1 tablespoon cayenne pepper
1 tablespoon white pepper
1 tablespoon garlic powder
2 teaspoons coarsely ground black pepper
2 teaspoons ground cumin
1 teaspoon dried basil
2 skinless, boneless chicken breasts
Extra-virgin olive oil, for brushing
2 hot sausage links
1 pound pizza dough
All-purpose flour, for dusting
Cornmeal, for dusting
3/4 cup pizza sauce
1 cup shredded mozzarella cheese
1/4 cup sliced pepperoni
2 tablespoons grated parmesan cheese
8 fresh basil leaves, torn

Steps:

  • Put a pizza stone or upside-down baking sheet in the oven; preheat to 500 degrees F.
  • Make the chicken: Combine the salt, cayenne, white pepper, garlic powder, black pepper, cumin and dried basil in a bowl. Brush the chicken with olive oil, then rub with the spices. Heat a grill pan to medium high; grill the chicken until cooked through, about 7 minutes per side. Grill the sausage, turning, until cooked through, 10 to 12 minutes. Let cool, then dice the chicken and crumble the sausage.
  • Stretch the pizza dough on a floured surface into a 12-inch round. Put on a cornmeal-dusted pizza peel or upside-down baking sheet; slide the dough onto the hot pizza stone or baking sheet and cook 7 minutes.
  • Slide the crust back onto the peel. Spread with the pizza sauce, then top with 1/2 cup mozzarella, the chicken, pepperoni and sausage. Sprinkle with the remaining 1/2 cup mozzarella and the parmesan. Return the pizza to the oven and bake until bubbly, about 7 more minutes. Top with the fresh basil.

Pecan and Butter Cracker Crust, recipe follows
3 1/2 cups heavy cream, divided
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
1/2 teaspoon powdered ginger
1 vanilla bean, seeds scraped and pod reserved
8 egg yolks
1 cup sugar
1/2 cup whole milk
2 cups canned pumpkin puree
Hot water
1/4 cup turbinado sugar
32 butter crackers (recommended: Ritz crackers)
1/2 cup pecans
5 tablespoons unsalted butter melted, plus more if needed
2 to 3 tablespoons dark brown sugar

Steps:

  • Preheat the oven to 300 degrees F. Make the crust: In the bowl of a food processor fitted with the metal blade, pulse the crackers and pecans until finely ground, 6 to 10 pulses. Add the melted butter and brown sugar and pulse to combine. Press the mixture into the bottoms and 1/2 inch up the sides of ten 6-ounce ramekins. Put the ramekins in a large baking dish or roasting pan and blind bake in the oven, 10 to 12 minutes. Remove and set aside to cool.
  • Make the custard: Combine 2 cups cream, the cinnamon, nutmeg and ginger in a saucepan over medium-high heat. Halve the vanilla bean lengthwise; scrape out the seeds with a knife, then add the seeds and pod to the saucepan. Bring to a boil and remove from the heat. Whisk the egg yolks with the granulated sugar in a bowl until the sugar is dissolved. Add the remaining 1 1/2 cups cream and the milk to the saucepan. Slowly whisk in the yolk mixture, then strain the custard through a sieve back into the bowl. Whisk in the pumpkin.
  • Divide the pumpkin mixture among the ramekins. Pour hot water into the baking dish, about halfway up the sides of the ramekins. Bake until the custard is starting to set but is still a little wiggly in the middle, 55 minutes to 1 hour. Remove from the oven; remove the ramekins from the water bath and let cool to room temperature. Cover and refrigerate at least 6 hours or overnight.
  • Lightly sprinkle the custard with turbinado sugar. Heat the sugar with a butane torch until caramelized. To get a thicker caramelized sugar crust, repeat, using just a light sprinkling of sugar each time. Let cool.
  • In the bowl of a food processor fitted with the metal blade, pulse the crackers and pecans until finely ground, about 6 to 10 (3-second) pulses. Add the melted butter and brown sugar and pulse to combine. Press into the bottom of a springform pan, baking dish, or 8 (6-ounce) ramekins.

3 tablespoons canola oil, if needed
1/4 cup all-purpose flour
2 cups beef stock
1 teaspoon salt
1 tablespoon Worcestershire sauce
Roasted Vegetables, recipe follows
Asiago Mashed Potatoes, recipe follows
1/2 cup grated Asiago cheese
2 red bell peppers
2 parsnips (1/2 pound), peeled
3 medium carrots, peeled
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon freshly cracked black pepper
3 pounds Yukon gold potatoes, quartered
1 tablespoon kosher salt
2 heads Roasted Garlic, recipe follows
1 1/2 cups grated Asiago cheese
6 tablespoons unsalted butter, room temperature
2 teaspoons freshly cracked black pepper
1/2 cup milk
2 heads garlic
1 teaspoon salt
1 teaspoon cracked black pepper
1 fresh rosemary sprig
2 fresh thyme sprigs
1 tablespoon olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large saute pan over medium-high heat, add the sausage and the sirloin and season with the red pepper flakes, oregano, basil and 1/2 teaspoon of the pepper. Stir and cook until brown. Remove the meat mixture from the pan to a bowl. Add the onions to the pan, along with a little canola oil, if needed. Cook for 10 minutes, until lightly caramelized. Return the meats to the pan, then add the flour and cook for 2 minutes. Deglaze the pan with the beef stock and add the Worcestershire sauce. Adjust the seasoning with additional teaspoon of salt and pepper. Add in the prepared Roasted Vegetables
  • In a 13 by 9-inch baking dish, add in the vegetable and meat mixture. Top with the Asiago Mashed Potatoes and spread evenly, leaving a 1-inch border of meat mixture exposed. Sprinkle with 1/2 cup of Asiago and put in the oven for 1 hour and 15 minutes. Remove from the oven and let sit for 15 minutes before serving.
  • Preheat the oven to 400 degrees F.
  • Wash and dry the vegetables, put on a baking sheet, drizzle with the olive oil and toss to coat. Sprinkle with the salt and pepper and bake for 45 to 55 minutes. Remove the bell peppers to a plastic bag and when cool enough to handle, remove skin and seeds. Dice all of the vegetables into 1-inch pieces and combine with the cooked meats.
  • In a large Dutch oven, add the potatoes, cover with water and add the kosher salt. Bring to a boil over high heat, then reduce the heat to a strong simmer and let cook until potatoes are fork tender, about 20 minutes. Drain, return to the pot and mash with a potato masher. In a small bowl, add the roasted garlic, 1 1/2 cups of Asiago cheese, the butter and the pepper. Mix to combine well and then add to the potatoes. Stir in the milk and adjust the salt and pepper, to taste.
  • Preheat the oven to 400 degrees F.
  • Cut the tops off the garlic and put them into a 12 by 12-inch doubled foil square. Sprinkle with 1 teaspoon salt, 1 teaspoon pepper and add the rosemary and thyme sprigs. Drizzle with the olive oil, seal tightly and roast until soft, about 45 minutes. When cool enough to handle, squeeze from the root end to release the garlic pulp.

1/4 teaspoon pepper
1 cup flour
2 teaspoons baking powder
1/2 teaspoon sage

Steps:

  • Spray large saucepan with non-stick spray. Add onions and garlic, cooking over medium heat until tender.
  • Add broth, potatoes, carrots, and beans, bring to a boil. Reduce heat to medium-low, partially cover and simmer for 12 minutes. Potatoes should be slightly undercooked. Remove from heat.
  • In small bowl, stir together mushroom soup and flour. Add to the vegetables, along with chicken, parsley and spices, stir well. Pour into a medium casserole dish.
  • For crust combine flour, baking powder, sage and salt. Using a pastry blender, cut in butter until it resembles coarse crumbs. Stir in milk.
  • Form a ball with the dough. More flour can be added if the dough is too sticky.

2 teaspoons baking powder
1 teaspoon salt
4 teaspoons dried thyme
4 teaspoons dried sage
4 sticks cold unsalted butter, cut into 1 tablespoon pieces
12 to 16 tablespoons cold water
3 tablespoons butter
1 sweet onion, diced
1 medium shallot, diced
5 celery stalks, diced
1/3 cup all-purpose flour
4 cups hot chicken stock
1 rotisserie chicken, meat removed and chopped
2 cups frozen diced carrots and peas
2 teaspoons dried sage
Salt and freshly ground black pepper
1 egg, whisked, for egg wash
Special equipment: 4 (5-inch) aluminum pot pie pans
To prepare the crust:

Steps:

  • Combine 2 1/2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon salt, 2 teaspoons thyme and sage in a food processor, pulsing until combined. Add in 2 sticks butter, 4 tablespoons at a time, pulsing after each addition until mixture forms coarse texture. Slowly add in 6 to 8 tablespoons cold water while machine is running, 2 tablespoons at a time until dough balls up in processor to one side. Remove dough onto a lightly floured board, cut in half and form into 2 (8-inch) rounds. Wrap each tightly with plastic wrap and place in the refrigerator. Chill for 30 minutes prior to rolling out. Repeat to make second batch of dough.
  • To prepare the filling:
  • In large saute pan, melt butter over medium heat; add onions, shallot and celery. Saute until just starting to brown. Stir in flour and saute for 2 minutes. Slowly whisk in hot stock, stirring well. When bubbly and thickened, about 5 to 6 minutes, stir in chopped chicken, carrots and peas, and sage. Season, to taste, with salt and pepper. Remove from heat. Let cool while rolling out dough.
  • To assemble pies:
  • Preheat oven to 350 degrees F. On lightly floured board, cut the rounds of dough in half. Roll pieces into 6-inch rounds, about 1/4-inch thickness. Place a round in the bottom of 4 aluminum pie pans and lightly press the sides and bottom to fit the shape of the pans. Generously top with filling until full and slightly mounded. Top with second piece of crust and pinch seams together. Cut 2 small slits in top. Brush with egg wash. Place on a baking sheet and bake for 1 hour to 1 hour 15 minutes or until tops are golden brown and filling is bubbling.

Tomato pie is a staple in Low Country cuisine, and if you're unfamiliar with this dish, it's not a dessert at all. I layer sliced heirloom tomatoes, my famous pimiento cheese, herbs, onion and ham in a cornmeal pie crust and bake them up. The result is a to-die-for side or main dish that I know you'll love.

1/2 cup plain yellow cornmeal
3/4 cup all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
1/3 cup vegetable shortening
5 tablespoons ice cold water
4 to 5 large heirloom tomatoes, sliced
Kosher salt
1 tablespoon Miss Brown's House Seasoning, recipe follows
2 tablespoons chopped fresh chives, plus more for garnish
2 tablespoons chopped fresh parsley, plus more for garnish
1/2 large Vidalia onion, very thinly sliced
4 ounces tasso or smoked ham, diced
1 cup Pimiento Cheese, recipe follows
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper
8 ounces extra-sharp yellow Cheddar, shredded
4 ounces white Cheddar (preferably Vermont Cheddar), shredded
8 ounces cream cheese, softened
4 ounces diced pimientos, drained and juice reserved
3 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Make the cornmeal crust: Combine the cornmeal, flour and salt in a food processor and pulse until combined. Add the shortening and pulse until the mixture resembles small peas. Add the cold water, 1 tablespoon at a time, and pulse just until the mixture comes together and forms a dough. Shape the dough into a disc, then wrap with plastic and refrigerate for 30 minutes.
  • For the filling: Meanwhile, arrange the tomatoes in a single layer on paper towel-lined baking sheets. Sprinkle with 1/2 teaspoon salt. Let stand for 30 minutes to allow the water from the tomatoes to release, then pat the tomatoes dry with paper towels.
  • Preheat the oven to 400 degrees F.
  • Roll out the dough out to an 11-inch circle and fit into a 9-inch deep-dish pie plate. Fold the edges under and crimp the edges. Fill the pie crust with parchment paper and pie weights or dried beans. Bake on the bottom rack until the crust is browned and crisp, 20 to 25 minutes. Remove from the oven, carefully lift out the parchment and weights and let cool. Reduce the oven temperature to 350 degrees F.
  • Sprinkle the tomatoes with the House Seasoning. Layer a third of the tomatoes on the bottom of the crust and sprinkle with a third of the herbs. Top with half of the onion, half of the ham and 1/3 cup Pimiento Cheese. Repeat the layers once. Top with the remaining tomatoes, herbs and remaining 1/3 cup Pimiento Cheese. Bake on the bottom rack until the pie is golden brown and bubbly, about 30 minutes. Let stand 20 minutes before slicing. Garnish with more fresh herbs, if desired.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.
  • Add the Cheddars, cream cheese, pimientos and mayo to a bowl and mix together. Add the chives, garlic powder, cayenne, smoked paprika and salt and pepper and mix until thoroughly combined.

3 teaspoons salt
3 teaspoons instant yeast
4 1/2 cups bread flour, plus additional for coating dough
Nonstick cooking spray, for the dough
Four 3-quart cans unpeeled ground tomatoes
Two 3-quart cans peeled ground tomatoes
1 cup dried basil
1/2 cup dried oregano
1/2 cup dried marjoram
1/2 cup sugar
1/2 cup granulated garlic
Cornmeal, for coating dough
10 ounces ricotta
1/2 cup blue cheese crumbles
10 ounces shredded mozzarella
1 cup shredded roasted chicken
1/4 cup shredded pepperoni
3/4 cup buffalo hot sauce, plus additional for garnish
1/2 cup blue cheese dressing

Steps:

  • For the dough: Add 2 cups cold water to bowl of a stand mixer. Add oil, sugar, salt and yeast and mix with a wire whisk until blended evenly, 1 minute. Add flour, then blend with the dough hook until a dough ball is formed, about 15 minutes. (Knead dough by hand to form dough ball if needed.) Portion into smaller dough balls and lightly spray with cooking spray. Individually wrap dough balls tightly in plastic wrap. Refrigerate for 24 to 48 hours. Refrigerate for 24 to 48 hours.
  • For the sauce: Mix the unpeeled and peeled ground tomatoes together with the basil, oregano, marjoram, sugar and garlic in a large container. Refrigerate for 24 to 48 hours to allow flavors to release and blend.
  • For the pizza: Preheat the oven to 550 degrees F.
  • Coat a dough ball in flour and cornmeal and hand toss to an 18-inch diameter. Evenly distribute ten 1-ounce portions ricotta around dough. Evenly spread blue cheese crumbles around dough. Evenly spread shredded mozzarella over ricotta and blue cheese, leaving a 1-inch border empty for the crust. Top mozzarella with shredded chicken and shredded pepperoni. Slowly pour hot sauce over the whole pizza in a spiral to make sure that there is not too much sauce in one place. Bake until crust is golden brown, about 10 minutes. Evenly pour blue cheese dressing and additional hot sauce over hot pizza. Cut into 8 even slices and enjoy.

GUY FIERI'S CUBAN PIE ALLA MUNEE

Absolutely crazy insane delicious. I didn't bother with making a pie crust. A Pillsbury fresh frozen one worked just fine. The Mojo sauce had mixed reviews in the family. I didn't care for it but the hubby thought it was ok and the daughter liked it. In addition, I used a pulled pork from a tub that had a very light, mild and sweet bbq sauce to it. I also used a bit more swiss cheese -- ok we like cheese. We didn't bother with the tomato and pickle decoration either. It smelled so good and look so good coming out of the oven there was no time for that. Enjoy! It's awesome!

2 dill pickles, thin sliced
1 tomatoes, thin sliced
1 1/2 cups sour cream
1 tablespoon garlic, minced
4 tablespoons lime juice
4 tablespoons orange juice
1 teaspoon dried oregano

  • Mojo Sour cream (Alla Munee) Directions:.
  • Mix in bowl and refrigerate for 1 hour.
  • Cuban Pie Crust Directions:
  • Sift together flour and salt into medium bowl.
  • Gently blend shortening into flour until mixture is crumbly.
  • Stir in just enough cold water to keep it all together.
  • Knead or process until smooth ball is formed, as little work as possible.
  • Roll in a ball and refrigerate for 1 hour.
  • Remove, divide into 2 equal balls and roll out to 9-inches.
  • Preheat oven to 450 degrees F.
  • Drape crust into pie tin, poke with a fork and cover with waxed paper.
  • Fill bottom with dried beans and bake pie shell for 10 minutes or until crust lightly browns.
  • Remove and cool before filling.
  • Sofrito Directions:.
  • Add oil to a medium saute pan over medium heat. Add onions, peppers, and garlic, cook until translucent, but do not brown.
  • Add tomatoes, cook for 3 to 5 minutes.
  • Remove pan from heat and hold to add to pork.
  • Pie Filling Directions:
  • Preheat oven to 350 degrees F.
  • Add 2 ounces of the Swiss cheese to pre-cooked pie shell, add pulled pork on top of Swiss cheese.
  • Top pulled pork with sofrito mixture.
  • Add remaining Swiss on top of pork.
  • Lay sliced ham on top of Swiss cheese.
  • Mix together the heavy cream and mustard and pour on top of ham and then top with Parmesan.
  • Add pie crust to top, wrap aluminum foil around edges of pie crust, and bake for 25 minutes.
  • Remove pie from oven, let cool and set for 5 minutes.
  • Add sliced pickles to the center of the pie, starting at the center and fanning the pickles in the middle.
  • Add sliced tomatoes to the outside ring of the edge of the pie, overlapping the pickles in the center.
  • Cut pie and serve with dollop of Mojo Sour cream.
