CUBANO PIES AS MADE BY VIVIAN HERNANDEZ-JACKSON RECIPE BY TASTY
Celebrate Latinx Heritage Month with a rich, tangy, crunchy Cubano pie as made by bakery owner Vivian Hernandez-Jackson. Pickles, Cuban-style roasted pork, and a crunchy pastry shell make this a perfect, portable pastry.

Steps:
- Make the Cuban-style pork: Preheat the oven to 300°F (150°C).
- In a small bowl, mix together the cumin, oregano, salt, and Sazón.
- Place the pork shoulder in a 9 x 13-inch (22 x 33 c,m) ( baking dish. Sprinkle the spice mixture all over, then pour the mojo marinade and water on top.
- Cover the baking dish tightly with foil. Transfer the pork to the oven and bake for 10 hours, until extremely tender and the liquid has reduced.
- Drain the liquid from the pan into a bowl and set aside. Using 2 forks, shred the pork, discarding any fatty bits. Pour the reserved braising liquid over the pork and toss until well combined. You should have about 4 cups. The pork will keep in an airtight container in the refrigerator until ready to use, up to 4 days.
- Make the cubano pies: Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper.
- Lay 1 sheet of puff pastry on a clean surface and use a knife or pizza cutter to mark 9 squares.
- Scoop 3 heaping tablespoons of Cuban-style pork onto each square (save the leftover pork for another use). Top each portion with 2 pickle slices, a drizzle of yellow mustard, and a half slice of Swiss cheese.
- Gently lay the remaining sheet of puff pastry over the pork mounds. Use your fingers to press the dough together around the edges, then between the squares. Using a knife or pizza cutter, cut through to make 9 individual squares.
- Transfer the pies to the prepared baking sheets. Brush the tops with the beaten egg.
- Bake for 25-35 minutes, until deep golden brown and firm.
- Meanwhile, combine the water, sugar, and cinnamon stick in a small saucepan. Bring to a boil over medium-high heat and cook for 3 minutes, until the sugar is fully dissolved. Remove the pot from the heat.
- Remove the Cubano pies from the oven and immediately brush with the cinnamon syrup. Serve warm.

TAMPA CUBAN SANDWICH

- Prepare the pork: Cut small slits all over the meat with a knife and put skin-side down in a roasting pan. Mix the lime juice and orange juice in a measuring cup. Transfer 1/4 cup juice mixture to a food processor; add the garlic, oregano, 1/2 teaspoon salt and 1/4 teaspoon pepper and pulse to make a paste. Rub over the pork and into the slits. Pour the remaining 3/4 cup juice over the pork; press the bay leaves on top. Cover and refrigerate 3 to 6 hours.
- Preheat the oven to 350 degrees F. Turn the pork skin-side up and roast until a thermometer inserted into the middle registers 160 degrees F, about 2 hours, 30 minutes. Cool completely before slicing. (Refrigerate leftover pork in an airtight container up to 1 week.)
- Make the sandwich: Cut the bread in half lengthwise. Layer the ham, 3 thin slices roast pork, the salami, cheese and pickles on the bottom half. Spread the mustard on the inside of the top half. Heat a nonstick skillet over medium heat. Butter the outside of the sandwich, then add to the pan and put a heavy skillet on top to weigh it down; cook until golden, 3 to 4 minutes per side (or cook in a sandwich press). Cut in half on the diagonal.
- In any Cuban sandwich, mojo-marinated pork is key. Look for bottled marinade in Latin markets, or try this recipe from Tampa's legendary Columbia Restaurant.
CUBANO IN A BLANKET
Steps:
- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Cut the ham slices into strips about 1 1/2 inches by 4 inches. Cut the cheese slices into strips about 1 1/2 inches by 3 inches.
- Separate the dough into triangles, then slice each triangle in half lengthwise so you have 32 triangles. Place a slice of ham onto each triangle. Brush the ham with a little mustard. Place a slice of cheese on each ham slice, then a cocktail frank and finally a sliced gherkin. Roll up each starting at the wide end of the triangle and rolling towards the small tapered end. Place on a lined baking sheet with the small tapered end on the bottom.
- Bake until golden brown, 12 to 15 minutes. Let rest for a few minutes before serving. Serve with mustard for dipping.
GUY FIERI'S CUBAN PIE ALLA MUNEE
Absolutely crazy insane delicious. I didn't bother with making a pie crust. A Pillsbury fresh frozen one worked just fine. The Mojo sauce had mixed reviews in the family. I didn't care for it but the hubby thought it was ok and the daughter liked it. In addition, I used a pulled pork from a tub that had a very light, mild and sweet bbq sauce to it. I also used a bit more swiss cheese -- ok we like cheese. We didn't bother with the tomato and pickle decoration either. It smelled so good and look so good coming out of the oven there was no time for that. Enjoy! It's awesome!

- Mojo Sour cream (Alla Munee) Directions:.
- Mix in bowl and refrigerate for 1 hour.
- Cuban Pie Crust Directions:
- Sift together flour and salt into medium bowl.
- Gently blend shortening into flour until mixture is crumbly.
- Stir in just enough cold water to keep it all together.
- Knead or process until smooth ball is formed, as little work as possible.
- Roll in a ball and refrigerate for 1 hour.
- Remove, divide into 2 equal balls and roll out to 9-inches.
- Preheat oven to 450 degrees F.
- Drape crust into pie tin, poke with a fork and cover with waxed paper.
- Fill bottom with dried beans and bake pie shell for 10 minutes or until crust lightly browns.
- Remove and cool before filling.
- Sofrito Directions:.
- Add oil to a medium saute pan over medium heat. Add onions, peppers, and garlic, cook until translucent, but do not brown.
- Add tomatoes, cook for 3 to 5 minutes.
- Remove pan from heat and hold to add to pork.
- Pie Filling Directions:
- Preheat oven to 350 degrees F.
- Add 2 ounces of the Swiss cheese to pre-cooked pie shell, add pulled pork on top of Swiss cheese.
- Top pulled pork with sofrito mixture.
- Add remaining Swiss on top of pork.
- Lay sliced ham on top of Swiss cheese.
- Mix together the heavy cream and mustard and pour on top of ham and then top with Parmesan.
- Add pie crust to top, wrap aluminum foil around edges of pie crust, and bake for 25 minutes.
- Remove pie from oven, let cool and set for 5 minutes.
- Add sliced pickles to the center of the pie, starting at the center and fanning the pickles in the middle.
- Add sliced tomatoes to the outside ring of the edge of the pie, overlapping the pickles in the center.
- Cut pie and serve with dollop of Mojo Sour cream.

- In a large bowl, sift together the flour, salt, baking powder, and sugar and whisk to combine.
- Add the corn oil and whisk until well combined.
- In a liquid measuring cup or small bowl, lightly beat together the eggs. Add the milk.
- Gradually add the egg mixture to the dry ingredients. Mix until the dough begins to come together in a ball.
- Transfer the dough to a lightly floured surface and knead for 10 minutes, until smooth.
- Place the dough in a floured bowl. Cover with a kitchen towel or plastic wrap and let it rest for 45 minutes, or until dough has nearly doubled in size.
- Roll the dough into about 25 smaller balls, or fewer if you prefer larger pasteles. Transfer to a baking sheet and cover with a kitchen towel so the dough balls don't dry out as you roll them out.
- Working 1 at a time, roll each dough ball out into ⅛-inch (3 mm) thick ovals. Use an inverted bowl to cut out circles about 4-5 inches (10-13 cm) in diameter. Discard the dough scraps.
- Add about a tablespoon of Oaxaca cheese to the center of each circle. Lightly wet the edge of the dough with water, then fold in half and seal using the repulgue technique or an empanada mold cutter.
- Fill a large pot with canola oil and heat to 360°F (182°C).
- Add several pasteles at a time to the hot oil and fry for about 5 minutes, or until crisp and golden brown. Drain on paper towels.
- Dust the hot pasteles with powdered sugar. Serve with api, if desired.

- Preheat the oven to 325°F (160°C). Line 2 baking sheets with parchment paper.
- Sprinkle 1½ cups (300 G) sugar onto a clean surface, about 5 inches larger all around than the sheet of puff pastry.
- Place the puff pastry over the sugar and sprinkle the remaining 1½ cups (300 G) sugar on top.
- Gently press the sugar into the dough, then use a rolling pin to roll out the pastry to a 24 x 14-inch rectangle.
- Using a knife or pizza cutter, cut the pastry into 9 equal squares.
- Add the cream cheese to a piping bag fitted with a ¾-inch round tip.
- Pipe the cream cheese diagonally onto the center of each pastry square.
- Bring one corner of the dough diagonally over the cream cheese to meet the opposite corner, then roll up into a log. Divide the pastelitos between the prepared baking sheets, making sure the seams are on the bottom so the pastelitos do not unroll during baking.

- Cook the sweet potatoes in a large pot of boiling water until fork-tender, about 25-30 minutes. Drain and let cool completely.
- Preheat the oven to 365˚F (185˚C).
- Peel the sweet potatoes, then transfer to a large bowl and mash thoroughly with an electric hand mixer or fork.
- Add the melted butter, sugar, nutmeg, cinnamon, and salt. Beat to combine, then scrape down the sides of the bowl with a rubber spatula. Add the eggs, 1 at a time, beating to incorporate each addition. Add the self-rising flour, buttermilk, vanilla, and lemon extract, and beat to combine.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Remove dough from the can and roll out into a 9x16-inch rectangle. Cut into 4 equal rectangles.
- Place 1 rectangle horizontally on a work surface. Brush mustard over the surface, leaving a 1/2-inch border. Arrange ham, pork, salami, Swiss cheese, and 2 pickle chips, in that order, on the left side of the rectangle. Leave the border and right side of the dough exposed.
- Whisk egg and milk together to make an egg wash. Brush around the border. Fold the right side over the filling and press to seal; crimp the edges with a fork. Cut a few small slits in the top of the hand pie to vent. Brush some egg wash over the top.
