squash through onion); saute for 8 minutes. Add broth and bring to a simmer. Cook for 20 minutes, stirring occasionally.
  • Spoon squash mixture into a 3-quart casserole dish. Spread sweet potato mixture evenly over squash mixture. Bake at 370 for 35 minutes; sprinkle with pecans and bake an additional 15 minutes.
