2 cups reduced-sodium chicken broth
2 cups 2% milk
1/3 cup butter, cubed
3/4 teaspoon salt
1/2 teaspoon pepper
3/4 cup uncooked old-fashioned grits
1 cup shredded cheddar cheese
SHRIMP:
8 thick-sliced bacon strips, chopped
1 pound uncooked medium shrimp, peeled and deveined
3 garlic cloves, minced
1 teaspoon Cajun or blackened seasoning
4 green onions, chopped

Steps:

  • In a large saucepan, bring the broth, milk, butter, salt and pepper to a boil. Slowly stir in grits. Reduce heat. Cover and cook for 12-14 minutes or until thickened, stirring occasionally. Stir in cheese until melted. Set aside and keep warm., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 4 teaspoons drippings. Saute the shrimp, garlic and seasoning in drippings until shrimp turn pink. Serve with grits and sprinkle with onions.

Once a popular morning meal throughout the South, shrimp and grits is no longer restricted to breakfast tables below the Mason-Dixon line. Variations of the dish now appear on breakfast, lunch and dinner menus across the country from Maine to Oregon. This recipe is an adaptation of one that Julia Reed discovered at Pearl's Café, a restaurant in landlocked Sewanee, Tenn., that evokes shrimp cardinale, a dish found in New Orleans. It is "a superb version, a highly seasoned, creamy concoction with chunks of tomatoes" that is served over a pile of grits enriched with plenty of butter, salt and Cheddar.

3/4 cup grits
1/4 teaspoon salt
6 ounces Cheddar cheese, grated
3 tablespoons butter
4 tablespoons butter
3/4 cup chopped onion
1/2 cup chopped green bell pepper
2 garlic cloves, minced
1 cup diced ripe tomatoes with a little of their juice (chopped canned tomatoes are preferable to less-than-perfect fresh tomatoes)
1/2 teaspoon dried thyme
1 tablespoon flour
1 pound medium to large raw shrimp, shelled (reserve shells for stock)
1/2 to 1 cup shrimp stock (see note)
1 tablespoon tomato paste
1/3 cup heavy cream
2 teaspoons Worcestershire sauce
2 dashes Tabasco
Salt to taste
2 tablespoons chopped fresh parsley

Steps:

  • For the grits, bring 3 1/2 cups water to a boil and stir in the grits. Reduce heat to low, cover and cook for 15 to 20 minutes, until the grits are tender and the liquid has been absorbed. Remove from heat, add the salt, cheese and butter and stir until melted. Keep warm.
  • For the shrimp, melt the butter in a large skillet over medium heat and sauté the onion, pepper and garlic until softened, about 3 minutes. Add the tomatoes and juice and thyme; bring to a simmer. Cook for 2 or 3 minutes. Sprinkle with flour and stir well. Add the shrimp and stir constantly until they begin to turn pink, about 2 minutes. Add 1/2 cup stock and cook for 2 to 3 minutes more. Add the tomato paste and stir until blended. Add the cream, Worcestershire and Tabasco and more stock if needed to make a spoonable sauce that generously coats the shrimp. Heat thoroughly, being careful not to let it come to a boil. Taste for salt.
  • Place a portion of grits in the center of each plate and spoon shrimp over or around it. Sprinkle with parsley.

4 cups milk
5 ½ cups water, divided
1 ½ cups stone-ground grits
½ cup butter
1 pound thick-cut bacon
½ (13 ounce) package kielbasa sausage, cut into small pieces
1 medium sweet onion, diced
1 large green bell pepper, finely diced
1 pound uncooked medium shrimp - peeled, deveined, and halved
1 teaspoon Creole seasoning, or to taste
salt and freshly ground black pepper to taste
1 cup all-purpose flour
2 dashes Worcestershire sauce, or to taste
1 drop ketchup, or to taste

Steps:

  • Bring milk and 1 1/2 cups of water to a boil in a large pot. Add grits, reduce heat to medium-low, and stir constantly to make sure they don't burn. Add butter and cover. Let simmer, stirring occasionally so they don't burn, until water is absorbed and grits have thickened, about 30 minutes.
  • Meanwhile, place bacon in a large pot and cook over medium heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on a paper towel-lined plate, leaving rendered fat in the pan.
  • Heat bacon fat in the same pan over medium-high heat. Cook kielbasa in the hot fat until browned, 5 to 7 minutes. Transfer kielbasa to the plate with bacon. Add onion to the pan and cook until tender, about 5 minutes. Add bell pepper and cook for 3 to 4 minutes.
  • Season shrimp with Creole seasoning, salt, and pepper; coat with flour and add to the pan. Cook until lightly pink, 3 to 4 minutes; the flour will absorb the fat to make a gravy. Add remaining water. Cook over medium-high heat, stirring, until thickened, 15 to 20 minutes. Add Worcestershire and ketchup and mix; it should give the gravy a darker color.
  • Reduce heat and add bacon and kielbasa to heat through, 3 to 5 minutes. Serve with grits.

  • Fry the bacon in a large skillet until browned; drain well.

  • Add lemon juice, chopped bacon, parsley, scallions and garlic.
  • Saute for 3 minutes.
  • Spoon grits into a serving bowl.

5 c. Low Sodium Chicken Stock
3/4 c. Quick Cook Grits
1 1/2 c. Grated Pepper Jack Cheese
1 1/2 c. Grated Sharp Cheddar
1/2 c. Mascarpone, Softened
4 tbsp. Butter
1 tbsp. Olive Oil
1 1/2 lb. Peeled And Cleaned Jumbo Shrimp, Tails Off
1 tbsp. Cajun Seasoning
Salt And Pepper, to taste
6 strips Bacon, Chopped
1 whole Medium Onion, Chopped
1 whole Red Bell Pepper, Seeded And Chopped
1 whole Jalapeno Pepper, Seeded And Chopped
1 tbsp. Tomato Paste
Several Dashes Hot Sauce (I Use Cholula)
1/2 whole Lemon, Juiced
Sliced Green Onions, For Garnish

Steps:

  • Bring 3 cups of the chicken stock to a boil in a saucepan. Slowly stir in the grits. Return to a boil and cook for 3 to 4 minutes. Turn down the heat and stir in the pepper jack, Cheddar and mascarpone. Cook for another 3 to 4 minutes. Stir in 2 tablespoons of the butter, season with salt and pepper to taste, and keep warm. Heat the remaining 2 cups stock in a separate saucepan until hot.Meanwhile, heat the oil and remaining 2 tablespoons butter in a large skillet over medium-high heat. Season the shrimp with the Cajun seasoning and some salt and pepper. Add the shrimp to the skillet and cook for 1 to 2 minutes on each side, then remove and set aside. (The shrimp will finish cooking in the sauce.)Add the bacon, onion, red pepper and jalapeno to the skillet and season with salt and pepper. Cook over high heat until beginning to brown, about 3 minutes. Add the tomato paste and cook for 1 minute. Stir in the hot stock and add hot sauce to taste. Return the shrimp to the skillet with any juices that have accumulated. Cook until the shrimp are just cooked through, another 2 minutes. Add the lemon juice. Taste and adjust the seasoning.To serve, spoon the shrimp and sauce over the grits and garnish with scallions.

Steps:

  • Prepare grits according to package directions.
  • Add salt and butter to taste.
  • Set aside, but keep warm.
  • While the grits are cooking, start the shrimp.
  • In a bowl, sprinkle the shrimp with lemon juice, salt, and cayenne and set aside.
  • Heat the bacon grease in a skillet and saute the onion and pepper over medium heat until the onion begins to become transparent, about 10 min.
  • Sprinkle the flour over the vegetables and stir constantly for about 2 min, until the flour begins to brown.
  • Add the shrimp and about 3/4 c of water or stock, stirring constantly and turning the shrimp so that they cook evenly.
  • Cook for another 2 to 3 minutes, until the shrimp are cooked through and the gravy is uniformly smooth, thinning with a little extra water or stock if necessary.
  • Serve immediately over the grits.

1 cup stone-ground cornmeal (grits) ((not instant))
2 cups water
2 cups chicken broth
salt (to taste)
2 tbsp butter
3/4 cup grated sharp cheddar cheese
1/4 cup freshly grated Parmesan cheese
1 lb shrimp ((peeled and deveined))
8 oz bacon
2 shallots
1/3 cup thinly sliced sun-dried tomatoes
2 garlic cloves
1/2 cup chicken broth
1 tbsp lemon juice

Steps:

  • Bring water and chicken broth to boil in a medium pot and season with some salt. Add grits and lower heat to medium/medium-low heat. Cover and let it simmer for about 20 minutes. Stirring occasionally.
  • Once grits is cooked, take it off the heat. Stir in butter and cheeses until melted.
  • Peel and devein shrimp if needed.
  • Prepare ingredients by dicing bacon into small pieces, slicing shallots, green onion, and sun-dried tomatoes, and peeling garlic.
  • In a medium cooking pan, over medium heat, cook diced bacon until brown and crispy. Take out bacon bits only and set them aside.
  • Add shallots and sun-dried tomatoes to the pan with bacon grease. Saute until golden.
  • Smash and mince garlic and add it to the pan. Saute until fragrant.
  • Add chicken broth and lemon juice to the pan. Stir and bring to simmer.
  • Add shrimp and cook until shrimp turn pink and opaque on one side. Flip shrimp to the other side and let it cook until that side turns pink and opaque.
  • Take the pan off heat.
  • Divide prepared grits among large bowls or deep plates.
  • Divide bacon bits, shrimp with broth, and some green onions among the plates, over the grits.

2 1/2 cups chicken stock/broth (divided)
2 cups whole milk
4 tablespoons butter (divided)
3/4 cup stone-ground grits
1 cup sharp cheddar cheese (shredded)

1 lb. jumbo shrimp (peeled and deveined)
kosher salt (to taste)
black pepper (to taste)
thinly sliced green onions (for garnish (optional))

Steps:

  • Bring 2 cups of the chicken broth, the milk (2 cups), 3 tablespoons of the butter, and a pinch of salt to a gentle boil in a medium sized pot. Add the grits and whisk together. Cover and simmer for 15-20 minutes, or until grits are fully cooked, soft, and creamy, whisking again every 5 minutes or so.
  • Meanwhile, cook the 4 bacon strips until crispy in a nonstick or cast iron skillet. Set aside on a paper towel lined plate. Once cool, chop into small pieces.
  • Drain all but 2 tablespoons of the bacon grease from the skillet.
  • Rinse the shrimp with cold water and pat dry. Season with salt and pepper. Cook in the bacon grease until only just cooked- about 2 minutes per side.
  • Add the remaining tablespoon of butter and 1/2 cup of chicken broth to the shrimp and stir until melted and broth is heated.
  • When grits are finished cooking, remove from heat and stir in the cheese (1 cup) until melted.
  • Serve the shrimp mixture over the grits, making sure to spoon some of the liquid from the skillet over the grits, and sprinkle with the bacon pieces and sliced green onions. Serve immediately.

This recipe, adapted from the chefs David Chang and Joaquin Baca of Momofuku Noodle Bar, came to The Times in 2006. Here, the yolk from soft egg bleeds into a bed of grits. A bit of chopped bacon adds smokiness, while the chopped scallion lends brightness. You'll want to use good quality grits here over cornmeal or polenta, as both Mr. Chang and Mr. Baca suggest. The result is luxurious and creamy, without any cream.

1 1/2 cup coarse ground grits
4 + cups water
2 cups half and half
2 Tbsp unsalted butter
1/2 tsp salt
1/4 cup unsalted butter
1/4 cup all purpose flour (or gluten free flour)
1 Tbsp vegetable oil
12 ounces pre-cooked andouille sausage, sliced into 1/3"
6 ounces bacon (~ 6 slices), sliced
1 1/2 lbs shrimp, peeled & deveined
1 small onion (~ 1 1/2 cup), diced
2 small red, orange, or yellow bell peppers (~ 2 cups), diced
1 Tbsp garlic, minced
l lemon - zest and juice
1 1/2 cup chicken broth
pinch cayenne pepper if you like it hot (optional)

Steps:

  • Bring water, half and half, 2 Tbsp unsalted butter, and salt to a boil and slowly whisk in grits.
  • Reduce heat to a simmer and cover. You will need to stir this every 3-5 minutes so the grits don't become lumpy and/or burn to the bottom of the pan.
  • Slowly add more water or half and half as needed if the grits become too stiff. Cook for ~ 30 minutes (or according to package instructions).
  • Melt 1/4 cup butter in a small pan and slowly whisk in flour. Stir often and watch carefully as this paste is easy to burn (if you burn it, lower the heat, and start over).
  • Cook ~ 5-10 minutes or until medium brown in color. Watch it carefully, it can burn quickly if you don't (see video).
  • You can make the roux ahead of time. It is fine sitting for an hour or more as long as it's not still cooking in the pan (FYI - roux freezes well). Make the grits and roux at the same time, as they both require a little more attention than the rest of the meal.
  • Bring a large pot to medium high heat and add vegetable oil. When hot, add andouille and cook until browned.
  • Remove andouille (keep any liquid in the pot) and cook chopped bacon in the same pot ~ 4-6 minutes or until done.
  • Remove bacon, lower heat, and cook onion, peppers, and garlic in the pot ~ 5-7 minutes or until tender. Feel free to remove some fat if you feel like it's too much.
  • Place andouille, bacon, (and any liquid from it) back into pot and add chicken broth, lemon juice, lemon zest, and a pinch of cayenne pepper.
  • Bring to a boil, add roux, and let simmer ~ 15 minutes.
  • Add shrimp & cook ~ 3-4 minutes or until shrimp are cooked through.
  • Remove from heat and let thicken ~ 5 minutes before serving. You may need to add ¼ to ½ cup broth or water to your pot if the sauce has thickened to much.

1 1/2 pounds (26-30 count) Wild Georgia Shrimp
2 tablespoons Cajun seasoning (recommended: Tone's Louisiana Cajun seasoning)
1 tablespoon paprika
1 tablespoon dried Italian seasoning
Freshly ground black pepper
2 cups water
2 chicken bouillon cubes (recommended: Knorr)
2 tablespoons butter or margarine
1 cup quick grits (recommended: Quaker)
1 tablespoon tomato paste
3/4 cup heavy whipping cream
3 1/2 ounces extra-sharp Cheddar
2 tablespoons butter or margarine
1 tablespoon minced garlic
3 tablespoons all-purpose flour
1 cup chicken stock
1/2 cup heavy whipping cream
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce (recommended: Texas Pete)
1 slice sugar-cured country ham

Steps:

  • First, peel and devein the shrimp. In a small bowl, combine Cajun seasoning, paprika, Italian seasoning and salt and pepper, to taste. Sprinkle the spice mixture over the shrimp to coat well and set the shrimp aside.
  • Next, make your grits. In a medium saucepan, bring water, chicken bouillon cubes and 2 tablespoons butter to a boil. Slowly add the grits, whisking often with wire whisk for 5 minutes. Add tomato paste, cream, and cheese. Keep whisking for another 2 or 3 minutes until the grits become creamy. Don't skimp on the butter and the cream, folks.
  • Now saute the shrimp. In a large saute pan, melt 2 tablespoons of butter. Add minced garlic and stir for 30 seconds. Add in the spice-coated shrimp, and cook only until they're just done and tender. Don't overcook. Remove the shrimp from the saute pan and set them aside in a bowl. You can taste 1 or 2, to see if they're okay.
  • The roux is next. With all those wonderful drippings from the shrimp in the saute pan, add 3 tablespoons of all-purpose flour and stir with a wooden spatula to make a roux. Cook for 10 to 15 minutes until roux reaches a medium-tan color, then slowly add the chicken stock and heavy whipping cream. Whisk together and cook for 2 minutes, then whisk in Worcestershire sauce and hot sauce. Set aside.
  • And last, a little country ham. Cook 1 center slice of cured country ham in a saute pan, and cut into cubes.
  • To serve, and this is the best part-place a few heaping spoonfuls of steaming cheese grits onto a place, top with several sizzling shrimp. Drizzle that wonderful roux sauce over top of the shrimp, and sprinkle on a few cubes of country ham. Enjoy.

2 cups shredded sharp cheddar cheese
1 pound shrimp, peeled and deveined
6 slices bacon, chopped

1 large clove garlic, minced

Steps:

  • Bring water to a boil. Add salt and pepper. Add grits and cook until water is absorbed, about 20 to 25 minutes. Remove from heat and stir in butter and cheese.
  • Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned; drain well. In grease, add shrimp. Cook until shrimp turn pink. Add lemon juice, chopped bacon, parsley, scallions and garlic. Saute for 3 minutes.
  • Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.

Reduce the heat to low and simmer, whisking often, until the grits become thick and creamy, about 5 minutes. (Stir continuously to prevent sputtering.) Remove the pan from the heat and stir in the cheese. Taste and adjust the salt, if necessary. Remove the pan from the heat and cover with a lid to keep warm until ready to serve.
  • Place the skillet with the vegetable/sauce mixture back on the stove and bring to a simmer over medium heat. Return the shrimp and bacon, along with any juices that collected in the bowl, to the skillet and mix well. Cook, stirring frequently, until the shrimp are cooked through, 2 to 3 minutes. Season to taste with salt and pepper. Sprinkle a small handful of the dark green scallions over the shrimp (you may not need all of them).
