GUINNESS GINGERBREAD

Guinness Gingerbread image

Provided by Nigella Lawson : Food Network

Time 55m

Yield 24 small, squat squares or 16 generous rectangular slabs

Number Of Ingredients 12

1 1/4 sticks 10 (tablespoons) butter, plus some for greasing
1 cup golden syrup (such as Lyle's)
1 cup (packed) plus 2 tablespoons dark brown sugar
1 cup stout (such as Guinness)
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
2 cups all-purpose flour
2 teaspoons baking soda
1 1/4 cups sour cream
2 eggs
1 rectangular aluminium foil pan or cake pan, approximately 13 by 9 by 2-inches

Steps:

  • Preheat your oven to 325 degrees F. Line your cake pan with aluminium foil and grease it, or grease your foil tray.
  • Put the butter, syrup, dark brown sugar, stout, ginger, cinnamon and ground cloves into a pan and melt gently over a low heat.
  • Take off the heat and whisk in the flour and baking soda. You will need to be patient and whisk thoroughly to get rid of any lumps.
  • Whisk the sour cream and eggs together in a measuring jug and then beat into the gingerbread mixture, whisking again to get a smooth batter.
  • Pour this into your cake/foil pan, and bake for about 45 minutes; when it's ready it will be gleamingly risen at the centre, and coming away from the pan at the sides.
  • Let the gingerbread cool before cutting into slices or squares.

GUINNESS BREAD

Guinness Bread image

Meet Guinness soda bread in a super-easy and delicious recipe you will want to make over and over.

Provided by Elaine Lemm

Categories     Bread

Time 55m

Yield 10

Number Of Ingredients 9

5 1/2 cups all-purpose flour (plain, wholemeal)
1 1/4 cups all-purpose flour (plain, white)
1/2 cup oatmeal
2 1/2 teaspoons bread soda
2 1/2 tablespoons brown sugar
1/4 cup unsalted butter
2 cups milk
3/4 cups black treacle (molasses)
1/2 pint draught Guinness (see note)

Steps:

  • Place all the dry ingredients into a large mixing bowl.
  • Add the butter and rub into the dry ingredients until it resembles fine breadcrumbs - I recommend working quickly as the mixture can easily become greasy if over mixed, or mixed using too warm hands.
  • Add the milk, black treacle molasses, and the Guinness.
  • Mix to create a wet dough.
  • Grease a standard loaf tin, add the wet dough and bake in the oven for 40 - 45 mins or until the bread is well risen and thoroughly cooked.
  • Leave for 10 minutes in the tin, then turn out onto a wire rack to cool.
  • Eat while slightly warm if you like, or allow to go completely cold. Delicious with salty butty and Irish smoked salmon, cold meats or cheeses. The recipe comes courtesy of the home of Guinness, the Guinness Storehouse in Dublin, Ireland. The storehouse was a fermentation plant for 84 years but is now a 7-story visitor center.

GUINNESS FRENCH ONION SOUP

Guinness French Onion Soup image

Guinness French Onion Soup is loaded with caramelized onions, beef broth, and Guinness beer and topped with toasted bread and gooey cheese.

Provided by Catalina Castravet

Categories     Soup

Time 2h

Number Of Ingredients 16

2 tablespoons butter
2 tablespoons olive oil
4 pounds onions (sliced)
2 cloves garlic (minced)
1 teaspoon fresh thyme (chopped)
2 tablespoons brown sugar
2 tablespoons butter
1/4 cup all-purpose flour
3 cups Guinness beer (or other Stout)

2 teaspoons Worcestershire sauce
1 tablespoon grainy mustard
2 bay leaves
salt and pepper to taste
6 slices baguette (1/2 inch thick and day old, toasted)
1 cup white cheddar (shredded)

Steps:

  • Place a large saucepan over medium heat and add the butter and olive oil.
  • Once the butter has melted add the onions and cook until completely caramelized and golden brown, stirring from time to time for about 1 hour. Also, add a bit of water or Guinness to deglaze the pan as needed to prevent burning.
  • Next, add the garlic, brown sugar, and thyme. Cook until fragrant, about a minute.
  • Add the butter, let it melt, sprinkle and mix in the flour and let it cook for 2-4 minutes.
  • Add the beer and deglaze the pan.

  • Finally, ladle the soup into oven-proof bowls and arrange them onto a baking sheet.
  • Top with the sliced bread and sprinkle cheese on top, broil until cheese melts, about 1-3 minutes. Serve.
