PEMMICAN-STYLE GROUND MEAT JERKY



Pemmican-style Ground Meat Jerky image

I like to grind the meat and fat for this right before making the jerky, but any ground venison will do. You will want at least a little fat in the grind, however, because otherwise the jerky will be pretty crumbly and dry. If you don't use bacon, you will want to increase the salt to 25 grams. And if you have smoked salt, you will want to use it.

1 ¾ pounds venison
¼ pound bacon
1 cup dried cranberries or other berries
18 grams salt, (about 1 tablespoon)
3 grams Instacure No. 1, (about ½ teaspoon)
2 teaspoons ground black pepper
½ teaspoon ground mace or nutmeg
1 tablespoon onion powder
1 tablespoon of paprika, (smoked if possible)
2 to 3 tablespoons sugar
¼ cup water

Steps:

  • Grind the venison, bacon and dried cranberries through the fine die of your grinder. If you are using pre-ground venison, chop the dried cranberries well and add them to the ground meat. Put the meat and cranberries in a large bowl and add all the remaining ingredients. Mix well with your (very clean) hands until everything comes together and starts to stick to itself.
  • If you have a vacuum sealer, seal the mixture and set in the fridge for 24 to 48 hours. If you don't, pack the meat mixture into a lidded container and press some plastic wrap directly onto the surface and let it sit that way.
  • The next day, separate the mixture into two or three chunks, depending on how big your jerky gun is. Pack it in and squeeze out lengths of jerky onto your dehydrator trays. Make sure they are separated from each other. Dehydrate at 150°F until the meat is mostly dry, but still chewy. If you don't have a dehydrator, you can smoke-dry it in your smoker, or in an oven set to "warm," with the door slightly ajar. In both of these cases, you want to keep the temperature as close to 150°F as you can.
  • This sort of jerky doesn't keep as long as traditional jerky because of the fat content. But it will keep for several weeks in the fridge, and it freezes well.

2 pounds lean ground venison or beef
2 ½ teaspoons salt
2 teaspoons monosodium glutamate (MSG)
1 teaspoon hot pepper sauce
2 teaspoons sugar-based curing mixture (such as Morton® Tender Quick®)
1 ½ teaspoons barbeque seasoning
2 teaspoons water
2 teaspoons hickory-flavored liquid smoke
2 teaspoons garlic powder
½ teaspoon pepper

Steps:

  • In a large bowl, combine ground venison, salt, MSG, hot sauce, curing mixture, barbeque seasoning, water, liquid smoke, garlic powder, and pepper; mix thoroughly. Cover, and refrigerate for 2 hours.
  • Line food dehydrator trays with plastic wrap. Pat meat mixture into a very thin layer on the trays. Place in dehydrator set according to manufacturers directions. Once the meat has firmed up, after about the first 2 hours, remove it from the plastic, cut into strips, and replace onto the racks. Continue until the meat is done drying, about 5 to 10 hours total depending on machine.
  • When finished, blot off any grease with a paper towel. Store in the refrigerator in a jar with a tight fitting lid.

2 lbs lean ground beef
2 lbs ground turkey or 2 lbs ground venison
2 teaspoons onion powder
2 teaspoons garlic powder
1/4 cup brown sugar (I like a sweetness to mine) (optional)
1/2 teaspoon hot pepper sauce (to taste)
8 tablespoons Worcestershire sauce
8 tablespoons soy sauce
4 tablespoons ketchup
4 teaspoons kosher salt

Steps:

  • Mix the beef/turkey and all the ingredients in a large glass bowl, then cover it with plastic wrap and left it to refrigerate/marinate for about 4-5 hours.
  • Using your Jerky Gun, fill your dehydrator racks, careful not too overlap the slices.
  • After all the raw jerky slabs placed onto my trays run the dehydrator for about 8-10 hours at 145 degrees. The last hour periodically check on the consistency of the jerky. The edges will be the first to dry out. When the center still had a tiny bit of "softness" to it seems to be the consistency that is perfect to me. For a tougher jerky, of course, cook longer and just keep checking. Take a piece out and let it cool and see what you think about the consistency. When the jerky is cooled, it tends to stiffen up a bit. So, keep testing until you find your perfect "bite".
  • The final count all depends on what length of jerky slabs you make. If you made your pieces about 6-7 inches long, you could get about 70 (give or a take) pieces. If you choose to go for the longer (11 inches), you should end up with about 40ish pieces. That's alot of jerky!
  • Note~ Don't have a dehydrator, no prob. Just place jerky on baking sheets and stick in a 150-170 degree oven for 8-12 hours. Flipping over every couple of hours. If you have a cooling rack that will fit on top of your baking sheet, that is even better as this will allow the heat to evenly cook the meat where you would not have to flip the jerky. Place a wooden spoon in the oven door, as to prop it open. This will help the drying process by allowing the moisture to escape. Your house will smell AMAZING too!

5 lbs 90% lean ground beef (90-92%)
4 1/2 teaspoons non-iodized salt
2 1/4 teaspoons Accent seasoning
3/4 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
2 1/4 tablespoons meat tenderizer
3/4 tablespoon pepper
3 tablespoons brown sugar
1/2 cup Worcestershire sauce
1/2 cup liquid smoke
1/3 cup ketchup

Steps:

  • Mix all spices with ground beef EXCEPT Worcestershire, liquid smoke and ketchup.
  • You need to really get your hands in to mix it well.
  • Press into strips with a jerky gun.
  • Mix Worcestershire, liquid smoke and ketchup in a shallow dish.
  • Coat strips with sauce.
  • Place on trays to dry.
  • Dry according to your dehydrator manufacturers instructions.
  • Other flavors as follows:.
  • Hot and spicy - mix Louisiana hot sauce with water to thin a bit. Coat strips and dry.
  • BBQ - thin your favorite bottled bbq sauce with water. Coat strips and dry.
  • Teriyaki - thin bottled teriyaki sauce with soya sauce. Coat strips and dry.

5 lbs ground beef or 5 lbs ground venison
2 tablespoons mortons tender quick salt
1/3 tablespoon fresh coarse ground black pepper
1/2 tablespoon garlic powder
1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 tablespoons brown sugar
1/2 tablespoon liquid smoke
1 teaspoon cayenne pepper

Steps:

  • Mix all ingredients. Pour over meat and mix well. Put it in the fridge overnight. I use a dehydrator and a jerky gun to dry the stuff as I've found this is the best way to make jerky. Usually takes about 7 hours to dry.

1 1/2 teaspoons Morton Tender Quick salt
8 teaspoons table salt
2 teaspoons black pepper
2 teaspoons garlic powder (can use extra)
1 teaspoon cayenne pepper
1 1/2 teaspoons ground cardamom
3 teaspoons Accent seasoning
2 tablespoons liquid smoke

Steps:

  • Mix all ingredients together extremely well.
  • Refrigerate for 3 days.
  • Mix well once every day.
  • Use a Jerky Gun to make strips and cook in a food dehydrator as directed by manufacture.

1 teaspoon liquid smoke
1 tablespoon A.1. Original Sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon fresh ground pepper
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 cup soy sauce
1/4 cup whiskey, i like seagram's 7 (optional)

Steps:

  • Take your meat to the local butcher and have it cut thin.
  • You can do this yourself by semi-freezing your meat then cut it into 1/4-inch strips.
  • Note: meat cut with the grain will be chewy, and against the grain will be tender.
  • Combine everything but the meat in a large bowl and stir well.
  • Marinate meat over night in the refrigerator, then drain.
  • To use a dehydrator place meat on racks, do not overlap, and let dry for 24-36 hours.
  • To use an oven, preheat to 150-degrees then place meat on cookie sheets without overlapping for 8-10 hours.
  • Turn at least once during drying.
  • They are ready when the jerky bends without breaking.
  • Let cool, seal tight, and refrigerate for long-term storage.

2 teaspoons canning salt
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon ground ginger
¼ teaspoon ground black pepper
1 pinch cayenne pepper, or to taste
1 pound extra lean ground beef

Steps:

  • Stir salt, chili powder, garlic powder, onion powder, ginger, black pepper, and cayenne pepper together in a large bowl; add ground beef and mix well.
  • Pass beef mixture through a meat grinder set with the finest blade.
  • Preheat oven to 250 degrees F (120 degrees C). Place wire-racks onto baking sheets.
  • Place 1/2 ground beef mixture between two sheets of heavy plastic on a solid, level surface. Firmly roll beef mixture to a thickness of 1/8 inch. Remove the top layer of plastic wrap, invert beef mixture onto prepared baking sheet, and remove the bottom layer of plastic wrap. Repeat for remaining beef mixture.
  • Bake beef mixture in the preheated oven with the oven door slightly ajar for 2 1/2 hours. Rotate the baking sheet. Bake until jerky is cooked through, another 3 hours. Remove jerky from oven and cut into strips while warm.
