GYRO SALAD WITH LAMB
I love Greek food and if I want it I have to prepare it as we don't have any ethnic restaurants within an hour of our home. I keep ground lamb in the freezer for those days that I wish I could just stop and get a gyro.

- 1. GYRO MEAT: Preheat oven to 450-degrees. Combine lamb with the garlic, rosemary, oregano, salt, and crushed red pepper. Knead the mixture until it is quite smooth, like a paste. Form the mixture into four mini 'loafs'. Place the loaves on a baking sheet and bake for about 15-17 minutes. Cool for 5-10 minutes before thinly slicing.
- 2. DRESSING: Using a box grater set atop of a bowl, grate the cucumber. Using your hands, squeeze the excess liquid out of the cucumber, reserving the liquid. Place the squeezed cucumber in another bowl. Combine the grated cucumber with the remaining ingredients. GradDually add the reserved cucumber liquid to the dressing until it reaches your desired consistency. Taste and adjust seasonings to your liking. Refrigerate until use.
- 3. SALAD: Arrange each of the warm, thinly-sliced loaves over the lettuce, tomatoes, and onions. Drizzle with tzatziki dressing.

- Toast the pitas in a toaster or oven until heated (or use cold bread).
- Slice toppings and prepare tzatziki sauce.
- Cut the gyro meat into thin strands. In a skillet, brown the gyro meat with oil.
- Add meat to pita bread and top with desired toppings.

LAMB GYRO WITH TZATZIKI SAUCE AND SPICY SOUR CREAM SAUCE

- In a large bowl, toss the cubed lamb with the garlic, thyme, oregano, rosemary, and lemon juice. Coat the lamb completely. Let the lamb marinate for 30 minutes.
- Heat a large, deep skillet over high heat and drizzle in the remaining 2 tablespoons of olive oil. Season the lamb with 1 teaspoon salt, and 1/2 teaspoon pepper. Add the lamb to the skillet and cook until browned on all sides and cooked to medium-rare, about 4 minutes on each side.
- Heat the pita bread in a dry pan or in the microwave for just a few seconds until warm and pliable. On each piece of bread, lay a few pieces of lamb, some tomato slices, lettuce, feta and a spoonful of each sauce. Transfer to a serving platter, fold and enjoy!
- To make Tzatziki sauce:
- In a small bowl, combine the cucumber, mint, dill, lemon zest, and yogurt. Season with salt, to taste, and serve with the gyros.
- Yield: about 2 cups
- To make Spicy Sour Cream Sauce:
- In a small bowl, whisk the sour cream, lemon, and sriracha sauce together until completely blended. Season the sauce with salt, to taste, and serve with the gyros.
- Yield: about 1 cup
SUNNY'S EASY 7-LAYER GYRO DIP
One of my favorite things to order for delivery from a Greek restaurant is a gyro salad. It has all the things you want inside a gyro sandwich, but in salad form. It usually comes with two warm pitas on the side, so I love to make my own gyro from all the elements. This is a dip that gives me all those vibes and more. It's great with pita chips or as an easy way to serve gyros to a group without having several topping bowls. Just have warm pita on the side and a spoon to scoop the dip. Sometimes, I serve it this way with crisp, shredded lettuce in a bowl on the side.

- For the lamb: In a large pan on medium heat, add the olive oil. When it begins to swirl, add the onion, garlic, oregano, lamb, salt and plenty of black pepper. Combine the ingredients, breaking up the lamb while cooking, until it is browned, about 10 minutes. Remove with a slotted spoon to a paper towel-lined plate.
- Layer the dip. In an 8-inch square dish, layer in this order: Spread the hummus on the bottom, then sprinkle evenly with the lamb, feta, tomatoes and cucumbers. Spread the tzatziki dip over the top and sprinkle with the dill to finish. Serve with the pita chips.

- In a large bowl, sprinkle cucumber with salt; mix well. Let stand 5 minutes. Drain. Stir in remaining dressing ingredients. - Heat olive oil over medium high heat; add onions and garlic and saute for five minutes. Add red pepper flakes. Add lamb and cook until there is no pink left.
- In a small bowl, combine the parmesan cheese, oregano, cumin, and pepper. Mix, and add to lamb, stirring well to evenly coat the lamb.
- Cook for five minutes, then add the sliced mushrooms and sun dried tomatoes. Cook until fully heated.
- Serve on flatbread or pita bread: sprinkle feta cheese and olives to taste (about one ounce of each), add the lamb mixture. Add a cucumber sauce if you like, and serve.

- Preheat oven to 325F. In a food processor, process the onion for about 15 seconds until it is minced. Pour the minced onion into a tea towel, wrap and squeeze the liquid from the minced onion, draining into the sink. Squeeze until very little of the liquid remains. Return the onion to the processor. Add the lamb, garlic, marjoram, rosemary, salt and pepper. Process until the meat mixture is a fine paste. This takes about a minute. You will likely need to scrape down the sides once or twice during the process.
- Mix together the yogurt, chopped cucumber, minced garlic, oil, vinegar, salt and mint leaves. Keep refrigerated until serving time.
- Heat your grill to Med-Med High. Place the salad ingredients on separate skewers: 2 skewers for cherry tomatoes, 2 skewers of Halloumi cheese, 2 skewers of onion wedges.
- Arrange or combine the lettuce, onions, cheese, cherry tomatoes, cucumbers, olives, and pepperoncinis. Drizzle the remaining marinade/dressing over the salad. Top with slices of gyro meat. Add a dollop of tzatziki sauce.
