GROUND BEEF TACO MEAT
I can't think of anyone that doesn't love tacos loaded with this easy skillet-cooked, seasoned ground beef taco meat! Perfectly seasoned taco meat makes your family's taco nights so much tastier!

Steps:
- Bring olive oil in a large non-stick or cast iron skillet to medium high heat. Add onion and chopped canned chiles and cook for 1-2 minutes. The onion should begin to become translucent before adding your ground beef.
- Add the ground beef and brown, turn frequently and break apart the pieces of ground beef while cooking so that all meat is browned evenly. Drain off excess oil, if needed.
- Add taco seasoning mix, cilantro and lime and combine thoroughly. Cook into the browned ground beef for an additional 1-2 minutes. (*If using commercial taco seasoning mix, follow instructions for the portion of water to be added as packaged mixes typically contain cornstarch)
- Remove from heat and serve.

- In a medium sized skillet over medium high heat add the ground beef and cook and crumble until brown. Add ingredients for homemade taco seasoning, tomato paste and water. Stir until combined. Let it simmer until it starts to thicken, about 5 minutes.
- Divide evenly into taco shells and top with desired toppings

Steps:
- Heat the oil to medium or medium-high heat in a large skillet. Add the onion and saute, stirring occasionally until onion begins to turn translucent, about 5 to 8 minutes.
- Add the garlic and saute another 2 minutes.
- Make space for the ground beef and place the ground beef directly onto the skillet. Allow one side to brown for 3 to 5 minutes without touching it (you can stir around the onions during this process so they don't burn).
- Flip the meat and allow the other side to brown 3 to 5 minutes.
- Use a spatula to break the meat into smaller chunks. Sprinkle all of the taco seasoning over the meat.
- Continue breaking up the meat and stirring until well combined, but don't cook the beef all the way through just yet.
- Pour in the chicken broth and stir. Bring mixture to a full boil, then reduce the heat to medium-low.
- Cover with a lid and cook 10 to 15 minutes, until beef is cooked through and sauce has thickened.
- Taste for flavor and add lime juice, sea salt, and/or hot sauce or salsa to taste.

GROUND BEEF TACOS
Who doesn't like some version of a taco, there are so many. This is one of my family's favorites, as long as they get to pick their own toppings.

Steps:
- In a 2 quart sauce pan add ground beef, salt, chili powder, garlic, cumin, paprika, and enough water to cover meat.
- Bring to a boil.
- Simmer for about an hour.
- Add bell pepper and onion. Continue simmer for 20 to 30 minutes. (Until bell pepper and onion are fully cooked).
- Meat can be used at this time or cooled for later depending on your meal schedule. I like to make the meat mixture ahead of time.
- Full Corn Tortilla Shells just about 1/2 way full or desired amount.
- Put into a preheated oven (300) for about 10 minutes or until completed heated through.
- Ready to Serve!
- Taco Toppings: Shredded Lettuce,Chopped Tomatoes, Cheese Sauce, Shredded Cheese, Mexican Blend), Chopped Onions, Black Sliced Olives, Sliced jalapeno, Refried Beans, Sour cream, Guacamole, Hot Sauce, Taco Sauce, Scallions (green onions), Mexican corn, Salsa . . . . to be continued.

- Preheat the oven to 325 degrees F.
- For the beef: In a skillet over medium-high heat, add the olive oil and onions. Cook until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine. Add 1/2 cup hot water and stir. Reduce the heat to low and simmer for 15 minutes.
- For the fixins: Meanwhile, wrap the flour tortillas in foil and warm in the oven for 20 to 25 minutes. Right before serving, crisp the taco shells in the oven according to package instructions.
- Serve with the grated cheese, diced tomatoes and shredded lettuce.

Making a ground beef taco filling ain't rocket science. You just cook ground meat with Tex-Mex seasonings. This recipe is a little spicy, but feel free to skip the serranos and substitute a packaged taco seasoning mixture for the spices, especially if you're cooking for kids. Many taco seasoning mixes, such as Old El Paso and Ortega, come in your choice of spicy or mild.

- For the filling:
- Heat the oil in a skillet over medium-high heat and cook the onion until it begins to wilt, about 2 minutes. Add the meat and sear, chopping with a spatula into small pieces until the pink color is gone. Add the garlic and chile and cook for 2 minutes or until the garlic is soft.
