JOCON DE POLLO (GUATEMALAN CHICKEN WITH TOMATILLO)



Jocon de Pollo (Guatemalan Chicken with Tomatillo) image

This recipe is popular with the Mayan population of Guatemalan. If you can' find pumpkin seeds, just use twice the amount of sesame seeds.

2 1/2 - 3 lb chicken thighs
4 c water
2 tsp salt
1/4 c pumpkin seeks (pepitas)
1/4 c sesame seeds
2 corn tortillas, chopped, soaked in water, drained
1 c tomatillos, hulled and chopped
1 bunch cilantro, chopped
1 bunch green onions, chopped
1-3` jalapeno peppers, chopped

Steps:

  • 1. Place the chicken, water and salt into a large pot over medium-high flame. Bring to a boil, reduce heat to medium-low and simmer for 30 minutes to 1 hour.
  • 2. Remove the chicken to a bowl and strain and set aside the broth. Let chicken cool, then shred it with your fingers. Set aside.
  • 3. Heat a dry skillet over medium flame. Add the pumpkin and sesame seeds and toast, stirring, until lightly browned. Remove to a coffee grinder and grind to a fine powder.
  • 4. Add the sesame and pumpkin seeds, tortillas, tomatillos, cilantro, scallions and chile peppers to a food processor or blender. Add 1 cup of the reserved broth and process until smooth. If using a blender you may have to do this step in batches.
  • 5. Return the chicken to the pot. Pour over pureed sauce and add 1 to 1 1/2 cups of the remaining broth to give it a sauce-like consistency.
  • 6. Heat over medium-low flame and simmer for an additional 15-25 minutes. Adjust seasoning and serve.

1⁄4 cup pumpkin seeds, toasted
2 tablespoons cup sesame seeds, toasted
2 pounds skinless chicken thighs
1 pound of fresh tomatillos, husked (8-10) or 1 11­oz cans of tomatillos, drained
1/2 bunch of cilantro, washed and roughly chopped
3 tablespoons olive oil or other cooking oil
2 large garlic cloves, chopped
1 large green peppers, seeds and ribs removed and roughly chopped
1 medium white onion, roughly chopped
Salt and fresh ground pepper, to taste

Steps:

  • In a dry non-stick pan over medium toast pumpkin seeds, moving constantly for 3­5 minutes.
  • Add the sesame seeds and continue tossing for 2 more minutes until they are very lightly browned.
  • Remove from heat immediately so they don't continue browning.
  • Put toasted pumpkin seeds and toasted sesame seeds into a blender and pulse on "puree" for 5 or 10 seconds, until they are ground. (You may need to stir a bit between pulses) Scrape into a small bowl or cup, and set aside. (no need to wash blender ­ you will use it again soon)
  • Place chicken and fresh tomatillos in a large pot with 5 -6 cups of PUR filtered water(enough to just cover). Add 2 teaspoons of salt and bring to a boil. Lower the heat and simmer for 30 minutes, or until chicken is cooked through.
  • Add 3 tablespoons of oil to a large sauté pan. Sauté the garlic, green pepper and onion stirring frequently, until the onion starts to brown and the green peppers are softened. Remove from heat.
  • With a slotted spoon remove the chicken from the pot and set aside.
  • Remove tomatillos from the broth and transfer to the blender.
  • Add cilantro, 1 1/2 cup of the strained chicken broth to and green pepper and onion mixture to the blender. Puree for about 20 seconds until smooth.
  • Pour the sauce into a pot and add ground seeds to the pot and 2 more cups of the broth. (Remaining broth will not be needed but you might want to use it to make rice to accompany the stew)
  • Bring contents of pot to a boil. Lower to a gentle simmer and cook, uncovered for 10 minutes to thicken the sauce. Meanwhile, remove chicken from bones and shred (pull chicken apart using two forks. Refer to photo in BBQ Chicken Enchiladas).
  • Add shredded chicken to the thickened sauce along with salt and fresh pepper, to taste. Simmer gently for an additional 10 minutes.

I found this recipe from World Vision. It looks a little funny, but it tastes great! It takes a while to cook, but well worth the effort. You can make the chicken ahead to cut down on cooking time.

3 lbs chicken, chopped
4 cups water
2 teaspoons salt
1/4 cup sesame seeds
1/4 cup pumpkin seeds
1 bunch cilantro, chopped
1 bunch scallion, chopped
1 cup tomatillo, hulled and chopped
2 chilies, chopped
2 corn tortillas, chopped, soaked in water and drained

Steps:

  • Put chicken in a large pot with the water and salt.
  • Bring to a boil, reduce heat, and simmer slowly for 30 minutes to 1 hour.
  • Remove chicken to a bowl, strain and set aside the broth.
  • Let chicken cool and shred. Set aside.
  • Toast the sesame and pumpkin seeds in a dry skillet over medium heat till lightly browned, stirring frequently.
  • Put seeds in a coffee grinder or food processor and grind to a fine powder.
  • Add sesame and pumpkin seed powder and all remaining ingredients to a food processor or blender. This will produce a green sauce.
  • Add 1 cup of the broth and process till smooth.
  • Return chicken to the large pot. Pour green sauce over the chicken and add 1 to 1 1/2 cups of remaining broth to bring to a sauce-like consistency.
  • Heat over medium-low heat and simmer an additional 15-25 minutes.
  • Serve with rice and tortillas.

  • Put the toasted pumpkin and sesame seeds in a blender and pulse for 5 or 10 seconds, until finely ground. (You may need to stir a bit between pulses) Scrape them into a small bowl and set aside. No need to wash blender – you will use it again soon.
  • Put chicken and fresh tomatillos in a large pot with 2 teaspoons of salt and 9-10 cups of water, or enough to just cover them. (If using canned tomatillos, don’t add them to the pot. They’ll be used later). Bring to a boil, lower to a very gentle simmer and cook for 30 minutes. Using a slotted spoon, transfer chicken to a plate and scoop tomatillos into the blender. If using canned tomatillos, put them into the blender. Pour the broth through a strainer set over a large bowl. (you will need 4 cups of broth for the stew) Wipe out pot.
  • Add cilantro to the blender along with 1 cup of the strained chicken broth. Puree for 10-15 seconds. Pour the mixture into the pot. (keep blender out for one more use)
  • Heat 3 tablespoons of oil in a large sauté pan and cook garlic, jalapeño, green pepper and onion over medium heat for 10-12 minutes, stirring frequently, until they start to brown. Scrape them into the blender, add 1 more cup of strained broth and puree for 10-15 seconds. Pour mixture into the pot with the tomatillos and cilantro. Add the ground seeds to the pot and 2 more cups of strained broth. (Remaining broth will not be needed but you might want to use it to make rice to accompany the stew).
