PORK TENDERLOIN WITH CHARRED TOMATO-JALAPENO SALSA

Vegetable oil, for grilling
2 medium tomatoes, cored
1 jalapeno pepper
1 small onion wedge, with root end attached
2 tablespoons chopped fresh cilantro, plus sprigs for garnish
1 clove garlic, minced
Kosher salt and freshly ground pepper
2 pork tenderloins (about 1 pound each)
1 teaspoon chipotle chile powder

Steps:

  • 1. Prepare a grill for high heat cooking. Brush the grill grate with oil. Grill the tomatoes, jalapeno, and onion, turning frequently, until the vegetables are charred all over. When cool enough to handle, stem and seed the jalapeno (leave the seeds in for a hotter salsa), and trim the root end from the onion. Chop the vegetables with a knife or pulse them briefly in a food processor. Stir in the cilantro, garlic, and salt and pepper to taste.
  • 2. Meanwhile, brush the pork with oil and sprinkle with chile powder, salt, and pepper. Grill the pork, turning occasionally, until an instant-read thermometer inserted into the thickest part of the pork registers 145 degrees F, 20 to 25 minutes. Transfer the pork to a cutting board and let rest 10 minutes. Slice the pork and serve with the salsa.

2 pork tenderloins
Glaze:
1 tablespoon vegetable oil
1/4 cup onion, finely minced
1 garlic clove
7 oz guava paste*
1/2 cup water
1 tablespoon soy sauce
1 tablespoon ketchup
1t red pepper flakes
Salsa:
1/2 c fresh cilantro, chopped
1/4 c vegetable oil
1/4 c white wine vinegar
1/4 c white onion, minced
2 jalapenos, minced
*Available at Latino markets or specialty food stores. (Goya Brand is what I find in South Texas.)

Steps:

  • Preheat grill for pork tenderloins. Glaze: Heat the oil in a small saucepan. Add onion and garlic and cook over moderate heat until softened. Reduce the heat to low and add the guava paste and water and cook, stirring, until the paste has dissolved. Stir in the soy sauce, ketchup and red pepper flakes. Season with salt. (Can be prepared ahead.) Salsa: In a bowl, mix the ingredients and season with salt. Grill: Grill the pork tenderloins over moderate heat -- when almost done, brush with some of the glaze until browned on all sides and cooked through. Transfer the pork to a platter and cover loosely with foil -- let stand for 10 minutes. To Serve: Brush pork with remaining glaze and then thinly slice pork. Overlap on plate garnishing with fresh cilantro sprigs and salsa.

2 tablespoons garlic, minced
1 cup onion, minced
1/4 cup dry sherry
1 (18-ounce) can guava marmalade
1 (8-ounce) can tomato salsa
4 tablespoons dark corn syrup
3 tablespoons white vinegar

Steps:

  • For the Guava Glaze:
  • Combine all ingredients and simmer in a large saucepan for 2 hours at very low heat.
  • For the Pork Loin:
  • Season pork loin with Adobo and stuff with the garlic cloves. Bake in a preheated 350 degree oven for 18 minutes per pound. When meat is nearly fully cooked, baste with guava glaze and cook for another 5 to 10 minutes. Place on a serving platter.

1/4 cup freshly squeezed orange juice
Salt and freshly ground pepper
2 tablespoons canola oil
1 small red onion, finely chopped
4 cloves garlic, finely chopped
1/2 cup fresh lime juice
3 cups freshly squeezed orange juice
1/2 habanero chile, seeded and finely chopped
2 tablespoons chopped fresh cilantro leaves
1 teaspoon cumin seeds
Salt and freshly ground pepper

Steps:

  • Preheat a grill to high.
  • Brush pork with oil, and then season it with salt and pepper. Set aside a few tablespoons of the Guava Glaze for brushing the cooked pork. Grill for 4 to 5 minutes per side, brushing frequently with the Guava Glaze. Remove from the grill, brush again with glaze and let rest for 10 minutes. Slice into 1/2-inch thick slices, drizzle with the Orange-Habanero Mojo, and serve immediately.
  • Whisk jelly, mustard, and orange juice together in a small bowl. Season, to taste, with salt and pepper.
  • Heat oil in a small saucepan over medium-high heat. Add onion and garlic and cook, stirring, until soft, about 5 minutes. Add lime juice, orange juice, and habanero chile and bring to a boil. Cook until reduced by half. Whisk in the cilantro and cumin and season, to taste, with salt and pepper. Drizzle over pork.

For the glaze:
1 cup guava jelly (available at Latin and Caribbean markets) or apricot jam
1/4 cup Dijon mustard
1/4 cup orange juice, preferably fresh
Salt and freshly ground black pepper
For the mojo:
2 tablespoons mild vegetable oil, such as canola
1 small red onion, finely chopped
4 cloves garlic, finely chopped
3 cups orange juice
1/2 cup fresh lime juice
1/2 habanero chile, seeded and finely chopped
2 tablespoons chopped fresh cilantro leaves
1 teaspoon cumin seeds
Salt and freshly ground black pepper
For the pork:
2 pork tenderloins, about 1 1/2 pounds each
2 tablespoons mild vegetable oil, such as canola
Salt and freshly ground black pepper

Steps:

  • Make the glaze:
  • Whisk the ingredients together and season to taste with salt and pepper. (The glaze can be made a few days in advance, covered, and kept refrigerated. Bring to room temperature before using.)
  • Make the mojo:
  • Heat the oil in a saucepan over medium-high heat. Add the onion and garlic and cook, stirring, until soft, about 5 minutes; do not brown. Add the orange juice, lime juice, and habanero and bring to a boil. Cook until reduced by half. Whisk in the cilantro and cumin and season to taste with salt and pepper. (The mojo can be made a few hours in advance and set aside at room temperature.)
  • Make the pork:
  • 1. Heat your grill to high. Set aside a few tablespoons of glaze for brushing the cooked pork.
  • 2. Brush the pork with the oil and sprinkle with salt and pepper. Grill, brushing often with the glaze, until just cooked through, 4 to 5 minutes per side.
  • 3. Remove the pork from the grill, brush with the reserved glaze, and let rest for 10 minutes. Cut into 1/2-inch-thick slices and arrange on a serving platter. Drizzle with mojo and serve immediately.
