Guyanese Mango Fire Relish image

Adapted from the Barbecue Bible. Serve with grilled seafood, poultry or meat. Use green mangoes for a more traditional preparation. Watch out--this is HOT! Seed the scotch bonnets if you don't want it quite so fiery.

Number Of Ingredients 7

1 lb ripe mango, peeled, pitted, and cut into 1/2-inch pieces (use green mangoes for a more traditional taste)
1 -4 scotch bonnet pepper (to taste)
4 garlic cloves, crushed
2 teaspoons salt (or to taste)
2 teaspoons sugar
1/3 cup fresh lime juice (or to taste)
2 tablespoons water (or more if necessary)

Steps:

  • Combine all ingredients in a blender and puree until smooth.
  • Relish should be thick but pourable. Add a little more water if it is too thick.
  • Cover tightly and refrigerate. Will keep up to 1 week.

1 mango - peeled, seeded and diced
1 teaspoon extra virgin olive oil
½ red bell pepper, chopped
2 green onion, thinly sliced
1 tablespoon chopped cilantro
1 lime, juiced
¼ teaspoon salt
1 pinch cracked black pepper
1 teaspoon honey

Steps:

  • Combine the mango, oil, bell pepper, scallions, cilantro, and lime juice in small bowl. Stir to combine. Season to taste with salt, black pepper, and honey. Refrigerate, or serve immediately.

It IS technically a relish, I suppose, but we tend to eat this more like a salad. Goes great with a spicy main course-- very cool and refreshing! Especially pretty if you can manage to dice the mango and the veggies in equal-sized pieces. Tequila could be replace by lime juice for a non-alcoholic version.

1 red bell pepper, seeded with veins removed and in small dice

  • Mix all.
  • Will keep in the refrigerator, covered, for two days.

1 cucumber, diced with seeds removed
2 chili peppers, green, cut into rings
1/4 cup of fresh mint, chopped
1 medium green bell pepper, diced
1 medium onion, minced
1/4 cup malt vinegar
2 tablespoons chili-garlic sauce

Steps:

  • In bowl, combine mango, red bell pepper, cucumber, green chilies, mint, green bell pepper, onions, malt vinegar and Garlic Chili Pepper Sauce.
  • Blend together well.
  • Cover and refrigerate for at least one hour.
