This dish takes the best of tacos and is incorporated into a baked casserole. Top with sour cream if desired.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 7x11-inch casserole dish with cooking spray.
- Heat ground beef in a skillet over medium heat. Cook and stir, breaking up into crumbles, until browned, about 5 minutes. Add onion and garlic and cook for 5 more minutes. Mix in diced tomatoes and green chiles, tomato sauce, rice, water, and taco seasoning; stir to combine. Transfer mixture to the prepared casserole dish and cover with foil.
- Bake in the preheated oven for 30 minutes. Remove foil and sprinkle Cheddar cheese evenly over the top. Continue baking until cheese is golden and lightly browned, about 15 minutes more.

- Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
- Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
- Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

- Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
- Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
- Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.
- Top with sour cream, lettuce, tomato, avocado and pickled jalapenos if desired. Serve with more salsa and tortilla chips on the side.

CONTEST-WINNING TACO CASSEROLE
My preschooler doesn't eat ground beef unless it's taco flavored, so I came up with this casserole we all like. To make assembly easy, I prepare the taco meat and freeze several bags at a time. - Brown ground beef, adding Taco seasoning when nearly browned with juice from tomato can, I leave in the fat from the burger, drain of you like before adding the seasoning.
- Add tomatoes, cheese soup, and corn.
- Meanwhile, crush the bag of tortilla chips, using more or less of the bag to line the bottom of your casserole dish.
- Pour the heated beef mix on top and bake at 350 degrees for 15-20 minutes, adding shredded cheese to top for 5 minutes or so.

- Preheat oven to 375 degrees. Lightly grease a 11×7 inch casserole dish.
- Brown the ground beef in a large skillet over medium heat. About halfway through the browning process add the onions and cook until the beef is browned and the onions are soft. Add the taco seasoning and water and simmer for 8-10 minutes.
- Layer the tortilla chips in the bottom of a casserole dish. Warm the refried beans in the microwave for 2 minutes at 60% power. Add the sour cream and the hot sauce to the beans. Stir to combine.
- Smooth the refried beans over the chips using an offset spatula. Spoon on the cooked seasoned ground beef. Sprinkle evenly with the cheddar and the Monterey Jack Cheese.
- Bake uncovered 15-20 minutes or until the cheese is melted and the casserole is heated through. Top with cilantro, Pico de Gallo, and if desired sour cream.
- NOTES Use good sturdy chips so they hold up well and don't get soggy. Pro Tip - don't risk dropping the ground beef in the sink to drain the fat. Simply tilt the pan and use a paper towel to absorb the grease. I buy Spice Islands taco seasoning at Costco. It has so much flavor and tastes better than the packets from the grocery store. You can also make this in a 9×13 inch casserole dish. It will just not be as thick. Top the casserole with whatever you like. Some suggestions might include lettuce, tomatoes, black olives, cilantro, or avocado. This casserole can be assembled up to a day in advance. Simply cover tightly with wrap and store in the refrigerator. About 30 minutes prior to baking remove from the refrigerator and let it come to room temperature. Don't forget to remove the wrap prior to baking. Store leftovers in an airtight container in the refrigerator for up to 3 days. Cover tightly with several layers of plastic wrap and freeze for up to 3 months. Do not add the toppings. Reserve those for adding right before serving. Defrost in the refrigerator overnight.
