2 1/2 pounds ground pork
2 teaspoons ground coriander
2 teaspoons curry powder
2 teaspoons Worcestershire sauce
1 teaspoon cayenne pepper
3 scallions, chopped
2 large clove garlic, finely chopped
Salt and freshly ground black pepper
2 tablespoons olive oil
6 hamburger buns
1 head butter lettuce
2 to 3 tomatoes, sliced
Spicy Ketchup, recipe follows
1 clove garlic, minced
1 tablespoon butter
1 cup ketchup
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
1 scallion, finely chopped

Steps:

  • In a large bowl, using your hands mix together pork, coriander, curry powder, Worcestershire, cayenne, scallions and garlic, seasoning well with salt and pepper. Make 6 even patties and put in refrigerator until ready to cook. Heat a large fry pan over medium-high heat, add oil. Sear patties until golden brown on both sides and cooked through, about 5 minutes per side. Cook in batches, if necessary. Serve inside hamburger buns topped with lettuce leaf, tomato slice and spicy ketchup.
  • In a saucepan over medium heat, lightly saute garlic in butter, about 2 minutes. Add ketchup, red pepper flakes and cayenne pepper. Cook another 5 minutes. Remove from heat and stir in scallions. Cool before serving.

1 cup yellow onions, thinly sliced
1 teaspoon white pepper
2 teaspoons kosher salt, divided
12 ounces (80/20) ground beef
12 ounces ground pork
1 teaspoon black pepper
1/4 cup equal parts mayonnaise and mustard
1 teaspoon lemon juice
1 cup thinly shredded romaine hearts
12 slices cheese of choice (Gruyere, baby Swiss, or Gloucester)
12 petit buns (2 to 2 1/2 inches), toasted

Steps:

  • In a saute pan over high heat, add the butter, onions, white pepper and 1 teaspoon salt, and cook over high heat until the butter has melted. Reduce the heat to medium and finish cooking the onions until slightly browned on the edges, 7 to 8 minutes.
  • Mix the beef, pork, remaining 1 teaspoon salt, and black pepper in a bowl. Do not over mix or the burger will be too tightly bound. Portion the meat into 12 (2-ounce) balls, then flatten the balls into patties about 2 1/2 inches round.
  • Preheat a grill and grill the burgers for 4 to 5 minutes on each side, or until the internal temperature reaches 160 degrees F.
  • Combine the mayonnaise-mustard mixture with the lemon juice and shredded romaine. Top the bottom bun with the dressed lettuce, a burger, some caramelized onions, and cheese of choice. Add the top bun and serve.

1 cup thinly sliced scallions, white part only
1/2 cup minced garlic
1/4 cup minced ginger
1/2 cup sambal chili paste
1/2 cup soy sauce
1 cup finely chopped fresh cilantro
1/4 cup finely chopped fresh basil
Salt and black pepper
10 pounds ground pork
Brioche buns, for serving
Bangin' Sauce, recipe follows
Kimchi, recipe follows
100 shishito peppers, blistered
25 over-easy eggs
2 tablespoons gluten-free hoisin sauce
1 1/2 teaspoons sweet chili sauce
1 1/2 teaspoons fresh-squeezed lemon juice
1 1/2 teaspoons fresh-squeezed lime juice
1 1/2 teaspoons fresh-squeezed orange juice
2 1/2 cups mayonnaise
1 cup sriracha
One 2-pound Napa cabbage, cut into 1-inch pieces
Kosher salt
1/2 cup sambal chili paste
1/4 cup peeled and minced fresh ginger
1/4 cup fish sauce
1 tablespoon minced garlic cloves
1 1/2 teaspoons sugar
4 medium scallions, cut into 1-inch pieces

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the sesame oil in a large skillet. Add the scallions, garlic and ginger and saute until translucent. Add the sambal and cook, mixing constantly, for 30 seconds. Deglaze the pan with the soy sauce. Add the cilantro, basil, 2 tablespoons salt and 3 tablespoons pepper; remove from the heat.
  • Place the pork in a large bowl. Add the cooked mixture to the pork and mix well. Form into twenty-five 7-ounce patties. Place the patties on 2 baking sheets. Add 1 1/2 quarts of water to each baking sheet. Cover each baking sheet with a second baking sheet. Bake to medium rare, approximately 10 minutes. Refrigerate until cool, then store in a pan lined with paper towels.
  • When ready to serve, oil a hot flattop grill and sear the patties until caramelized on both sides and a thermometer inserted in the center reads 160 degrees F, about 30 seconds per side.
  • Toast the buns on the flat top. Spread 1 tablespoon of Bangin' Sauce on each side of the buns. Place 1/4 cup of Kimchi on the bottom buns. Add the grilled patties, then top each with 4 shishito peppers and an egg.
  • Combine the hoisin and sweet chili sauce in a small saucepan and bring to a boil. Remove from the heat; strain. Whisk in the lemon juice, lime juice and orange juice.
  • Combine the hoisin-juice mixture with the mayonnaise and sriracha in a bowl.
  • Place the cabbage in a large bowl, sprinkle with 1/2 cup kosher salt and toss with your hands until the cabbage is coated. Add enough cold water to just cover (about 12 cups), making sure the cabbage is submerged (it's OK if a few leaves break the surface). Cover with plastic wrap or a baking sheet and let sit at room temperature for at least 12 hours and up to 24 hours.
  • Drain the cabbage in a colander and rinse with cold water. Gently squeeze out the excess liquid and transfer to a medium bowl; set aside.
  • Place the sambal chili paste, ginger, fish sauce, garlic, sugar and scallions in a large bowl and stir to combine. Add the cabbage and toss with your hands until the cabbage is thoroughly coated. Pack into a clean 2-quart container with a tight-fitting lid. Let sit in a cool, dark place for 24 hours. (The mixture may bubble.) Open the jar to let the gases escape, then reseal and refrigerate at least 48 hours. (Kimchi is best after fermenting for about 1 week). Refrigerate for up to 1 month.

Well, I made these up using our favorite ingredients. Ground pork is sometimes less expensive than ground beef. We have also had this with ground turkey and ground chicken. Everyone who has had them says that they are moist and flavorful. They are also easy to make! I usually make 4, we eat 2 and I freeze 2 to cook later. Enjoy! Let me know what you think of these :) .

5 tablespoons Worcestershire sauce
1 garlic clove, crushed
1/2 cup onion, diced
1/2 tablespoon dried basil
1/2 tablespoon Season-All salt (or other favorite seasoning, like Lawry's)
0.25 (1 1/4 ounce) package dry onion soup mix (optional)

Steps:

  • Mix all of the ingredients in a bowl.

  • You have many choices on how to cook these!

  • Lastly, you could cook them on the stove for 5-10 minutes each, or until they are cooked throughly.
  • Serve on a bun, or by itself.

1 egg

2 burger buns

Steps:

  • Combine the pork mince, Cajun seasoning, breadcrumbs egg and a pinch of salt and pepper.
  • Shape the ground pork mixture into 2 evenly sized patties.
  • Preheat air fryer to 360°F/ 180°C.
  • Spray air fryer basket with oil.
  • Add patties to air fryer basket. Ensure they are not touching.
  • Air fry patties at 360°F/ 180°C for 10 minutes, until cooked through [Note 1].
  • Heat a drizzle of oil in a medium fry pan or grill.
  • When the oil is hot, cook the burger patties for 4-5 minutes each side, until cooked through [Note 1].

1 cup flour
1 cup panko breadcrumbs
1 egg, beaten

Steps:

  • Mix ground meat with onion powder, salt and pepper. Make four patties. Cover and chill for 15-30 minutes.
  • Pour flour into shallow bowl. Pour breadcrumbs into 2nd shallow bowl. Add egg to third shallow bowl.
  • Dredge patties in flour, then dip in egg, then in breadcrumbs. Place on wire rack (with paper towel underneath) for 15 minutes.

MUSHROOM STUFFED GRILLED PORK BURGERS

These are wonderful grilled, of course you may season the ground pork to suit your taste, but I find if you are grilling the pork burgers, that they are better mixed with just the bare basics such as salt and pepper, Worcestershire sauce and mustard (if using) as the middle filling has a lot of flavor. I just stated the basics LOL! The filling alone, can be prepared up to a day ahead, also the pork burgers can be stuffed a day ahead, covered an refrigerated until ready to grill. This recipe produces a lot of pork patties (around 12-14) I most always prepare/stuff the patties and freeze half for next time, unless that is, you are feeding a gang of hungry people! I have used half ground pork and half ground beef for this also.

2 -3 minced fresh garlic cloves

Steps:

  • Finely chop chorizo in a food processor or with a large knife. Gently mix together ground pork, chopped chorizo, breadcrumbs, egg, onion, green pepper, garlic and salt. Kosher salt and freshly ground pepper
1/4 teaspoon dried rubbed sage
Freshly ground pepper
4 potato buns, split
Unsalted butter, softened, for spreading
Coleslaw, for topping

Steps:

  • Pulse the bacon and garlic in a food processor until coarsely ground.
  • Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties.   • Place all the ingredients except the butter in a large bowl. Then, using a large fork or your hands, mix until everything is well incorporated. If you’re unsure about the seasoning, form a small patty from a tablespoon of the mixture and fry it so you can taste it. (That’s what I did!) Adjust the salt, pepper and nutmeg as needed.
  • Divide the mixture into eight portions and form into patties. I make them fairly think but quite large (4–5 inches) in diameter because they'll swell up during cooking.
  • Over medium high heat, melt half of the butter in a large skillet. Add four of the patties and brown them well on both sides. At this stage, you’re not cooking them through. The meat releases some fat as it's browning, so a lot of butter isn't necessary. Repeat for the remaining patties. Place all the browned patties on the prepared baking tray.

  • Warm a heavy bottom skillet over high heat. Add in the bacon fat. When the fat shimmers, add in the onion and a pinch of salt. Cook, stirring occasionally, for six to eight minutes. I like the onions in this recipe to have a little char on them, so I cook them over high heat the whole time.
  • When the onions are done, transfer them to a bowl. Add in the ground pork and all remaining ingredients. Mix well with your hands to incorporate all the spices and egg yolk.
  • Break off tennis ball sized portions of the pork mixture. Form them into patties with your hands. Set aside until all the pork patties have been made.
  • Reheat the skillet and add in the duck fat, bacon fat or lard. Heat at medium-high. When the fat is hot, add in the pork burgers. Don’t crowd the pan, otherwise they will just steam rather than brown. I typically can only fit five of the six into my pan, so I just cook the extra one after the first batch is done.
