EASY CHICKEN AND CHEESE BURGER PATTIES (GROUND CHICKEN OR TURKEY
These are very easy chicken & cheese burger patties. You can use either ground chicken or turkey meat. These grill up great outdoors on the BBQ or inside on the indoor grill. My husband and I love serving these on a bun coated with BBQ sauce & a handful of "French's" fried onions and we top them with a slice of american cheese too - they are perfect that way. PS: These are super to freeze, I make a fresh batch of either chicken or turkey & always freeze about 6 or so patties. I wrap them individually in Saran Wrap, then put all 6 either in a tupperware container or a large freezer zip-loc bag as in photo.

Steps:
- Take the 1/3 of small onion chopped & put in microwave safe bowl with a dash of olive oil & microwave for 1 minute.
- Combine onion with all remaining ingredients in large bowl then shape into 6 patties.
- Grill on BBQ or pan fry with 1 tablespoon vegetable oil (if you panfry, coat burger patties individually in additionaly 1/2 cup breadcrumbs then fry they are extra crispy & tasty :-) ) You could also bake these in oven.
GROUND TURKEY OR CHICKEN PATTIES
Simply spiced ground turkey or chicken made into patties with seasonings readily available in most pantries. I used Ritz crackers and minced sweet onion instead of the onion flakes. You can cook these patties up to 2 days before serving. Wrap in plastic wrap and refrigerate until ready to cook. When you want to serve, microwave on HIGH for 30 to 45 seconds. Originally from a Family Circle magazine clipping. Excellent served with French Toast and fruit for breakfast or brunch. I have also made these patties into a breakfast sandwich with a fried egg and slice of cheese on top of a toasted English muffin.

- In a large bowl, mix ground turkey or chicken, crushed crackers, onion flakes, poultry seasoning, garlic salt or garlic powder, thyme, and black pepper.
- Shape into six patties each about 1/2 inch thick and 3 inches in diameter or other size as desired. Adjust cooking time if changing size or thickness of patties.
- Heat oil in a large nonstick skillet over medium-high heat.
- Add patties and cook on all sides for a total of 10 minutes or until nicely browned and internal temperature reaches 160 degrees Fahrenheit on an instant-read thermometer. Or,cut into one cooked patty to make sure it is no longer pink inside.

- Combine chicken, onion, parsley, egg, garlic, sea salt, and pepper in a bowl; mix well. Add mayonnaise and stir to combine; the mixture will be quite soft.

GROUND CHICKEN/TURKEY KOFTA KEBABS
This is a light recipe that is awesome on the taste buds. It is very easy and quick to make and goes nicely along with couscous. You can play around with the vegetable ingredients till you get the right mixture, so those are estimates. I usually get a stir fry mix with peppers and onion and use 1 cup and mince it in a cuisine art chopper. I usually form them on metal skewers and remove them when cooking since my grill is too small.

- Preheat oven to 375 degrees F.
- Bake bacon on slotted broiler pan until crisp 15 to 20 minutes.
- Combine meat with paprika, poultry seasoning, grill seasoning, parsley and shallots. Mix well and form into 4 (1/2 pound) patties. Heat the extra-virgin olive oil in a large skillet over medium to medium-high heat. Cook meat patties 14 to 15 minutes, turning once.
- Mix buttermilk with the sour cream, garlic, lemon juice, hot sauce, chives, dill, salt and pepper, to taste.
- Split and toast rolls. Place burgers on bun bottoms and top with 2 slices bacon, lettuce, season tomatoes and set in place, arrange avocado on top of tomatoes. Top bun tops with buttermilk dressing and set in place.
HEALTHY CHICKEN/TURKEY BURGERS
I make these and double the recipe. I wrap each burger and lay on a cookie sheet till frozen then bag, they keep in the freezer about 3 months. It's a great recipe for when ground chicken or turkey is on sale.
