1 red bell pepper (seeded and diced)
½ of a red onion (finely diced)
1 jalapeno (seeds and ribs removed, then minced)
1 can of black beans (drained and rinsed)
2 large mangoes (peeled and chopped)
1 ½ cups corn kernels
¼ cup chopped cilantro leaves
2 tablespoons olive oil
1 tablespoon lime juice
salt and pepper to taste
½ teaspoon ground cumin
½ teaspoon chili powder

Steps:

  • Place the bell pepper, onion, jalapeno, black beans, mango, corn, and cilantro in a large bowl.
  • In a small bowl whisk together the olive oil, lime juice, salt and pepper, cumin and chili powder.
  • Pour the dressing over the vegetable mixture and stir gently until thoroughly combined. Serve.

2 tbsp olive oil (extra virgin)
1 lime (juice of)

Steps:

1 1/2 cups organic black rice
1/2 teaspoon salt
1 large ripe mango, diced
1 small ripe avocado, diced or sliced
1/4 cup roasted almonds
1/2 cup chopped fresh cilantro
1/2 cup diced red onion
For the Vinaigrette:
1/4 cup freshly squeezed lime juice (about 3 limes)
1 1/2 tablespoons olive oil
1 teaspoon honey (agave nectar if vegan)
1/4 teaspoon Kosher salt
1 clove garlic, minced
2 tablespoons chopped fresh cilantro
salt and pepper to taste
lime wedges, to garnish

Steps:

  • Rinse rice in mesh strainer. Add to medium saucepan. Add 2 3/4 cups water and a pinch of salt; bring to a boil. Cover, reduce to a low simmer, and cook until rice is tender and water is absorbed, about 30-40 minutes. When rice is done cooking, remove from heat and transfer to a bowl. Cool for 10 minutes before adding dressing.
  • While rice is cooking prepare the dressing: Combine lime juice, olive oil, garlic, honey (or agave), cilantro, and salt in a food processor. Process for 15-30 seconds or until dressing is combined.
  • Once rice is done cooking and has cooled a bit, stir in dressing, cover bowl and place in fridge for an hour or until cool and you are ready to add in the rest of the salad ingredients.
  • Before serving, toss salad again with dressing and fold in cilantro, mango, and red onion. Pour into cold salad bowls and top with roasted almonds and avocado. Garnish with a lime wedge or extra cilantro if desired. Enjoy!

3-4 limes, juiced (or more if needed)
½ tsp chili powder
Salt & pepper, to taste

Steps:

  • Add your black beans, mango, corn, bell pepper, red onion and cilantro to a large bowl. Then squeeze your lime juice over the top and toss the salad until it's fully coated. Stir in your chili powder and season with salt and pepper to taste.
  • Then place your salad in the fridge to chill for at least one hour to chill. Right before serving, add your avocado and toss again. Serve immediately.

1 (14.5 oz) can low-sodium chicken broth
Salt
3 Tbsp extra-virgin olive oil
3 Tbsp fresh lime juice
2 tsp honey
1/2 tsp ground cumin
1/4 tsp ground ginger
1/4 tsp cayenne pepper ((optional))
1 can black beans, (drained and rinsed)
1 medium mango, (peeled, cored and diced)
1 red bell pepper, (cored and chopped)
1/2 cup sliced green onions
1/3 cup chopped cilantro
1 medium avocado ((semi-firm but ripe), cored and diced)

Steps:

  • Rinse quinoa well in a fine mesh strainer. Transfer to a medium saucepan along with chicken broth and 1/4 cup water and season lightly with salt to taste. Bring to a boil then reduce heat to low and simmer until water has been absorbed, about 15 - 20 minutes. Let cool*.
