3/4 cup corn kernels
1/4 cup minced cilantro
1/2 cup grated Monterey Jack cheese

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat an 11- by 7-inch baking dish with cooking spray.
  • Heat the olive oil in a large nonstick skillet set over medium high heat. Add the ground turkey and onions. Cook, breaking up the turkey, until the turkey is just cooked through.
  • Add the garlic, cumin, chili powder, paprika, salt and pepper, and cook for 1 minute.
  • Remove from the heat and stir in the rice, diced green chiles, diced tomatoes, salsa, black beans, corn and cilantro. Stir to combine.
  • Transfer the mixture to the prepared baking dish. Sprinkle the cheese over top. Cook until heated through, about 20 minutes. Serve.

1/2 lb. orecchiette pasta (or any short pasta)
2 tablespoons olive oil (extra virgin; split)
1 lb. Honeysuckle White Ground Turkey Breast
1 small onion (peeled and diced)
8 oz. cremini mushrooms (sliced)
4 to 5 cups fresh spinach
2 cloves garlic (minced)
kosher salt
ground pepper (freshly cracked)
1 teaspoon red pepper flakes (optional )
Parmesan cheese (freshly grated)
fresh parsley (finely chopped )

Steps:

  • Bring water to a boil and cook the pasta until al dente, for about 10 minutes or according to package directions. Drain the pasta, reserving about a 1/2 cup of the pasta water. Set aside.
  • Meanwhile, heat 1 tablespoon olive oil in a large high-sided skillet or Dutch oven over medium high heat. Add the ground turkey breast and cook for about 5 minutes, breaking up the turkey meat. Add the onions and mushrooms and cook, stirring often, for about 7 to 8 minutes.
  • Add the spinach, garlic and cooked pasta into the saucepan and toss to combine and let the spinach wilt, for about 2 to 3 minutes. Pour in some of the reserved pasta water (start with just a 1/4 cup) if you need to loosen up the pasta. You may not need to add the pasta water. Season with salt, pepper, and the red pepper flakes if using. Serve immediately and garnish with the freshly grated Parmesan cheeses and the parsley. Enjoy!

1 teaspoon white sugar
1 (8 ounce) container sour cream

  • Preheat oven to 350 degrees F (175 degrees C).

  • Cook pasta al dente as per package instructions, undercooking by 4 minutes. Drain, reserving 1 cup of pasta water, and set aside. Preheat oven to 350 degrees F and spray 9 x 13 baking dish with cooking spray.
  • In the meanwhile, preheat large skillet on medium heat and add olive oil. Add onion and garlic, sauté for 2 - 3 minutes, stirring occasionally. Add oregano, rosemary, basil, pinch of red pepper flakes, salt and pepper. Cook for 30 seconds, stirring a few times. Add ground turkey and cook for another 5-7 minutes, breaking meat into pieces and stirring occasionally.

Greek Style Ground Turkey Skillet image

Delicious Greek Style Ground Turkey recipe features ground turkey and spinach cooked in a skillet with tomatoes, onions and garlic, with feta cheese, olives and lemon juice providing some good Greek flavors. Serve with orzo.

2 tbsp extra virgin olive oil
1 onion, chopped
1 colored bell pepper, chopped
2 cloves garlic, minced
1 lb ground turkey
¼ cup red wine
1 14.5 oz can chopped tomatoes
1 tsp dried oregano
¼ tsp cinnamon
1 tbs lemon juice
3 cups baby spinach
10 ozs orzo
1/4 cup feta cheese, plus additional for serving
8 olives, sliced

Steps:

  • Heat 1 tbsp olive oil in a large skillet on medium heat.
  • Add the onion, cook for 5 minutes.
  • Stir in the bell pepper. Cook for a few more minutes, then add the garlic and cook for one more minute.
  • Add the turkey, breaking it up with a heavy spoon. Stir to combine with the other ingredients, then stir in the red wine.
  • When the red wine has been absorbed after a minute or two, stir in the tomatoes, followed by the oregano and cinnamon. This is a good time to put on begin cooking the orzo to serve with the turkey spinach skillet.
  • Simmer the turkey and vegetable mixture for about 10 minutes, stirring occasionally.
  • Stir in the spinach, and cook for a few more minutes, until wilted. Stir in the lemon juice, olives and feta.
  • Drain the cooked orzo, and scoop a serving onto a plate. Scoop a serving of the turkey spinach skillet mixture over the orzo and enjoy! Alternatively, when the orzo is cooked you can stir the cooked pasta in with the turkey skillet mixture and combine it there, prior to plating.

1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1/2 cup reduced-fat mayonnaise
1/2 cup water
2 cups cubed cooked turkey breast
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3/4 cup uncooked instant brown rice
1 medium yellow summer squash, cubed
1/4 cup chopped red onion
1 teaspoon ground mustard
1/2 teaspoon dried parsley flakes
1/2 teaspoon garlic powder
1/8 teaspoon pepper
1/4 cup fat-free Parmesan cheese topping
1/8 teaspoon paprika

Steps:

  • In a large bowl, combine the soup, mayonnaise and water. Stir in the next nine ingredients. Transfer to a shallow 2-1/2-qt. baking dish coated with cooking spray. , Cover and bake at 350° for 35-40 minutes or until rice is tender. Uncover; sprinkle with cheese topping and paprika. Bake 5 minutes longer or until cheese is melted.

1 can chicken broth (14.5 ounces)
3 Tablespoons butter
3 cups stuffing mix
3 cups cooked and cubed (or shredded) turkey
2 cups fresh baby spinach (roughly chopped)
½ cup dried cranberries
¾ cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Spray an 11x7" baking pan with non-stick cooking spray.
  • In a large saucepan, bring broth and butter to a boil. Remove from heat.
  • Add in stuffing mix and stir together until all stuffing is moist.
  • Add in cooked turkey, chopped spinach, and cranberries.
  • Dump turkey and stuffing mixture into prepared pan. Sprinkle cheese on top.
  • Bake (uncovered) for 10-15 minutes or until cheese is melted.
